Edmontonians have a lot to be proud of. And
what better event to showcase this than the
annual Edmonton Pride Festival? Since 1980,
the festival has been celebrating the unity and
diversity of the city’s lesbian, gay, bisexual and
transgender community. In honour of this
year’s Pride Festival, we want you to show our
support at the table by eating foods featuring
all the colours of the rainbow flag. Make it
your mission to find foods the colours of the
rainbow and show us your pride, Edmonton!

Alberta Barley’s Linda Whitworth
recommends pairing local brightly coloured
vegetables with Alberta barley for your meals.
Linda says that barley combines well with
most foods so it is a perfect addition to your
colourful dishes. “It’s a burst of summer,”
she says. To beat the heat, you can precook
barley in a rice cooker or slow cooker and
keep it stored in the fridge for four days for a
hearty addition to meals. “I love barley in
salads,” Linda explains. “Get a nice salad
filled with summer vegetables and throw
some barley in. I’d recommend cooking the
barley in a broth. It will take on the flavours
in the broth and give it a bit more added
flavour.” She enjoys putting barley in her
Greek salad as a colourful and delicious dish.
