Scott Fitzgerald Summer is almost here! MTC has a full slate of activities for members to take advantage of. The Club’s website now has a calendar feature which can help us all keep up to date with the club’s many every day and special events, and with all MTC has to offer, you can fit some time at the club into your “staycation”. I encourage all of you to check it out! On that note, we expect the club to be very busy during the summer months. We kindly ask our members to adhere to our policies of signing in upon arrival, signing in all guests, and having an individual at the club as your guest no more than 4 times per month. These policies improve the security of the club as well as helping to ensure that our dues paying members can enjoy the pool and other facilities with limited overcrowding. Your fellow members will appreciate it and we thank you. The Club’s financial position is improving dramatically; a beginning of 2015 projected approximate first quarter operating loss of $40,000 was instead an operating profit of approximately $73,000. These excellent numbers help us to ensure that MTC is prepared for a rainy day - and, as the finances continue to improve - allow us to make further improvements to the Club in both infrastructure and services. May 3, 2015 5-8pm Please Call (323) 654-0550 For Reservations Asian Cuisine Mother’s Day For Reservations Call (323) 654-0550 Prime Rib Buffet May 10, 2015 5-8pm Reservations are requested (323)654-0550 *Limited Menu Available May 31, 2015 5-8pm *Limited Menu Available Chef Efren’s Chinese Chicken Lettuce Wraps Ingredients 2 cups, 4 handfuls, fresh shiitake mushrooms 1 1/3 to 1 1/2 pounds thin cut chicken breast 2 tablespoons light colored oil, such as vegetable oil or peanut oil Coarse salt and coarse black pepper 3 cloves garlic, chopped 1 inch ginger root, finely chopped or grated 1 orange, zested 1/2 red bell pepper, diced small 1 small tin, 6 to 8 ounces, sliced water chestnuts, drained and chopped 3 scallions, chopped 3 tablespoons hoisin, Chinese barbecue sauce, available on Asian foods aisle of market 1/2 large head iceberg lettuce, core removed, head quartered Wedges of navel orange -- platter garnish Directions Remove tough stems from mushrooms and brush with damp towel to clean, Slice mushrooms. Chop chicken into small pieces. Preheat a large skillet or wok to high. Add oil to hot pan. Add chicken to the pan and sear meat by stir frying a minute or 2. Add mushrooms and cook another minute or two. Add salt and pepper to season, then garlic and ginger. Cook a minute more. Grate zest into pan, add bell pepper bits, chopped water chestnuts and scallions. Cook another minute, continuing to stir fry mixture. Add hoisin Chinese barbecue sauce and toss to coat the mixture evenly. Transfer the hot chopped barbecued chicken to serving platter and pile the quartered wedges of crisp iceberg lettuce along side. Add wedged oranges to platter to garnish. To eat, pile spoonfuls into lettuce leaves, wrapping lettuce around fillings and squeeze an orange wedge over. Enjoy! Join us! MTC Singles Tournament Men’s and Women’s A & B Division The 2015 MTC Singles Championship was a strongly participated event which saw many new members, juniors, and former Champions competing for the titles. Two major milestones were achieved this weekend by two Chris’s. Chris Bensinger set a club record by winning his 7th Men’s A Singles Championship, the most in the Club’s history and this one comes fifteen years after winning his first title! Chris Carlson, playing with his left hand this year, achieved an unprecedented result when he won his 3rd B Singles Title, having won two Championships with his right hand already! The Men’s A Singles final pitted #1 seed, Chris Bensinger, against fourteen year old young gun #6 seed, Julian Deck, playing in his first men’s club championship and looking to back up his Calcutta win. The final seemed to be the perfect generational battle. Deck came into the final with a strong win over fellow teenager and giant killer, James Wyrick- Solari. Bensinger was relentless in his Semi-Final, convincingly disposing of the fiercely competitive, Chris Todd. Bensinger quickly showed why he was the #1 seed and the man to beat in this year’s event as he started strongly and put on a flawless performance wining 6-0 6-0. The Men’s B Singles proved to be a very exciting event with the Semi-finals providing us with two interesting battles. #4 seed, Adam Guild, outlasted #1 seed and defending champion, Brent Karrash, while #6, Chris Carlson, defeated a much improved and tough opponent in #2 seed, Colin Marshall. Both matches took over two hours. It was to be the power game of Guild against the prowess of touch game of Carlson. Though Guild took a commanding lead at a set and 4-1, Carlson would not be denied as he rallied back and won a close 4-6 6-4 6-4. The Women’s A and B singles are not yet finished. In the A singles, #1 seed Gabi Hayes is set to play #2 Alita Guillen this weekend. Hayes showed why she has been unstoppable in recent years and was too strong for Cheryl Dolins. Dolins was still recovering from her win in epic battle against Pam Epstein-Cohen on Saturday, lasting nearly 3 hours. Guillen played consistent tennis to handle Julie De Santo, whose strong serve and big forehand can be difficult to deal with. In the Ladies B there were four new singles competitors, which were fantastic to see! #1 seed, Susie Shoop, set up a finals show down with #2, Heidi Segal. Shoop used her court speed and consistency to out rally Mary Calahan 6-0 6-2, who was competing in only her second competitive singles match. In the other semi, Sandy Carlson tried to impose her strong net game on Heidi Segal. However, Segal had the answers and emerged victorious in a close 7-5 6-4. Congratulations to all the Winners!
