Combat acne from the inside and out
M
ost acne is caused by a
difficulty in clearing excess
testosterone from the body. So
if you have acne issues, avoid eating
high-testosterone foods—anything that
contains milk, beef, pork, or other sources
of mammal fat. Testosterone directly
stimulates production of sebum (oil) in
special glands in the skin. These glands
are below the skin’s surface, and move
their moisturizing oil out to the surface
through pores. Too much oil production
clogs the pores, which sets up a situation
where bacteria from the surface also get
trapped in the pores. This oil/bug brew
can then grow and fester into a pimple.
Next, consider the role of sugar. Eating
sugary baked goods spikes blood glucose,
which in turn causes the pancreas to
release insulin, the chemical responsible
for transporting glucose into the cells
where it can then be utilized to create
energy. Glucose is the fundamental
nutrient for energy—all food ultimately
becomes glucose. But straight-up sugar
can be a disaster because it causes
wildly fluctuating blood glucose and
insulin levels.
There are all sorts of ways to get your
blood sugar to go up, but only one way to
bring it back down. That’s with insulin.
So insulin is critically important, but
overproduction creates significant
problems. For example, insulin binds with
an important regulatory hormone called
sex hormone binding globulin (SHBG).
Tying up SHBG drastically interferes
with the body’s ability to clear excess
testosterone.
Diet Ideas
It should come as no surprise, then,
that ice cream and other sugary dairy
products are some of the worst foods
you can eat if you have an acne problem.

They provide the double whammy of
testosterone-delivering mammalian fat
and blood-glucose-spiking sugar. Other
acne-promoting foods include anything
deep fried and cheap chocolate.
Beyond those broad categories,
different foods produce acne flare-ups
in different people, so you need to figure
out the specifics for your body. Try a
two-week detox diet consisting of
nonglycemic fruits such as apples,
berries, or grapefruit in the morning,
and simple meals featuring mostly
steamed or raw nonroot vegetables,
plus wild-caught fish, legumes, or
free-range eggs for lunch and dinner.
After two weeks, reintroduce your
favorite foods one at a time in three-day
intervals. See how your skin responds.
Sometimes it takes up to 72 hours for a
telling pimple to emerge.
Supplement Basics
Helpful supplements for acne include:
Saw palmetto (Serenoa repens) at a
dosage of 400–600 mg per day. This
herb is more famous for its ability to help
reduce large, boggy prostates in men, but
it can also be brilliant for acne, as it helps
clear excess testosterone from the body.
Full-spectrum probiotics can help
clear up acne, especially if you have a
history of antibiotic use.
Fish oil is crucial for overall skin
integrity. It’s also one of the most
effective anti-inflammatory nutrients
available today.
Zinc (30–50 mg daily) is a cofactor in
75–80 percent of all cell repair mechanisms—including those for skin.
For a quick fi x, high doses of vitamin
A (50,000–150,000 IUs daily for a week
or more) work well, but women who are
considering pregnancy shouldn’t take
more than 25,000 IUs daily.
A tincture of half Burdock (Arctium
lappa, well known for clearing skin
conditions) and half Echinacea (an
antimicrobial) works well for some. This
blend can be taken internally (2 dropperfuls, twice daily) and also applied
topically as an astringent after cleaning.
Keep It Clean
Your basic skin care routine should
include opening the pores with a warm
washcloth, then cleansing the face with a
very gentle soap once or twice daily. A
light scrubbing agent is okay, but avoid
harsher exfoliants such as ground peach
pits. Wash off your face with warm
water, then splash it with very cold water
as a tonic. You can also use an astringent
tonic, and finish with a moisturizer. But
remember that the more ingredients a
product has, the less likely it is to actually
be good for your skin. Ultimately, the best
way to care for your skin is to clean it
with hot water, chase with cold water,
then apply a natural moisturizer.

