CLEARANCES TO CONSTRUCTION
Floor: The Josper by Wood Stone oven must be installed on a non-combustible floor that extends 36" to the front and 30" to each
side of the oven door.
Sides: 18" to combustible materials
Back: 6" to combustible materials
When non-combustible building materials contact the body of the oven, the clearances to combustibles are transferred
to those non-combustibles.
This oven must be installed under a Listed Type 1 exhaust hood, or one constructed in accordance with NFPA 96. The hood must
be installed and maintained in accordance with NFPA 96 and/or all relevant local and national codes.

The Josper by Wood Stone Charcoal Broiler oven must be vented using a Listed Type 1 exhaust hood, or one constructed
and installed in accordance with the Standard for Ventilation Control and Fire Protection of Commercial Cooking
Operations, NFPA 96, and all relevant local and national codes.
The Josper by Wood Stone ovens, including model numbers WS-CBO-2728-(TS), WS-CBO-3728-(TS) and WS-CBO-3738-(TS),
must be vented in accordance with codes concerning solid fuel appliances (NFPA 96). Due to the dangers of creosote buildup and
of sparks entering the duct, these models should be vented separately from all other non-solid fuel kitchen equipment and in a
manner acceptable to the authority having jurisdiction. The Wood Stone customer support staff is available to answer any questions
concerning installation and venting of the oven. Call 1-800-988-8103 for assistance and technical support.
When wood and charcoal is burned slowly, it produces tar and other organic vapors that combine with expelled moisture
to form creosote. The creosote vapors condense in a relatively cool oven flue and exhaust hood of a slow burning fire.
As a result, creosote residue accumulates on the flue lining and exhaust hood. When ignited, the creosote makes an
extremely hot fire.
The rate of accumulation will vary with respect to flue gas temperature, wood type and moisture content. Frequent,
regularly scheduled, thorough flue cleaning is the best way to minimize the risk of flue fires.
Place the smoke outlet vent into the oven smoke outlet, then place the firebreak on top of the smoke outlet vent. Refer to OVEN
PARTS DIAGRAM section.

The Josper Tool Holster can be installed on either side of the Josper, depending upon preference. Both sides are scribed with
position markings.

2. Determine side of Josper for Tool Holster installation and
locate the 4 small, faintly scribed Xs. The top X is 9-1/2” from
the top of the oven.
3. Predrill 4 holes for the screws at the center of each X using a
1/8” drill bit.

A.TRAY SUPPORT
The Tray Support sits on top of the oven and is designed
for resting food for finishing. It also provides additional
surface area to assist in plating product. Order by model:

B.TONGS (WS-TL-CBO-TONG)
The Tongs’ primary purpose is to push and pull the
Josper Broiler Grates in and out of the broiler. They also
serve as a spatula and grippers for managing product on
the grate. Tool Holster included.

D.T-STYLE FLOOR BRUSH (WS-TL-TFB-S)
The 40" T-Style Floor Brass Bristled Brush is used to
brush off the Josper Broiler Grates.
E.JOSPER BROILER GRATE
The Josper Broiler Grate is the cooking surface of the
broiler. Additional Josper Broiler Grates can be added for
cooking smaller foods or smoking items. Order by model:

The 40" Ash Rake is designed to manage the charcoal

Cast Iron Grates line the bottom of the broiler supporting
the charcoal. These grates can be removed for more

