The excitement builds at this time every year,
since we first introduced Seattle shoppers to
the unforgettable flavor of fresh Copper River
salmon more than three decades ago.
Each May, millions of salmon gather at the mouth of Alaska’s Copper
River in anticipation of their rigorous journey back up those freezing,
fresh waters. At the same time, about as many humans get ready to
celebrate the annual arrival of the world’s most delicious salmon.
In the mid 1980s, seeking to match the excellence
found in the best Japanese fish markets,
Metropolitan Market (then known as Queen Anne
Thriftway) partnered with food evangelist Jon
Rowley. Jon led us to discover the Copper River
salmon, the flavorful fish found in a then‑unknown
fishing community called Cordova, Alaska.

What is it about the Copper River that makes its salmon so special?
It’s the rugged rise of the river itself. The king and sockeye salmon have to
save up large amounts of fat and Omega-3 oils to swim the 300 miles and
4,000 vertical feet back to their spawning grounds. The salmon’s preparation
for its arduous journey is what makes this celebrated fish taste so delicious.

One of the rarest fish to find in these parts, the Copper River king (Chinook) salmon has become a hot
commodity — for good reason. Kings are prized for their intensely rich flavor, flaky texture, and high fat
content, which makes it easier to cook to melt-in-your-mouth perfection, while providing a bonus dose
of heart-healthy Omega-3 oils. Of the few that pass through Seattle stores each season, there’s a good
chance that most are heading to Metropolitan Market.

Copper River salmon are the first of the season, just caught and flown straight to Met Market.
Once owner Dick Rhodes tasted the rich flavor of
Copper River salmon, he knew we had to have it
immediately, and we changed our whole Seafood
Department to display its greatness. Metropolitan
Market became the first grocery store to champion
the beautiful Copper River salmon in 1984, and
we’ve never looked back.

Aside from a small handful of Seattle’s best
seafood restaurants, we enjoyed 10 years as the
only store offering Copper River salmon before
others began to catch on. Today, three decades
after we first brought Copper River salmon to
Seattle, our fish are rushed by air from Alaska
throughout the brief season to bring you the
freshest, tastiest fish you can get.

We’ll always custom cut your steak to your preferred thickness, but
here’s a quick guide to the best way to prepare a New York steak:
New York Steak with
Jacobsen Stumptown Sea Salt Rub

Oregon’s finest sea salt teamed up with Stumptown
Coffee Roasters to make a cold-brew-fueled kicky
finishing salt. It makes an awesome steak rub as
well, and our Culinary Artists are out to prove it.
Previously found only at top
steakhouses, Prime beef is the
highest grade of all beef that is
produced in the US. It’s known for
its rich flavor due to its high fat content.
Choice beef has a good amount of marbling, but less
than Prime. This is ideal for people who want a bit
leaner meat and think Prime beef is too fatty.
Select grade beef has a very low fat content which is
healthier for your diet but lacks enough fat to make a
great-tasting steak. You won’t find Select at Met Market.
While Prime beef is commonly found in our cases, many
of our ranchers are too small to grade meat separately,
so it is all graded as Choice. But keep an eye out —
much of the beautifully marbled beef you see in our
cases would easily make the grade as Prime if it were
coming from a larger ranch.

Making the Grade:

New York is the city so nice they
named it twice, but it’s also the name
of our current favorite cut of steak.
Also known as strip, club, or Kansas
City, it’s cut from the short loin and is
a steakhouse favorite. It has a good
marbling of fat — and fat means
flavor — but without the large pockets
of fat found in ribeye. This makes it
easy to cook and a real people pleaser.