Heal wounds and fade scars with botanicals

t used to be common practice to
wrap wounds in leaves to speed
healing, and pluck medicines
from the wild when in need of first aid.
These time-proven herbs are three top
choices when it comes to cuts, scrapes,
and scars. Whether you want to prevent
a scar from forming or fade an existing
scar, these herbal healers can do the
trick—and research proves their benefits
aren’t just an old wives’ tale.
Gotu Kola
A member of the parsley family, gotu
kola (Centella asiatica) is a well-known
scar remedy. Applying gotu kola to
wounds and even acne eruptions can
reduce scarring. It helps to increase
blood flow to wounds, reduce the
formation of excess scar tissue, and
improve skin elasticity.
Gotu kola’s active constituents are
triterpenes, steroid-like compounds that
have a balancing effect on connective

The leaves have anti-inflammatory
and antioxidant properties.
In several studies, research has
confirmed that gotu kola compounds
promote rapid healing in wounds. The
herb has been found to actually heal and
promote the growth of new skin, gently
closing and repairing even lesions and
skin ulcers. Several studies have shown
impressive results in the treatment of
even dramatically damaged skin.
Gotu kola has long been recommended
for the treatment of keloids (tough,
irregularly shaped scars that tend to
enlarge). In a clinical trial, 227 patients
were treated with either oral gotu kola
alone, or surgical scar revision plus gotu
kola, over 18 months. Subjects took
60–150 mg of gotu kola daily. In the
combined surgery and gotu kola group,
72 percent experienced improvements in
inflammation of scar tissue. In the gotu
kola-only group, inflammation disappeared in 82 percent of subjects—10
percent better than when surgery
was included!
Gotu kola can be used topically as
an ointment or tincture. It may be even
more effective when taken internally in
capsules (try 450 mg per day) or drunk
as a tea. Gotu kola also makes a tasty
cooked green vegetable. Carefully clean
the dried herb, remove the stems, and
soak it overnight. Cook it much like
spinach, with which it can be combined in
a recipe. It’s a little bitter, but palatable.
Warning: Do not take gotu kola if you are
pregnant or nursing.
Aloe Vera
Though it looks like a cactus, aloe is a
member of the lily family, along with its
cousins onion and garlic. The aloe vera
plant is widely used around the world for
a variety of ailments. It is most popular in
Western cultures as a burn remedy, and
you might already think of aloe gel as a

remedy for sunburn. It can help reduce
inflammation, fibrous tissue formation, wound contraction, and scarring.
A recent South African study found
that aloe even reduced the production
of melanin, the pigment that comprises
age spots.
Aloe vera’s thick leaves contain the
clear healing gel. This inner-leaf gel,
which contains 96 percent water, can
be consumed as a liquid or applied to
the skin.
It is aloe gel’s moisturizing and
anti-inflammatory properties that
assist with wound healing, helping the
skin to repair itself as well as lessening
irritation. The gel also helps wounds

Aloe vera can lessen surface swelling
and help repair damaged skin cells, as
well as protect newer, healthier ones.
The gel helps to increase the amount of
collagen your skin produces to promote
healing and also helps to fade existing
scars. Drink 2 ounces of pure aloe vera
gel daily, or apply generously to the
affected area daily.
Castor Oil
Ayurveda turns to castor oil, an oil
derived from the seeds of the castor
plant (Ricinus communis), to treat age
spots and scars. Ayurvedic practitioners consider this oil to be the
foremost remedy for both of these
disorders when applied generously
and consistently to affected areas.
Castor oil protects the skin from scar
formation, especially when applied to
wounds, such as from surgery. Several
studies support this. Castor oil has been
shown to increase the body’s number
of lymphocytes, which play an
important role in wound healing.
Babies have a high level of lymphocytes so their wounds don’t leave
scars. When you apply castor oil on
the skin, the level of lymphocytes
increases, thereby making you less
prone to scars. Additionally, castor oil
moisturizes the skin. Existing scars
also become less noticeable when
castor oil is applied, including acne
scars. The oil doesn’t clog pores, and
reduces bacteria and inflammation.

