Services
We have nearly come to the conclusion of the OMONOIA Project which is funded by the Department of Social Services (DSS).
The OMONOIA project has been funded by the federal Department of Social Services
(DSS) for the past , almost , 3 years from June 2012-June 2015 to fulfil a dual purpose.
Firstly, to provide Greek-specific information , tools and other resources to assist aged care
service providers in delivering culturally and linguistically appropriate care to Greek-speaking
older people and their families carers in Brisbane North, Brisbane South, The Gold Coast and
Townsville regions and secondly to provide community education and resources to the Greek
community and their families to improve access to local aged care and health care services
and useful information that supports and promotes healthy-ageing in the Greek community.
The recent aged care expos in Brisbane, Gold Coast and Townsville were a wonderful success with a total of almost 300 people attending the 3 events consisting of over 200 Greek speaking seniors and their family carers and over 70 aged care service providers including
organisations such as Alzheimer’s Australia, Centre-link, Ozcare, Diversicare, financial planners , local GP’s, Meals On Wheels, Carer’s Qld and many more.
The topics discussed at the expos included the concept of Consumer Directed Care (CDC)
and the New Aged Care Reforms that are soon to be fully implemented on the 1st July 2015
(Visit the My Aged Care website for updates) . CDC fits in well with the philosophy of
‘Wellness and Reablement’ which focusses on how we can help older people to re-gain their
independence and do things for themselves the way they choose to , rather than promote the
“sit down and I’ll do it for you” approach, which results in co-dependence or the loss of power
and control over one’s own life. GOC Care’s director , Angela Andronis delivered this information in the Greek language which was a delight especially for the older Greek and Cypriot
migrants at the Townsville Expo who rarely have the opportunity to listen to speakers deliver
talks in their ‘mother tongue’.
Through-out the 3 year period of the OMONOIA Project, 4 new multi-media Greek -specific
resources were developed , launched and promoted to support families and aged care service
providers who care for the rapidly ageing Greek Community.

FLAOUNES
Ingredients
Dough:
Step by step instructions
on how to make dough

Filling:
- 500 grams of halloumi
cheese (or combination of
graviera, or kefalograviera
or ‘ladotyri’ cheese_
- 3 or 4 eggs (one more
for egg glaze)
- 3 tablespoons of dried
mint
Method
Preparation of filling:
1. Grate all cheeses
2. Mix the grated cheese, the mint and add eggs,
one by one until eggs have been absorbed by
cheese. Depending on the size of the egg you
might need another one.
Preparation of Flaounes
Preparation time: 30 minutes
1. Roll out phyllo with rolling pin or by machine .
2. Place a tea plate on rolled out phyllo and cut
around it to make circle shaped cut-outs. .
3. On a separate plate, place sesame seeds and
press upper side of dough onto sesame seeds.
4. Fill with one tablespoonful of the cheese mixture and fold three sides creating a triangle or four
if you like to make a square shape.
5. Seal Flaounes by pressing edges of pastry with a
fork.
6. Glaze each Flaouna with pastry brush dipped in
one beaten egg.
7. Place Flaounes on an oiled baking tin and bake
in a pre-heated oven at 180 degrees C, until a nice
golden colour is achieved.
Serve hot or cold.
Flaounes are a traditional Easter savoury treat
in Cyprus.
Flaounes (Cypriot Easter cheese bread) are a special Easter food eaten in

Greek Independence Day
Independence Day is marked by a national holiday in Greece. It commemorates the
start of the war of Greek Independence which was declared on March 25 in 1821.This
date coincides with the church’s Annunciation to the Theotokos, when Archangel Gabriel appeared to Mary and told her that she would bear the son of God. The revolution
ended after nine years in 1829 when an independent Greek state was established and
Crete and Greece were liberated from Turkish rule. Their motto had been ‘Freedom or
Death’.
Pascha (Easter) and the Significance of Red
Eggs
Orthodox Easter or PASCHA will be celebrated on Sunday April 12, 2015. It is observed later than most western
churches that will celebrate Easter , this year on Sunday
April 5, 2015. Easter is the most revered and notable
event on the Orthodox Calendar because its centre is the
Resurrection of Jesus Christ from the dead.
The following hymn of the resurrection, Christos Anesti,
is chanted on the Great and Holy Sabbath at midnight
(the Anastasi or resurrection service) while holding
candles lit by the sacred light :
Χριστός ανέστη εκ
νεκρών,
θανάτω θάνατον πατήσας,
και τοις εν τοις μνήμασι
ζωήν χαρισάμενος.
Christ is risen from the
dead,
trampling down death by
death,
and to those in the tombs,
granting life.
The Holy Saturday hymn is then chanted for the 40 days
following PASCHA.

March.
The War song, THOURIOS by Greek writer Rigas Feraios, served as a rallying cry
for Greeks against Ottoman rule.

Red Eggs
When cracking the eggs with each other and in greeting
each other after the Anastasi, Greeks say:
Χριστός ανέστη! (Hristós anésti) - Christ has Risen
Αληθώς ανέστη! (Alithós anésti) - Truly he has Risen

Traditionally eggs are dyed red but there are many creative ways to personalise egg decoration for PASCHA. It
can be a fun activity to share with family and friends.