CLEANING AND MAINTENANCE
CAUTION: When cleaning the Josper oven, you’ll be working with extremely hot materials, such as grates, embers and
ash. Insulated gloves must be worn to prevent burns. Even over night, the oven will retain significant heat. Take care not
to touch the oven or any of its components without the appropriate protection.
Do not use chemical products to clean the oven. Never pour water inside the oven to put out the charcoal.
IMPORTANT: Ashes must not be poured into containers made from combustible or heat sensitive materials. Ashes
should be placed into an ash dolly (metal container with a tight fitting lid). The closed container of ashes should be
placed on a non-combustible floor surface or on the ground, a safe distance from all combustible materials, pending final
disposal. Check with your dealer about Wood Stone’s Ash Dolly.
DISPOSAL OF ASHES
Ashes should be placed in a metal container with a tight-fitting lid. The closed container of ashes should be placed on a noncombustible floor or on the ground, well away from the combustible materials, pending final disposal. When the ashes are disposed
by burial in soil or otherwise locally dispersed, they should be retained in the closed container until all cinders have thoroughly
cooled.
The optional Wood Stone’s Dual Compartment Ash Dolly is available through your dealer. The specification sheet may be viewed on
the Wood Stone website under Tools & Accessories.
CREOSOTE—FORMATION AND NEED FOR REMOVAL
When wood or charcoal is burned slowly, it produces tar and other organic vapors that combine with expelled moisture to form
creosote. The creosote vapors condense in a relatively cool oven flue and exhaust hood of a slow burning fire. As a result, creosote
residue accumulates on the flue lining and exhaust. When ignited, the creosote makes an extremely hot fire.
As with all commercial cooking equipment exhaust systems, a regular inspection and cleaning schedule is needed to prevent the
possibility of a hood or duct fire. The frequency of inspection and cleaning will depend on hours of use and amount of grease-laden
vapors produced.
The duct serving this oven should be inspected at least twice a month during the first two months of operation, to establish rate of
creosote buildup and necessary cleaning schedule. If creosote or soot has accumulated, it should be removed to reduce the risk
of a flue fire.
The oven flue and exhaust system will require inspection and cleaning. The exhaust system should be inspected
and cleaned per the manufacturer’s and or local code official’s recommendations.

START OF DAY
Cleaning the oven everyday is critical to ensure proper airflow and overall performance.
WARNING: The oven and ash may be extremely hot. It is recommended
that insulated gloves be worn during the process of removing ash from the oven.
1. Clean door & door frame.
•Scrape accumulated fat and debris from the door frame
and door. We recommend using a 1" rigid paint scraper for
cleaning. Pay particular attention to the lower part of the door
frame and door, where fat often drips during cooking (fig. a).
•Note: Keeping the door frame and door clean maintains a
uniform fit and proper flow of combustion air.

ADDITIONAL STEP: 2–3 TIMES PER WEEK—CLEAN OUT ASH CHAMBER
•Ash Gate should be open. Push embers to one side of oven and remove Cast Iron
Grates from the other side to gain access to the Ash Chamber.
•Push all reachable ash out of Ash Chamber into Ash Chamber (fig. b & c). Scrape
grease build-up from top sides of Ash Chamber. Scrape any heavy build-up off Cast
Iron Grates, and replace grates. Note: Average life of Cast Iron Grates is 4–6 months.
•Repeat for other side.
•Close the Ash Gate and secure using Ash Gate Latch.
Replace Lower Vent Handle and close the Lower Vent.
3. Clean drip tray daily.
To remove drip tray, lift up and pull
away from the oven (fig. e).

2. Clean out ash.
•Open Lower Vent by pushing handle in.
•Rake ash over Cast Iron Grates towards the center of the oven so ash falls through
to the Ash Chamber directly below. Leave any embers or large pieces of unburned
charcoal.
•Rapidly push and pull Lower Vent Handle 2–3 times to jostle ash through the vent.
•Lift the Lower Vent Handle from its cradle, turn and pull the handle to remove it.
•Push the Ash Gate Latch down (located at base of Ash Chamber), which will
immediately release the Ash Gate, dropping ash from the Ash Chamber into the Ash
Catcher (fig. b & c). Take care to avoid falling ash and embers.
•Close the Ash Gate and secure using Ash Gate Latch. Replace Lower Vent Handle and
close the Lower Vent.

WEEKLY
1. Clean firebreak.
Remove cap, then remove firebreak by lifting straight up. Deposits can
be loosened by tapping the sides of the firebreak with a wooden spatula,
rotating the firebreak to access all sides (fig. f).

Note: Never use water to clean the inside of the firebreak. This will prevent
the soot from compacting and will prevent smoke from passing through.
2. Clean upper vent.
Remove vent by pulling and twisting upwards. Wire brush ash and deposits
from upper vent blade and surrounding pipe.

