Website: www.smws.nl 1 SPEYSIDE Refreshing Elderflower Fizz The fruity notes are dominating to start; peaches, ripe melons and pineapples but very soon sweeter aromas appear with white chocolate ice cream, limoncello and a refreshing elderflower fizz with a delicate minty note. The taste neat is still fruity but with a drying, slightly chalky mouth-feel. Pear biscuits, 85.27 cooked pineapples, grapefruits - all with a dusting of icing sugar. With water, Lossie crystallized fruits in Tutti Frutti ice cream, lavender and lily of the valley, reminding some of a lady’s powder compact. The taste is now very floral with an elegant perfume scent; a chic and sophisticated example from this distillery 3 miles south of Elgin still using worm tubs to cool the distilled vapours. The palate was untypical of the make – even untypical of whisky according to one panellist (maybe grappa or slivovitz); very perfumed and aromatic – greengage skins, orange fondant, chocolate and pepper – definitely enigmatic. With water the nose became more floral and cosmetic, but the palate’s lemon bonbons and vanilla sponge eventually provided sweet, fruity, floral contentment. From the Marypark malt-producers. Alcohol 57.1 % Distilled June 2002 Stock February 2015 30 bottles Outturn 137 bottles Age 11 years A charming duality divided the nose – the sweet side delivered honey, rose and violet creams and assorted Matchmakers (coffee, orange, mint); the fruity dimension contained apple pie, orange jelly, raisins, pear and blasts of blackcurrant. We also found greenhouse leafiness and eucalyptus. The palate 35.126 was tasty and tart, with gooseberry, tangerine and Moffat toffees, plus caramel, Lossie fudge, chocolate and Crunchy Nut Cornflakes providing softer sweetness. The reduced nose was pleasantly uplifting – maple pecan Danish pastries and beehives in a rose garden. The palate now held runny honey, creamy peach yoghurt and soft leather to finish. The distillery sits in west Elgin. NEW Sweet, fruity & Mellow Distilled May 1985 € 141 Alcohol 54.9 % Distilled February 1995 Stock February 2015 45 bottles Outturn 129 bottles Age 19 years This sample changed every time we went back to it and from the variety of descriptors the following aromas were the most prominent; black currant preserve, mango chutney, Turkish Delight, rose flavoured white chocolate and a ‘scratch and sniff’ perfume out of a Vogue magazine. 46.25 The taste was juicy, fruity and sweet like wine gums (banana, pineapple, Lossie coconut – do theses exist!), chocolate Swiss roll and whipped lemon/ vanilla mousse. Water brought out Dolly Mixtures as well as sticky date pudding in caramel sauce. Website: www.smws.nl 2 Sparkling summer effervescence 48.38 The nose was really fresh and fruity – pear sorbet, sherbet, apple slices, kiwi, lemonade, elderflower cordial and Caribbean fruit salad – also honey, vanilla, white pepper and Flumps. More of the same with water – apple juice, white grape juice and lemon sorbet – but now becoming creamier – vanilla icecream and crème brûlée – the overall effect quite summery. The unreduced palate was amazingly sweet (sugar puffs, Ovaltine, iced gems, runny honey, fruit scones) but with a sparkling, fruity effervescence – sherbet, space dust, Cremola Foam, lemon puffs. In reduction – strawberries and cream, apple tarte tatin with custard and mango skins. The distillery is near Cromdale Alcohol 58.2 % Spicy & Sweet Slow cooked beef stew 2.89 7.85 Chow mein on a workbench 55.23 Outturn 249 bottles Age 9 years Distilled Stock February 2015 September 1993 15 bottles Outturn 332 bottles Age 20 years Quite a nose prickle to start, green unripe apples but then becoming warm and homely like a comfort blanket; sweet, slightly smoky, dried tobacco, barley sugar and a malted milk hot chocolate. The taste neat had something best described as ‘old fashioned’; antique chest of draws with dusty old maps and thick leather bound books, coconut coffee hobnobs and grandad’s Brylcreem. Adding a little water, ‘use more only if you dare‘, a single matchstick lighting a