8 tablespoons softened butter
3 large eggs
1/4 cup milk
1. preheat oven to 350°F. Lightly grease and flour
an 8 1/2" x 4 1/2" loaf pan.
2. beat butter with half the cake mix until no
chunks of butter remain. Add eggs one at a time,
beating until fluffy and scraping bottom and sides
of bowl after each addition. Add milk with remaining
cake mix, and beat until blended.
3. pour batter into prepared pan, shaking pan gently
to level batter. Bake for 45 to 55 minutes, or until
a cake tester inserted in center comes out clean.
Cool in pan for 10 minutes, then turn out onto a
serving plate. Drizzle with glaze, if desired.
Yield: one cake.
glaze:
Heat 1 tablespoon butter and 1 tablespoon milk
together until butter is melted. Whisk in 1 cup
sifted confectioners’ sugar and 1/2 teaspoon
vanilla extract. Add more sugar or milk if needed
to make glaze the consistency of molasses. Drizzle
over cooled cake.