LOADING THE CHARCOAL
•Load the charcoal in a pile in the center in the center of the oven. The amount of charcoal will depend on the size of the oven.
The oven will be loaded twice a day—once for lunch service and once for dinner service. See the table below for the approximate
load quantities and total daily charcoal usage.

BEFORE LIGHTING
•Bring the charcoal together with the poker so that it is piled up in the center of the oven—not flat. When lit, the charcoal will
catch fire quickly and burn evenly.
•Open the Upper and Lower Vents (fig. g).

LIGHTING
Use a fire starter (paraffin/sawdust stick) to make three lighting points in the piled charcoal. Place one in the middle of the charcoal
and the other two at the sides.
After the fire starter has been lit, close the door and follow the instructions on the next page.
CAUTION: Never use gasoline, gasoline-type lantern fuel, kerosene, charcoal lighter fluid or similar liquids to start or
freshen a fire in this oven. Keep all such liquids away from the oven while it is in use.
THE LIGHTING PROCESS MUST BE CARRIED OUT WITHOUT FOOD INSIDE THE OVEN.

PREPARING THE OVEN FOR COOKING
STEPS BEFORE OPENING THE DOOR
•Wait 30–45 minutes (depending on the oven model) after lighting to be sure that the oven is well
lit. Note: If starting the oven for the first time, or if it has cooled to room temperature, wait time
will be 45–60 minutes.
•After this time, close the Lower Vent and keep the upper vent open.
•Wait an additional 5–10 minutes. The door to the oven can then be opened slowly to make
sure that the flames have disappeared. When they have, close the upper vent.
•Flatten the charcoal with the Ash Tool and spread it so that it is evenly distributed. We
recommend bringing the charcoal to 1 side, covering 2/3rds of the Cast Iron Grates (fig. h).

COOKING
PLACE THE JOSPER BROILER GRATES
•Slide grates into the oven along the grill racks. (Removing the grates during fire start up
and recharging will prolong the life of the grate.) Two broiler grates can be used at the same
time (fig. i).
•Place the grates according to the type of food being cooked.
Upper positions: Dishes au gratin, roasts, pizzas, bread

PREPARE THE JOSPER BROILER GRATES
•Brush the Josper Broiler Grates using a sharp wire brush to remove the accumulated fat.
CLEANING DURING THE COOKING CYCLE
•Scrape accumulated fat and debris from the door frame and door. We recommend using a 1"
rigid paint scraper for cleaning. Pay particular attention to the lower part of the door frame and
door, where fat often drips during cooking.
ADJUSTING VENT POSITIONS
•Adjust vents as needed throughout the cooking cycle. We recommend starting with both vents
closed, and then opening the upper vent 1/2 way, or as needed, to create more heat by allowing
more air through the cooking chamber.
NOTE: If smoke is coming out of the Oven Door (for example, during high production cooking), the
upper vent should be opened another notch until the smoke disappears.

REFUELING THE OVEN MID COOKING CYCLE

•Open the door and take out the Josper Broiler Grate(s).
IMPORTANT: When handling the Josper Broiler Grates, insulated gloves
must be used to prevent burns. Take care not to touch the oven without
protection for your hands.
•Open upper and Lower Vents (fig. j).
•Rake ash over Cast Iron Grates towards the center of the oven so
loose ash falls through to the Ash Chamber below (fig. k). Push
remaining embers or large pieces of unburned charcoal back to
fig.k
one side.
•Rapidly push and pull Lower Vent Handle 2–3 times to jostle ash
through the opened Lower Vent open. Leave Lower Vent open.
•Load charcoal per quantities listed in the LOADING THE CHARCOAL
section of this manual.
• Open upper vent to speed combustion.

