HOW TO PREPARE A BLEACH SANITIZING SOLUTION
To Sanitize Utensils in a Sink:
A sanitizing concentration of 100ppm (parts per million) must be used in the third sink.
To make a 100ppm sanitizing solution, mix 2 ml (1/2 tsp) of bleach
with 1L of water. Leave utensils in solution for at least 45 seconds.
To Sanitize Food-Contact Surfaces and Large Equipment:
For large items such as cutting boards, counter tops, and meat slicers that can only be washed
and sanitized in place, a 200ppm sanitizing solution is needed.
To make a 200ppm sanitizing solution, mix 1 tsp of bleach with 1L of water.
Note:
Use sanitizer test strips frequently to check sanitizer concentration. Make a fresh solution if
necessary.
Other sanitizers in proper concentrations, following the manufacturers’ instructions, may be
used if approved by the Health Department.
Ensure all containers (bucket/spray bottle) of sanitizing solutions are properly labeled and kept
away from food.
Food-contact surfaces should be air dried after sanitizing.
