Speaking of celebrations, Cinco de Mayo is a Mexican holiday
widely celebrated in many parts of the United States and
especially here in New Mexico. You may ask “Why do we
celebrate a Mexican Holiday in the United States?” Let me first
give some background on what Cinco de Mayo means to our
Mexican neighbors. It is not the Mexican Independence Day
many think. That day is celebrated “ El 16 de septiembre,” when
Mexico achieved its independence from Spanish rule in 1821.
Cinco de Mayo is significant to our Mexican neighbors because of
the victory over the French adversaries led by Napoleon III at La

Mind Your Manners
The Suggestions Box located at the doorway to the serving line to the kitchen. We
want your feedback. Let us know how we
can improve our service to our North Domin-
We came across a small book written at the
age of 14 by George Washington, the father of our
country. Contemporary to his
time, social etiquette was highly
regarded and common practice,
something George exhibited
throughout his life.
Suggestion: A) We need more than Salsa & Chips for Cinco de
Mayo Dance. After all, it’s dinner hour from 5:00-7:00pm. B)
Cinco De Mayo, a very special day for New Mexican with wonderful joyful music, colorful table cloth of green and red with
miniature tacos, finger New Mexico food of enchiladas, nachos,
tamales not only Salsa & Chips.
The plan for Cinco de Mayo was to have a
dance. I thought I would have some light refreshments on the side. Serving hot foods does
require me to solicit help from the kitchen. I
have requested the help and we will be able to
provide some finger foods along the refreshments.
Suggestion: WOW, we are having wonderful meals with lots
of good service in appreciation let us give thanks by taking back
our trays to be washed after we eat and then continue our talks.
There is only two working in the kitchen and we are many. So
let’s give a helping hand.
Thank you for suggesting to others how helpful
it will be to our kitchen staff by simply taking
the trays back after completing the meal. This
will expedite the cleaning process and will make
a difference to our staff.
Suggestion: I think your tile grout in the men’s showers needs
to be re-sealed. It’s absorbing water which causes the tiles to
start falling off. It is easy to do. Four hours by volunteering on
Sunday; ready on Monday.
It is crucial to maintain this beautiful facility.
Your willingness to volunteer in the upkeep of
North Domingo Baca is greatly appreciated. We
do close for a week of cleaning every six
months. I will be asking for community volunteers to help us during the next closure. In the
meantime, I will put in a service call to our
Building Maintenance to assess the showers.
George Washington wrote
down 110 rules he called Rules
of Civility & Decent Behavior,
intended to polish manners. As
I read through the book, I
thought it was a refreshing reminder of the basic principles of
“Decent Behavior.”

Coconut Oil Contains a Unique
Combination of Fatty Acids With
Powerful Medicinal Properties
Coconut oil has been demonized in the past because it
contains saturated fat. In fact, coconut oil is one of the
richest sources of saturated fat
known to man, with almost 90%
of the fatty acids in it being saturated. However, new data is
showing that saturated fats are harmless. Many massive
studies that include hundreds of thousands of people
prove that the whole “artery-clogging” idea was a myth .
Additionally, coconut oil doesn’t contain your average

It Couldn't Be Done
by Edgar Albert Guest (1881-1959)
Somebody said that it couldn't be done
But he with a chuckle replied
That "maybe it couldn't," but he would be one
Who wouldn't say so till he'd tried.
So he buckled right in with the trace of a grin
On his face. If he worried he hid it.
He started to sing as he tackled the thing
That couldn't be done, and he did it!
Somebody scoffed: "Oh, you'll never do that;
At least no one ever has done it;"
But he took off his coat and he took off his hat
And the first thing we knew he'd begun it.
With a lift of his chin and a bit of a grin,
Without any doubting or quiddit,
He started to sing as he tackled the thing
That couldn't be done, and he did it.

Chain Triglycerides (MCTs) – which are fatty acids of a

long-chain fatty acids, but the medium-chain fatty acids
in coconut oil are metabolized differently. They go
straight to the liver from the digestive tract, where they