PERIODIC MAINTENANCE
OVEN DOOR SPRING REPLACEMENT
Symptoms indicating the door springs are weakening and need replacement: the door begins to feel considerably heavier while
closing and falls forcefully when opened. If both springs are not replaced promptly, damage to the oven will result, which will not
be covered under the warranty. Annual replacement of both springs is strongly recommended.
An initial set of Oven Door Replacement Springs have been provided (one for each side). They are located behind the side service
panels (see illustration below). Replace the springs with the Oven Door closed.
After installing the replacement springs, order new replacements immediately (p/n 7000-1358).
1. Remove the service panel (see
fig. m).
2. Unhook the two ends of the
broken spring.
3. Using the supplied replacement
spring (temporarily attached
to the cross member in the
compartment), hook one end to
the eye hook, and the other end
to the chain so that the endto-end length of the spring is
8.25–8.75" (see fig. n). Adjust
spring length by rotating nut at
end of all-thread. Spring is set
correctly when the door falls
open softly.
4. Replace the service panel.
5. Repeat process on other side.

LIMITED WARRANTY

ALL WARRANTY SERVICE MUST BE PRE-APPROVED BY WOOD STONE
Wood Stone warrants its equipment to the original purchaser against defects in material or manufacture for a period of one
year from the original date of purchase, subject to the following exclusions and limitations.
Please contact the factory first at 1.800.988.8103 or 1.360.650.1111, seven days a week. Our normal business hours are 8am
to 4:30pm PST Monday–Friday. If calling during non-business hours, follow the recorded instructions for emergency service
and a Wood Stone technician will get back to you promptly.
EXCLUSIONS
The warranties provided by Wood Stone do not apply in the following instances:
1. In the event that the equipment is improperly installed. Proper installation is the responsibility of the installer; proper installation
procedures are prescribed by the Wood Stone Installation and Operation Manual.
2. In the event the equipment is improperly or inadequately maintained. Proper maintenance is the responsibility of the user;
proper maintenance procedures are prescribed in the Wood Stone Installation and Operation Manual. Burner problems resulting
from debris or ash in the burner well will not be covered by the warranty. Call with questions regarding maintenance frequency.
3. In the event that the failure or malfunction of the appliance or any part thereof is caused by abnormal or improper use or is otherwise
not attributable to defect in material or manufacture.
4. In the event that the appliance, by whatever cause, has been materially altered from the condition in which it left the factory.
5. In the event that the rating plate has been removed, altered or obliterated.
6. On parts that would be normally worn or replaced under normal conditions.
7. Normal cracking due to expansion and contraction stress relief in the ceramic firebox.
8. In wood-fired equipment configurations, in the event that pressed log products of any type have been burned in the equipment.
9. In coal-fired oven configurations, in the event any type of coal other than anthracite coal fuel has been used.
10.Damage resulting from the use of chemical cleaning products in the oven, as well as any damage from liquids or chemicals, including
water, being poured or sprayed into the oven.
If any oral statements have been made regarding this appliance, such statements do not constitute warranties and are not part of the
contract of sale. This Limited Warranty constitutes the complete, final and exclusive statement with regard to warranties.
THIS LIMITED WARRANTY IS EXCLUSIVE AND IN LIEU OF ALL OTHER WARRANTIES WHETHER WRITTEN, ORAL OR
IMPLIED, INCLUDING, BUT NOT LIMITED TO, ANY WARRANTY OF MERCHANTABILITY OR FITNESS FOR PARTICULAR
PURPOSE OR WARRANTY AGAINST LATENT DEFECTS.
LIMITATIONS OF LIABILITY
In the event of warranty claim or otherwise, the sole obligation of Wood Stone shall be the repair and/or replacement, at the option of
Wood Stone, of the appliance or component or part thereof. Such repair or replacement shall be at the expense of Wood Stone with the
exception of travel over 100 miles or two hours, overtime, and holiday charges which shall be at the expense of the purchaser. Any repair
or replacement under this warranty does not constitute an extension of the original warranty for any period of the appliance or for any
component or part thereof. Parts to be replaced under this warranty will be repaired or replaced at the option of Wood Stone with new
or functionally operative parts. The liability of Wood Stone on any claim of any kind, including claims based on warranty, expressed or
implied, contract, negligence, strict liability or any other theories shall be solely and exclusively the repair or replacement of the product
as stated herein, and such liability shall not include, and purchaser specifically renounces any rights to recover, special, incidental,
consequential or other damages of any kind whatsoever, including, but not limited to, injuries to persons or damage to property, loss of
profits or anticipated profits, or loss of use of the product.