the time of year to make sure you’re
stocked up on cold medicine. But did
you know that several botanicals have
proven worthy of going head-to-head
with over-the-counter drugs to knock out viruses—without

decongestants? And many of these natural remedies can boost

Black elderberry
Zinc
Black elderberry (Sambucus nigra) extract helps to short-circuit
flu symptoms, especially if taken at the first sign of trouble,
according to a study published in the Journal of International
Medical Research. Participants in the trial who took black
elderberry (Sambucol) recovered in two or three days versus an
average of six days in the group not taking the extract. Researchers speculate that flavonols and compounds called anthocyanins

that ease aches, pains, and fever.
Research shows that zinc interferes with the ability of
rhinoviruses (responsible for about 80 percent of all colds)
to reproduce. Also, this mineral assists the immune system in
fighting infection by blocking the rhinoviruses’ ability to dock
on cell membranes. When taken within the first 24 hours of
symptoms, zinc shortens the duration of a cold by about a day,
according to results from six trials.
Echinacea
The herb echinacea (Echinacea purpurea) has been used for
centuries by Native Americans and other cultures to treat cold and
flu symptoms. Research indicates that taking echinacea for 7–10
days when cold symptoms first appear can reduce symptoms of the
common cold. Other studies have shown that echinacea may be
beneficial in treating upper-respiratory infections.

Most women I know look to conditioners and styling products

scalp, in the hair follicle, which looks like a tiny bulb when you pull a hair
out by its root. And hair follicles are a time-lapsed picture of the health of
your whole body.
All of our cells are continually dying off and being replaced by new ones,
some quickly and others more slowly. Cells lining the small intestine, for
example, take only 20 minutes to turn over. Skin cells take a few days. But
cells of hair follicles take a whopping three months.

When you think of cardiovascular disease, what comes
to mind? Cholesterol? Blood pressure? Stress?
T
he truth is, your cardiovascular system is only as healthy as your arteries, the blood vessels
that carry oxygen-rich blood from the heart to other parts of the body. When arteries are
damaged—a condition called atherosclerosis—blood flow can be impeded or even blocked.
Atherosclerosis develops in stealth mode, as plaque builds up along the endothelium, or inside lining,
of the arteries. Plaque is a fatty substance made of cholesterol, calcium, cellular waste, and a bloodclotting material called fibrin. Over time, it can damage the arterial lining and cause arteries to become
narrow and stiff. As plaque silently grows, it can reduce blood flow to the heart, brain, and other parts
of the body. And if it becomes unstable, plaque can rupture, causing a blood clot that can trigger a heart
attack or stroke.
Reducing plaque-causing risk factors is the first step in the fight against atherosclerosis (see “Risk
Management,” p. 18), but there are other things you can do to improve artery health. Adopting a diet
rich in fruits and vegetables—and low in unhealthy fats and sugars—is a start, along with practicing
portion control, exercising for at least 30 minutes per day, and learning to manage stress.
Supplements can also help. Here are some of the most effective:
Aged Garlic Extract (AGE): This pungent herb lowers blood pressure, prevents inflammation, and
improves blood vessel elasticity. But its benefits don’t stop there. Scientists recently discovered that it
can significantly reduce coronary artery calcification that contributes to reduced blood flow and less
flexibility.
Alpha-lipoic Acid (ALA): This vitamin-like antioxidant protects against free radicals that damage
the endothelium. According to scientists from Oregon State University and the University of
Washington, it also helps extinguish inflammation, prevent plaque formation, and lower triglycerides. Preliminary research suggests that it might even aid in weight loss.
Fish Oil: Fish oil’s ability to protect the blood vessels comes from two omega-3 fats: docosahexaenoic
acid (DHA) and eicosapentaenoic acid (EPA). Studies show that they help reduce blood pressure and
triglyceride levels, and modulate many of the mechanisms of atherosclerosis, including inflammation,
clotting, and platelet aggregation.
Niacin: In an analysis of seven trials involving more than 5,000 patients, researchers confirmed that
taking niacin can raise HDL levels by up to 35 percent. Other studies suggest that niacin prevents
cells from clumping together and sticking to artery walls. Be aware that immediate-release supplements can cause flushing. You can help prevent this by taking niacin at bedtime along with stinging
nettle. It’s also wise to take niacin under a doctor’s supervision since it may affect liver function in
therapeutic doses.
Quercetin: Population-based studies have found that people with high intakes of quercetin—found
in green tea, apples, citrus fruits, and leafy green vegetables—tend to have lower rates of heart
disease. One reason is that this antioxidant has the ability to prevent inflammation, dilate blood
vessels, and reduce plaque buildup. In one study, quercetin reduced the size of atherosclerotic lesions
by an impressive 52 percent.
Resveratrol: Research shows that resveratrol, which is found naturally in grape skin, has a direct
effect on the health of the cells lining blood vessels. It triggers the release of nitric oxide, which plays
a key role in blood vessel relaxation, and it also helps lower LDL cholesterol and prevent platelets
from clumping together inside blood vessels. Taken together, this strongly suggests that resveratrol
can significantly improve vascular function and help prevent atherosclerosis.