cigarette, an old well- worn Tweed jacket and liquorice all sorts. The taste reassuring and yet again comforting; oaky, leather sofas and sweet smoke tobacco. This sample comes from the distillery built in 1893 on the site of a grain mill and an old chapel. Alcohol 53.6 % Spicy & Sweet Stock February 2015 10 bottles The Panel immediately realised this was a big and robust dram, just like a beef stew packed with junks of root vegetables, chopped onions, garlic, fresh sage leaves and a good splash of red wine. Following that an apple and pear charlotte with caramel sauce. The taste was powerful, spicy and rich like a roast beef and fruit chutney wrap, or crispy duck pancakes with a chilli plum sauce. Just a drop of water added sweetness to the nose; sugar puffs, salty caramel and Lindt ‘Dark Noir Orange Intense’ chocolate bars. Still rich but with less intensity now on the palate and in the finish slightly burned toffee. Alcohol 50.7 % A little dab’ll do ya Distilled March 2004 Distilled May 1993 Stock February 2015 18 bottles Outturn 258 bottles Age 19 years Despite cut grass, herbal notes, citrus, pineapple and water-melon, we could not describe the nose as clean – an almost grubby fascination kept drawing us back – we found toasted oak and pistachios, nutmeg, ghee, an engineer’s workbench, burnt eucalyptus and chow mein noodles. The palate was concentrated and intense (‘an espresso of a dram’) fizzy, mouth-watering and impressively textured – with hits of anise and fennel seeds, plus oily, nutty, peppery elements; sweetness appeared as liquorice allsorts, white chocolate and agave syrup (especially with water) but savoury undertones, even salty, seaside suggestions and medicinal intimations made it a slightly challenging but satisfying experience. Website: www.smws.nl 3 Spicy & Sweet Wee secrets of flavour Our Winter gardener had honey and toast for breakfast before heading out into the frosty outdoors. Damp cut logs, raspberry canes and mint from a frosted earth. Thankfully some warmth developed with stewed apples with cinnamon, sticky toffee pudding with butterscotch sauce. Integrated spices like lebkuchen tingled and the panel found it became softer with ‘wee 36.77 secrets of flavour’ bursting out on the tongue. We found top herbal notes like fennel and celery leaf then Belgian beer and beeswax adding depth. Fallen apples and plums in the orchard enhance the soft earthy finish. Aromatic spiced orange mingled with eggnog, sugar puffs and milky hot chocolate sprinkled with nutmeg. Still in their pyjamas, the panel dipped into their stockings to find cranberry, pomegranate and red currants with Hubba Bubba gum. Water opened glugg infused with orange and mint, cola bottles. Fragrant lavender, saffron and lemon thyme wafted from the glass. Fresh wood from a homemade dolls house gave a grippy quality to the reduced taste which tingled with ras el hanout spiciness. Lingering flavours of pomander completed the festivities. Alcohol 56.7 % Distilled July 1995 Stock February 2015 42 bottles Outturn 586 bottles S 36.77 € 5.10 Age 17 years Our Italian panel member smiled happily as she remembered the tempting dishes served at their New Year feast. Panettone with Chantilly cream, apples baked with marsala, zabaglione, focaccia and nutty lentils. A workshop also sprung to mind with aromas of oil and sanded wood. Lightly toasted hot crossed buns and baked fruit tart served with sweet espresso. The wood became polished with orange wax. A drop of water and all became white! Empire biscuits with white icing, over ripe grapes, lilies and lychees. The finish was grippy with apple peel, green tea, almond stone and bitter lemon. Bellissimo! Alcohol 51.1 % Deep, rich & dried fruits Outturn 218 bottles Hessian Sacks, musty broom cupboards, sheepskin coats and a joiner’s work bench greeted us on the nose initially. Wild figs, fresh jasmine, dried roses and hot humid spice at an Indian market followed shortly after. Someone had left the door open to a deserted florist shop, complete with dry dusty floorboards. The palate was hot (warning: does need water) with fragrant wood, pot pouri and peach custard all ebbing through the prickle. Like a different whisky altogether water presented our mystified noses with Mr Whippy ice-cream drizzled with toffee sauce, cardamom pods, coconut husks, over-ripe bananas and bay leaves: like a herb crusted exotic fruit tart. Rich chewy mahogany came through on the reduced palate, accompanied by sticky apricot tarts, orange pastry, flax seeds and dusty muesli. Irresistibly dark and exotic, with a wax paper finish. Website: www.smws.nl 4 Spicy & Sweet Oranges, spices and London honey Eastern scents of vintage herbal teas, jasmine and Chinese five-spice were first to appear on the nose; then an old polished bookcase surfaced with light earthy notes and steady hints of orange - Jaffa Cakes and Seville orange rind. To taste there was London honey, raw brown sugar and cigarette tobacco, with green stems giving a bitter finish. With water 37.60 the nose delivered lightly perfumed hand soap and Yop drinking yoghurt but with a sidekick of chilli spice and red pepper. The palate offered apricot tart and a balance of citrus and sweet notes - lemon barley sugar, burnt orange, toffee and cake mix. Sweet and spicy on the finish. NEW Spicy & Sweet Toffee and humbugs in a tea chest Alcohol 52.4 % Distilled April 1985 Stock February 2015 34 bottles Outturn 182 bottles Age 29 years We found something intriguing and attractive about the nose – dry, dusty woody impressions (tea chests, polished oak, old attics, forest floor, dried porcini) – along with rum-soaked raisins, burnt sugar, apples, marmalade and humbugs. That woodiness hit us on the palate ‘like a stake in the mouth’ – 73.66 pepper, clove, cinnamon, tobacco, ash and also lovely, dark sweetness (treacle, Deveron sugary espresso dregs). Water brought toasted marshmallows, stewed apple, menthol and tobacco to the nose, while the palate now balanced a pleasing dry spice mix with vanilla, maple syrup, toffee and honey-roasted parsnips. Intense tastiness and fascinating character from this ‘big stream’ distillery. In time it lightens: fresh figs, melon, fresh grass, rosemary. At natural strength, the taste is heavier: herbal tea and jasmine tea, musty/waxy, nutty (macaroons, hazelnuts and almonds), flower honey. The last increases with a dash of water, becoming more waxy/oily – sunflower oil, crème Anglais, light nuts. Now the texture is soft, the taste sweet with honeycomb, then slightly bitter (edible flowers like nasturtiums) in the finish. Complex and ever-changing. Alcohol 58 % Heavily peated A study in black Distilled Stock February 2015 November 1984 10 bottles Outturn 586 bottles € 157 S 26.106 € 6.68 Age 29 years Cask type Refill Butt The nose hit us with sneezy black pepper and soot, liquorice allsorts, roasted chestnuts, puer tea, leather, tarry tobacco and meaty smoke (like smoked ham hough in lentil soup). Not much changed with water, we now found walnut oil and black bean sauce. The neat palate was intense, 66.53 masculine and challenging in its smokiness – coal smoke and ash, Deveron pepper, tar, burnt pork crackling, with some rich honey and cinder toffee sweetness. Slightly sweeter with water – well-roasted parsnips and blackjack chews joined the bonfire smoke. Smokier and earthier than usual for the make – the peat-freaks amongst us loved this Kennethmont offering. Website: www.smws.nl 5 ISLAND Oily & coastal Boozy brunch The Panel was greeted by aromas of a ‘Continental Breakfast’ – toast, croissant, pain au chocolat, gingerbread pancake, homemade strawberry jam, runny heather honey and a big mug of delicious sweet milky Breakfast Tea. The taste was more like a ‘Scottish Breakfast’ with scrambled eggs, 4.196 a rash of bacon, thinly sliced ham, black pudding and all with a generous Orkney amount of HP Brown sauce. Water added fresher and slightly herbal notes like a gentlemen’s exfoliator with lemongrass and eucalyptus but also maritime, sea air and tarry ropes. The taste was now salty and ashy, crispy seaweed, salted caramel and in the finish tangy grapefruit