Receiving And Inspecting The Equipment
Care should be taken during unloading so the equipment is not
damaged while being moved into the building.
1. Visually inspect the exterior of the package and skid or
container. Any damage should be noted and reported to
the delivering carrier immediately.
2. If damaged, open and inspect the contents with the carrier.
3. In the event that the exterior is not damaged, yet upon
opening, there is concealed damage to the equipment
notify the carrier. Notification should be made verbally as
well as in written form.
4. Request an inspection by the shipping company of the
damaged equipment. This should be done within 10 days
from receipt of the equipment.
5. Check the lower portion of the unit to be sure legs are
not bent.
6. Freight carriers can supply the necessary damage forms
upon request.
7. Retain all packaging material until an inspection has been
made or waived.

Serial Number Information
Fried Food Holding Station serial numbers are located on the
data plate that also includes the model number. The data plate
is located on the rear of the unit.

Site Preparation
Choose a well-ventilated location with a minimum clearance of
two feet (2’) from all sides of the unit. Place the holding station
on a suitable table or counter capable of supporting the weight
of a fully loaded holding station. The power supply must be in
accordance with the specifications on the data plate located on
the rear of the appliance. It should be installed on a dedicated
service line with no other equipment on the circuit. The unit
must be positioned so that the unit’s plug is accessible. (If
the power cord is damaged, it should only be replaced by the
manufacturer or an Authorized Service Agent.)
Operation
CAUTION
CAUTION
The operator of this equipment is solely responsible for ensuring safe holding temperature levels for all food items.
Failure to do so could result in unsafe food products for customers.
Failure to follow the operating and cleaning instructions could cause grease build-up which may result in a decrease
in food quality.
The airflow and temperature of the Merco Fried Food Station is factory pre-set for optimum holding time for all fried
foods. No adjustment of airflow or temperature is required.
1. Verify the grease pan and salt trays are installed properly.
2. Adjust dividers to desired location. First, lock in lower tab near the rear of the salt tray then pivot downward until all tabs are
locked into place.
3. Turn power to the “ON” position. “I” = ON, “O” = OFF.
4. Allow for a 20-minute preheat.
When scooping food product from the appliance, work in a front-to-back motion so as to avoid possible grease
build-up in the air-intake holes located in the front of the unit.

Maintenance
The following cleaning instructions must be carried out to
ensure satisfactory performance of your Fried Food Holding
Station. Neglecting to follow these procedures may result in
reduced holding times, reduced reliability and may void the
warranty.
CAUTION
WARNING
Never hose down interior or exterior of units with
water. This will void the warranty. Wipe interior dry
of any water accumulation.
Never unplug the unit before cool-down is complete
as this will bypass an important safety feature and
may cause injury. Always allow unit to cool down
prior to disconnecting from power source.
Daily Cleaning
1. Upon completion of the last holding cycle of the day,
remove dividers, salt tray and grease pan.
2. Wash components with soapy water.
3. Use a soft cloth or sponge, dampened with warm soapy
water, to wash the interior and exterior of the appliance.
Airflow openings should be inspected and any blockage
should be removed. Note: Do not flood the appliance with
cleaning fluid!
CAUTION
When cleaning interior and exterior of unit, care
should be taken to avoid the front power switch and
the rear power cord. Keep water and/or cleaning
solutions away from these parts.
4. Rinse using a cloth dampened with clear water, then dry.
5. Install pans, trays and dividers.

Stainless Steel Care and Cleaning
Stainless steel contains 70- 80% iron, which will rust. It also
contains 12-30% chromium, which forms an invisible passive
film over the steel’s surface, which acts as a shield against
corrosion. As long as the protective layer is intact, the metal
is still stainless. If the film is broken or contaminated, outside
elements can begin to breakdown the steel and begin to form
discoloration or rust. Proper cleaning of stainless steel requires
soft cloths or plastic scouring pads.
NEVER USE STEEL PADS, WIRE BRUSHES OR SCRAPERS!
Cleaning solutions need to be alkaline based or non-chloride
cleaners. Any cleaner containing chlorides will damage
the protective film of the stainless steel. Chlorides are also
commonly found in hard water, salts, and household and
industrial cleaners. If cleaners containing chlorides are used be
sure to rinse repeatedly and dry thoroughly. Routine cleaning
of stainless steel can be done with soap and water. Extreme
stains or grease should be cleaned with a non-abrasive cleaner
and plastic scrub pad. Always rub with the grain of the steel.
There are stainless steel cleaners available which can restore
and preserve the finish of the steel’s protective layer. Early
signs of stainless steel breakdown are small pits and cracks.
If this has begun, clean thoroughly and start to apply stainless
steel cleaners in attempt to restore the passivity of the steel.
CAUTION
Never use an acid based cleaning solution! Many
food products have an acidic content, which can
deteriorate the finish. Be sure to clean the stainless
steel surfaces of ALL food products. Common items
include, tomatoes, peppers and other vegetables.