Risk Management
So what causes plaque to form in the first place? Advancing age and a
family history of heart disease definitely play a role. But the biggest risk
factors are things that are within our ability to control. They include:
Blood pressure. The higher your blood pressure, the more your
arteries swell and stretch. This injures the endothelium, causing plaque
to accumulate at a faster rate.
Cholesterol. High levels of “bad” LDL cholesterol contribute to the
buildup of arterial plaque. But that’s not the whole story. Low levels of
HDL also play a role, since this “good” cholesterol is thought to help
eliminate LDL from the body.
Diabetes. High blood sugar drives inflammation in the endothelium and
slows blood flow.
Obesity. Not only does excess weight increase the odds of developing
high cholesterol and blood pressure, it also triggers inflammation.
Losing just 5–10 pounds can benefit artery health.
Smoking. Cigarette smoke constricts blood vessels and slows circulation. The carbon monoxide from smoke also creates free radicals that
damage the endothelium and promote plaque buildup. In addition,

solely the result of deep-seated neurotic conflicts that could
be resolved only through psychotherapy. Now we know
that many sexual issues can arise from purely physiological
factors, including hormonal fluctuations, nutritional

and even simple age-related changes.

“Lack of arousal is about the body,” says Jenni Skyler,
PhD, sex therapist, board-certified sexologist, and founder
of The Intimacy Institute in Boulder, Colo. “Then there’s the
huge area of mental response, which we usually refer to as
desire. And lack of desire is about the brain. Desire is
governed by many things: self-confidence, relationship with
the body, negative sex messages, and a host of other
factors.”
Over the centuries, frustrated humans have been
willing to try almost anything to restore flagging
amorous feelings. Powdered gecko, for instance, has
been prized for its aphrodisiac qualities. In Peru,
drinking frog juice (which is actually made from puréed

(and romantic) chocolate-dipped fruit

Chocolate with winter fruits such as apples and pears taste
great with an added pinch of fancy salt (try Himalayan pink
crystals). The salt complements the flavors of the fruit and
heightens the sweetness of the chocolate. Sprinkle a few
crystals over the chocolate after dipping and before chilling.
If you’re using fruits that oxidize when cut, including apples
and pears, toss them with a few drops of freshly squeezed
lemon juice before dipping to slow browning.
If you don’t have a double boiler, you can use a metal
bowl set on top of the rim of a small saucepan of simmering
water, or microwave the chocolate and palm shortening in a
glass bowl in 20-second increments, stirring between each
heating session.

