A Recipe from Pastry
Chef Judy James
LEMON TART
LEMON TART CRUST
-4 oz butter, cold and cubed
-1/4 C sugar
-1 1/2 C all-purpose flour
-1/8 tsp salt
-1 large egg yolk
-2 Tbls heavy cream
1. Pulse flour, butter, sugar and salt
in a food processor about 20 times
until the butter pieces are no larger
than small peas.
2. Stir egg yolk and cream together
in a small bowl before adding to
the flour mixture. Pulse about eight
times until the ingredients are
incorporated but the dough is still
crumbly.
3. Remove dough from the food
processor and gently knead until
the dough comes together. Wrap
in plastic wrap and chill at least 30
minutes.
4. Roll out the dough until the crust
is a 12" diameter circle. Transfer to a
10" fluted tart pan with a removable
bottom. Chill crust about 20 minutes
before baking.
5. Line tart crust with parchment
paper or plastic wrap and fill with
pie weights.
6. Bake at 375 degrees until the
crust is a light golden brown (I like
to remove the pie weights for the last five
minutes of baking).
LEMON CURD FILLING
-1 C fresh lemon juice
-1 3/4 C sugar
-Zest of 2 lemons
-10 egg yolks
-3 whole eggs
-1/8 tsp salt
-3 oz butter, cold and cubed
-1/4 C heavy cream
1. Whisk together all ingredients
except for heavy cream. Cook
over a double boiler while stirring
constantly until the mixture begins
to thicken slightly. Do not boil.
2. Remove from heat and stir in
the heavy cream. Strain the filling
through a chinois or fine mesh
strainer.
3. Fill the prepared tart crust with
filling and bake at 350 degrees for six
to eight minutes until the filling sets
up (It will still jiggle like gelatin, but will
set up firmly when chilled).
Bon appetit!

class, led by Heather McCartney,
furniture refinisher and owner
of the Wild Dandelion showed
members how to create a vintagechic piece using solvent-free,
zero-VOC mineral and clay-based
paints, waxes and topcoats. Each
participant was able to refinish a

with a new and updated item. Keep

The Chef's Table in
Churchill's Restaurant

and serves the courses tableside.
"I love developing menus for members dining at the Chef's Table. It's such a
creative process, and so satisfying to come up with a meal that is specially
designed for a certain group of people. I've gotten to know so many wonderful
members through meals at the Chef's Table, there is no better way to get closer to
people than to cook for them!" - Executive Chef Andrew Wilson
To reserve the Chef's Table, please call at least one week in advance
to allow our chefs time to develop
your custom menu. Price per person is
$125++ with wine pairings and $85++
