A TEXAS TRADITION SINCE 1983
THE PITT’S & SPITT’S EXPERIENCE
PITT’S & SPITT’S has been a legend in the BBQ business for over 30
QUALITY
What sets Pitt’s & Spitt’s BBQ pits apart from the
competition is the quality of our materials. We cut no
corners at Pitt’s & Spitt’s. We do not use barrels, tanks
or recycled oil field pipe at Pitt’s & Spitt’s. All of our
units are rolled from heavy gauge, “virgin” steel plate,
and high grade 304 stainless steel. If you look closely,
you will find that our superior materials extend all the
way to the high quality accessories which we outfit our
pits with.
CRAFTSMANSHIP
Pitt’s & Spitt’s products are superior to the competition
due to our unsurpassed level of craftsmanship. At Pitt’s
& Spitt’s, we see manufacturing BBQ pits as a labor of
love and have been doing so for over 30 years. Our pits
are MIG and Heliarc welded by hand, and our guys are
the best in the business. We like to think of them more
as artists than welders. We invite comparison of our
welds against the machine welds of the mass produced
pit manufacturers. Quality is in the details, and nobody
does it better than Pitt’s & Spitt’s.
SUPERIOR PERFORMANCE & VERSATILITY
Owning a Pitt’s and Spitt’s BBQ pit is a true culinary
experience. Whether you’re looking to BBQ, smoke, grill
or wood fire a pizza, our pits can do it all. What’s more,
a Pitt’s and Spitt’s pit has the perfect blend of science
and art to deliver amazing results time and time again
- and for decades to come. The expected life span of
our pits is so long that they’re often passed down to
the next generation. This could be the last pit you ever
own...but most come back for more.

with new world techniques to consistently produce the “Best looking,

FAJITA SEASONING
SWEET SPICE
Meet Your Spice:
Great all-around seasoning.
Truly represents Texas and Gulf
Coast flavors.
With just the right amount of
sweet and smokey, this one
reminds us of our Grandpa’s
secret spice rub. This is an
everyday spice you’ll be putting
on much more than BBQ.
A tinge of chili and salt add a
dynamic flavoring to any of the
“white” meats -- pork, chicken,
and shrimp.
Begins with a savory sweet
flavor and finishes with just a
touch of heat.
For that true Tex-Mex flavor,
this spice brings to mind a hot
skillet plate of fajitas being
brought to the table at your
favorite Mexican restaurant.
To satisfy the bold spirit in all
of us. This one has a full flavor
profile with an extra kick of
heat.
A great way to chase that
Kansas City flavor, this spice
tends to favor the sweet side.
This spice is also a great way to
balance out a saltier dish.
What Our
Pitmasters Say:
“Hint of saltiness with a touch
of heat. There are also notes of
paprika.”
“Traces of brown sugar are
intertwined with sublte notes of
smoke and garlic.”
“A little salty, a little spicy.
A unique flavor that adds
complexity to your protein.”
“Starts off a little sweet and
then the cayanne adds a spicy
heat to finish this perfectly
balanced mix.”
“Salt, pepper, grilled onions,
smoked garlic -- multiple layers
of flavor come through without
the heat.”
“Akin to a Cajun flavor with
cayenne, salt, black pepper,
garlic and a HOT finish.”
“Definite presence of sugar with
touches of black pepper and
even notes of spice throughout.”
Goes Great With:
Ribs, redfish, french fries, fried
turkey (injection and rub), gumbo,
crawfish, and beans.
Brisket,
ribs,
steak,
BBQ
chicken, and grilled chicken
wings.
Pork ribs, chicken, burgers,
kebabs, shrimp, gumbo, and
beans.
Boston butts, pork belly,
grilled chicken, roasted green
vegetables, grilled peaches and
baked potatoes.
Beef or chicken fajitas, steak,
vension backstrap, grilled game
birds, asparagus and squash.
Beef or chicken fajitas, steak,
scrambled eggs, chili, crawfish,
beans, baked potatoes and
gumbo.
Pork, pizza, salted nuts, and
glaze on fresh rolls.
Blending
Recommendations:
Mix All Purpose with Rib Rub at
a 1:1 ratio for an award winning
combination. This combo took
1st place Ribs at the 2015 World
Championship BBQ Cook Off
at the Houston Livestock Show
and Rodeo.
Try blending with our Sweet
Spice to capture that Kansas
City style BBQ flavor.
Mixes well with All Purpose,
but try adding a little Hot &
Spicy to kick things up a notch
for a Texas border town flavor.
Turn this one up or down by
adding more Hot & Spicy or
Sweet. Also blends nicely with
Rib Rub for a unique take on
pork dishes.
Find your happy medium of
heat by blending with the Hot &
Spicy to taste.
Use with any of our spices to
add heat to your favorite spice.
Blends nicely with any spice to
help moderate the presence of
stronger flavors.