Allow excess chocolate to drip back into cup. Place fruit carefully on wax

o knowing this is February and that this recipe
features dark chocolate, you could be forgiven for
thinking I’m going to lead with all the wonderful
things dark chocolate does for you. Well, think again! First,
I’d like to talk about the one ingredient here that might
raise an eyebrow or two—palm oil.
Because palm oil is largely made of saturated fat, it has
an undeserved reputation as “bad,” but it’s anything but
that. I’m a huge fan of palm oil, particularly Malaysian
palm oil. It stands up to heat. It’s packed with antioxidants.
And it’s also a good source of tocotrienols, members of the
vitamin E family that help prevent brain cell death after a
stroke, among other things. And I like Malaysian palm oil
specifically because it’s sustainable. In fact, the Malaysian
Palm Oil Council is one of the most environmentally
conscientious organizations out there. So when you see
palm oil in an ingredient list, don’t panic—it’s a great food.
Now on to the chocolate. Dark chocolate is one of the
world’s healthiest foods. I even gave it a “star” in my book,
The 150 Healthiest Foods on Earth, because it’s a standout
even among other supremely healthy foods. High-cocoa
chocolate contains flavanols that have been found to
lower blood pressure and protect the heart and brain.
Cocoa is so good for you that it’s even sold in a few
supplement forms now, including capsules.
In short, dark chocolate plus fruit equals a ton of
antioxidants and health-protecting nutrients, making this
recipe a truly guiltless indulgence!

that omega-3 fatty acids were
necessary for the normal
development of brain, eyes, and nerves,
but nobody paid a whole lot of attention
to them until the 1970s. Then, a study
discovered that the Greenland Inuit tribe
had a startlingly low incidence of heart
disease—despite the fact that their
protein intake was extremely high in fat,
particularly oily fi sh fat, which is packed
with omega-3s.
By 2004, a plethora of studies led the
U.S. Food and Drug Administration to
state that “research shows that consumption of [omega-3 fatty acids] may reduce
the risk of coronary heart disease.” And
that’s just the tip of the iceberg. According to the University of Maryland
Medical Center, “research shows that
omega-3 fatty acids reduce inflammation
and may help lower risk of chronic
diseases such as heart disease, cancer,
and arthritis.”

ver wonder why onions make you

its health-promoting qualities.
Through the Centuries
Onions have been cultivated worldwide
for more than 5,000 years. For much of
their history, they were primarily eaten by
the poor because of their ubiquity and
pungency. But toward the end of the
Middle Ages, the onion began to be
recognized for the versatile and delightful
vegetable it truly is. Once Columbus
carried it to the New World, its culinary
dominance was assured.
And its uses weren’t confined to the
kitchen. In sixth century India, onions
were employed as a diuretic; Colonial
Americans thought raw onions cured
measles; and in Chinese medicine, onions

propyl disulfide, as well as chromium,
vitamin B6, and a flavonoid called
quercetin. Allyl propyl disulfide has been
shown to lower blood sugar levels; in
combination with chromium, it can lower
insulin and decrease total cholesterol and
triglyceride levels while increasing “good”
HDL-cholesterol levels. When you stir
vitamin B6 into the mix, you add protection against atherosclerosis, diabetic heart
disease, heart attack, and stroke.
Quercetin has been proven to be a

colorectal cancers, as well as breast,

Getting the Good Stuff
Onions are divided into two basic
categories—spring/summer and storage.
The former are the “sweet” onions—Vidalia, Maui, and Walla Walla being among
the better known—as well as spring onions
(also known as green onions or scallions);
they are more fragile, and cannot be stored
for long. They are also milder tasting. As
the name implies, storage onions—those
with a dry outer husk and a more pungent
flavor and aroma—can be put up longer.
In all instances, choose firm, dry onions
with no sprouting at the top and no soft or
moldy spots. Spring onions should be fresh,
green, and tender—avoid any that are
wilted and yellowed, and store in a plastic
bag in the fridge. Store all other onions in a
cool place with plenty of ventilation. Use

1. Preheat oven to 350°F. Heat 2 Tbs. olive oil and butter over medium heat in large, heavy-bottomed
pot. Add onions, thyme, and bay leaf; cook 40 minutes, stirring often, until golden brown.
2. Add garlic, cook, and stir 5 minutes more. Add broth and 1 cup water, bring to a boil. Reduce heat,
and simmer 30 minutes. Remove bay leaf.
3. Place baguette slices on baking sheet, drizzle with remaining 2 Tbs. olive oil. Bake in preheated
oven 10 minutes, turning once.
4. Remove baguette slices from oven, rub tops with garlic, sprinkle with Parmesan, and return to
oven for 5 minutes. Remove, and set aside.
5. Place 1 baguette slice in each of 8 deep soup bowls. Ladle soup over baguette slice, and garnish
with parsley.