Steps For Component Removal
Weekly Cleaning
1. Remove dividers.
The air intake vents (interior, rear and front vents) should be
inspected and cleaned weekly to remove any obstructions that
may develop on, or around, the vents.
Interior Vents
2. Remove salt tray.
3. 2700 Series Units: Remove screws from front panel.
Rear Vents
4. 2700 Series Units: Remove front panel.
5. Remove grease pan.
6. Assemble in reverse order.
CAUTION
Front Vents
Always allow sufficient time for unit to cool down prior
to moving unit. Failure to do so could damage the
heating element inside the unit.
2700 Series Units Note: When installing the front cover, be
sure the front cover lip slides over the wire mesh as shown
below.

Sequence Of Operation
Power Supply
Electrical power is supplied to the unit by a 3 conductor service for single phase.
Black conductor is hot.
White conductor is neutral.
Green and yellow conductor is ground.
Power is permanently supplied to one of the normally open contacts of the main switch also to one
side of the normally open contacts of the main heater relay.
Heating Circuit
Closing the main power switch feeds power through the normally closed high limit thermostat to
the coil of the main relay. Its contacts now close supplying power to the main heater. Also for air
circulation power is supplied to the main fan motor.

Removal, Installation And Adjustments
CAUTION
Disconnect power supply before servicing or
cleaning this unit. Safeguard power so it cannot be
accidentally restored. Failure to do so could result in
dismemberment, electrocution, or fatal injury.
Switch, On-Off
1. Remove two (2) screws from face of switch mounting
plate.
2. Disconnect three (3) wires from switch assembly. Mark
wires for reinstallation.
3. Depress clips on side of switch and remove switch from
panel.
4. Install new part, reassemble in reverse order, and check
operation.
Power Cord 120V
1. Lift and set aside salt tray and grease pan weldment.
2. Remove screws from both left and right outer formed
panels.
3. Lift and set aside blower cover weldment.
4. Disconnect power cord neutral and L1 wires from in-line
wire terminal connections. Mark wires for reinstallation.
5. Remove ground nut from power cord ground wire.
6. Compress cord strain relief to remove power cord from
bracket.
7. Install new part, reassemble in reverse order, and check
operation.
Blower
1. Lift and set aside salt tray and grease pan weldment.
2. Remove screws from both left and right outer formed
panels.
3. Lift and set aside blower cover weldment.
4. Disconnect two (2) wires from blower. Mark wires for
reinstallation.
5. Remove three (3) screws from base of blower assembly.
6. Remove two (2) screws from both left and right air duct
fillers.
7. Slide out blower and heater assembly from blower seal
bracket.
8. Remove four (4) screws from side of heater to separate
heater from blower.
9. Install new part, reassemble in reverse order and check
operation.
Power Relay
1. Lift and set aside salt tray and grease pan weldment.
2. Remove screws from both left and right outer formed
panels.
3. Lift and set aside blower cover weldment.
4. Disconnect (6) wires from relay. Mark wires for
reinstallation.
5. Remove (2) screws from relay and remove power relay.
6. Install new part, reassemble in reverse order, and check
operation.
Heater 120V
1. Lift and set aside salt tray and grease pan weldment.
2. Remove screws from both left and right outer formed
panels.
3. Lift and set aside blower cover weldment.
4. Remove six (6) screws from air intake baffle.
5. Remove two (2) screws from bottom of exhaust panel and
set panel aside.
6. Remove inner formed base by sliding forward (toward on/
off switch).
7. Remove three (3) screws from base of blower assembly.
8. Remove two (2) screws from both left and right air duct
fillers.
9. Slide out blower and heater assembly from blower seal
bracket.
10. Remove four (4) screws from side of heater to separate
heater from blower.
11. Disconnect two (2) wires from heater and remove heater.
Mark wires for reinstallation. Note the path of the wires for
reinstallation.
12. Install new part, reassemble in reverse order, and check
operation.