GETTING STARTED WITH YOUR PIT
SEASONING YOUR PIT
Before you begin cooking with your new pit, you will need to season it!
- - Lubricate the end of your smokestack with cooking spray or peanut oil and insert it into place
- - Close the drain valve
- - Remove all cooking surface grates then wash and dry them thoroughly
COMPETITION TRAILERS
CRAWFISH COOKERS
- - After drying the grates, place them back inside the pit. Then coat the grates and the entire inside of the pit with cooking spray or oil
- - With the lid open, build a small fire in the firebox. Close the lid and the firebox door and bring the temperature in the cooking chamber to 225º
- - With the pit at temperature, place ample portions of fatty meats (i.e. bacon ends, bacon, etc.) evenly throughout the cooking surface
- - With the lid closed, maintain the heat for about 2 hours (You can use your log lighter to establish and maintain heat, but using your favorite BBQ wood will give the pit better flavor)
FIRE PITS
CUSTOM COVERS
- - Allow the pit some time to cool and then use the drain valve to empty the grease into a bucket
- - Discard the remaining meat, then wipe down the inside of the cooking chamber and again coat it with cooking spray
Now that you have completed these steps, your pit is ready to start cooking!
KITCHENS
SERVICES FOR EVERY COOK AND PIT

CARING FOR YOUR PIT
Although our grills are made from heavy, durable materials, they do require cleaning and care:
------
-
---
Drain the grease and water and clean the inside of the pit after every use
Clean the stainless steel surfaces only with a cleaner approved for use on stainless steel
If possible, store your pit under cover or tarpaulin. Custom fitted covers are available from Pitt’s and Spitt’s
Remember to regularly clean the cooking surface grates and coat them with cooking oil and/or spray to prevent rust
Coat the inside of the pit with cooking oil and/or spray to preserve finish
Always remove the ashes from your firebox and/or ash pan after each use. Ashes hold moisture that will create an acid that corrodes the metal of your pit
Once each year, after the cooking season, remove the smoke stack and coat the small insert with cooking spray to prevent the stack from seizing
Once each year, spray the hinges with a deep penetrating food grade lubricant
Every 2-3 years, we recommend bringing your pit back to us for a complete refurbishment
DO NOT USE PETROLEUM PRODUCTS SUCH AS GASOLINE, THINNERS, ETC., TO CLEAN ANY PART OF THE PIT
We use high temperature paint made especially for barbecue pits on all of our pits. Excessive flames may cause the paint
to peel or flake. We cannot guarantee the paint or finish on any pit that uses gas or direct charcoal cooking. If the paint on
your pit does peel, sand the affected area with sandpaper and repaint with four to five light coats of black high temperature
BBQ or stove paint.
PITT’S & SPITT’S will warrant all parts to be free of defective materials or workmanship for a period of one year from
the original date of purchase, provided the pit is properly maintained according to our written instructions. If the pit is
properly maintained according to our written instructions, we will extend to the owner, a lifetime guarantee against firebox
burnouts. This is not a guarantee against corrosion or rapid corrosion due to high heat, but rather any high heat damage
to the steel. If the pit is used with gas or direct charcoal cooking, we cannot guarantee the paint or finish at anytime
(unless the failure was due to defective material or workmanship). Under any circumstance, carbon steel BBQ pits should
be touched up or repainted with high temperature BBQ or stove paint, whenever the need arises. We also do not warrant
or guarantee against the corrosion of the cooking chamber due to improper care. Our responsibility under this warranty
will be limited to the repair or replacement of defective component(s). All warranty repairs must be done by Pitt’s & Spitt’s.
Any repair or replacement of part(s) other than by Pitt’s & Spitt’s voids this warranty. We reserve the right to determine
whether the paint, finish, or part(s) failed because of defective material, workmanship or other causes. Failures caused by
accident, alteration, misuse, lack of maintenance, or from the improper packaging of returned items are not covered by
this warranty.
