The anniversary was celebrated with a day of fun and food for Marble Bar families. The Pool Manager David Clarke cooked up Hotdogs and Hamburgers for lunch and dinner with cooldrinks and icy poles for the children. Thirty three local residents attended over the day. Proudly produced by the Marble Bar and Nullagine Community Resource Centre Recipes of the month 4 x 350g baby snapper or bream 1 orange 2 preserved lemon quarters (From deli section at supermarket), white pith and flesh discarded, halved, plus 1 finely chopped 2 cups self-raising flour 2 tablespoons Ginger Ground 100g butter 3/4 cup honey 250g caramel-filled mini Easter eggs 1 cup desiccated coconut 395g can sweetened condensed milk For the Icing 1 egg white 1 1/2 sifted icing sugar 1 drops red food colouring Step 1 Preheat oven to 180C/160C fan forced. Grease and line base and sides of a 28cm x 18cm, base measurement, slice pan with non stick baking paper. Step 1 Preheat the oven to 220C. Cut 3 slashes in the thickest part of fish on each side and season cavities with salt and pepper. Finely grate zest of half the orange and place in a salad bowl with the finely chopped preserved lemon. Cut orange into 2 pieces, then thinly slice the unzested half and lay slices in cavity of each fish. Step 2 Very thinly slice 3 fennel halves and add to salad bowl. Cut remaining fennel into 4 thick slices, and then place 1 in each cavity. Step 3 Rub 1 preserved lemon piece over the surface of 1 fish, then add to fish cavity. Repeat with remaining lemon pieces and fish. Brush fish all over with extra oil and season. Wrap each separately in baking paper, folding edges to enclose. Bake on 2 trays for 15 minutes or until cooked (the flesh will flake away easily). Step 2 Combine flours and ginger together in a large bowl. Make a well at centre. Step 3 Melt butter and honey together in a small saucepan. Pour mixture into well. Stir until well combined. Spoon mixture into prepared pan. Using slightly damp hands press mixture firmly over base of pan. Level top and cool for 10 minutes. Step 4 Place eggs all over top of slice in a single layer, pressing down to submerge each egg by half. Sprinkle over coconut and drizzle with condensed milk. Bake for 30 minutes or until edges are golden and center set firm. Cool in pan. Step 5 For the icing, whisk egg white in a large bowl until frothy, then whisk in icing sugar until well combined and smooth. Divide mixture in half. Add red food colouring to 1 half of the mix and stir until well combined. Using a fork, drizzle both icings over cooled slice. Allow to set. Trim ends of slic and discard, then cut into 24 pieces. Serve. Step 4 Meanwhile, add olive oil, juice, capers and parsley to the salad bowl, season with salt and pepper, then toss all ingredients together. Serve fish topped with salad. At least the rivers have had a bit of a flush out and the countryside is green. The cattle are starting to fatten up for the muster; let’s hope it’s a good season for the stations. Visitors are slowly starting to come back to our towns and soon the tourist season will be upon us. Marble Bar now has an awesome new Museum and eatery, the Residence Bistro at the Old Government Building. The Billy Cart Grand Prix, Jerky Making Competition and ‘Start of Muster’ Party is on 18 April. So Grease up your bearings and enter a Billy Cart in the race, start drying your jerky and put on your dancing boots for the ‘Start of Muster’ Party. ANZAC Day will be on the following weekend, so get to bed early so you can make it to the Dawn Service at the RSL Memorial Park. Lastly we want to bid three very special people farewell. Kelly Lemmey who was our Assistant Coordinator here at the MB CRC who is on Maternity Leave...so it is more ’See you again soon with your beautiful new baby’ than ’Farewell’….and Trevor Corrigal & Sue Dalton who have moved back home to Northampton after taking care of Comet Mine and the shop there, as well as a fantastic contribution to the town on the committees of the MB CRC and the MB Tourist Association. They will be sorely missed. On that note, there are openings on the above mentioned committees for ‘New Blood’.