juice. NEW Spicy & Sweet Summer palette of bright colours 31.29 Jura NEW Alcohol 55.9 % Distilled October 1999 Stock February 2015 34 bottles Outturn 131 bottles Age 14 years The nose evoked a summer palette of bright, welcoming colours – yellow (jasmine tea, pine, buttercups, banana split), green (herbal, leafy) and red (raspberry jam, glacé cherries). Deeper notes slowly emerged – tea-chests, old books, fence preservative and sandalwood incense. Water took us back to flower meadows, gardens and hedgerows – then deeper again (rolling tobacco, leather, antique shops, toffee, beeswax). The palate had good viscous textures and spicy sweetness (liquorice, nutmeg, clove, sherry-soaked raisins, cinder toffee, manuka, oak staves, nuts). In reduction, lip-smacking and moreish – buttery pastry, creamy vanilla and floral perfumes all combined to create a toothsome and tingling ‘Yes please!’ experience. The taste neat was hot, spicy and 127.40 sweet like a mango chicken vindaloo dish with raisins and sultanas. Water released a charcoal aroma like that of grilled chicken bacon rashers and spice-crusted tuna with charred peppers and lime. The taste now had plenty of spice, cinnamon and cloves but at the same time that of a sweet strong espresso and strawberry and black pepper cake. The taste is fresh, clean and crisp: sweet and salty with tobacco ash in the finish: anchovies, crispy seaweed, barbequed prawns. At reduced strength the nose is much the same, the taste more 53.214 salty and maritime (clams, oysters), at the same time dry and earthy (bandages), with celery, thyme and a dampened peat fire. Fresh and clean and simple – reminiscent of summer’s afternoon on a sandy beach. NEW Peated Scallops cooked on a puffer shovel 3.234 Alcohol 57.8 % Distilled Stock February 2015 September 1996 34 bottles A dram at night, fishwives’ delight Age 17 years The nose had many dimensions – rock-pools and busy harbours, sweet toffee, vanilla and Edinburgh Rock, something sweetly citric (Jaffa cakes, chocolate limes), savoury notes of smoky bacon, heather flowers and Germolene. The palate had sherbet, parma violets, smoked gammon and Demerara; marshmallows speared on twigs roasting over a beach bonfire and ‘scallops cooked on a puffer shovel’ – a complex dram with a big presence. Water brought heather honey, jasmine, lavender oil and hot dogs to the nose. The palate now had grilled prawns and floral smoke – sweeter and more gentle but somehow still impressive. The distillery is in the island’s capital. Then smoked haddock chowder was served up on the deck of an old fishing boat. Diesel, tarry ropes and fish boxes combined. On the shore there were bonfires, setting light to the surrounding grass and heather. On the palate a Scandinavian platter awaits with 53.213 rollmops, mackerel ceviche, sweet pickles and capers. “Frazzled bacon fat!” someone exclaimed excitedly. With water, Amsterdammer tobacco, deep heat, aniseed balls and herring baskets on a fishwife’s back. To taste, some cloves, kippers, vanilla slices and peated whisky ice cream with raisins. Spicy & sweet Self-assured, buxom and rewarding 118.3 L CIA SPE The nose fascinated us with a mix of citrus (lemon bonbons, strawberry Millions, orange fondant and raspberry) sweet treats (baklava, meringue, crème brülée) and something enticingly savoury and lightly smoky. The palate was big, tasty and interesting – palo cortado sherry, vanilla, star anise, and crème caramel flavours swirling around – then perfume, jasmine tea, liquorice and sugarcoated fennel seeds arrived. The reduced nose elicited multitudinous descriptors, including zabaglione, toasted coconut, cinnamon, eucalyptus and ‘sticking your head in a bourbon cask’. The palate now suggested blackcurrant, fresh fig, salted caramel and citrus – self-assured, buxom and rewarding perfumed sweetness. From the only independent distillery in Ireland, founded in 1987. The neat flavour was supremely intense – treacle, cinder toffee, ginger cake, liquorice root, No Sample maraschino cherries, strawberry jelly cubes and chocolate sauce.
