WHAT DO I NEED?
4 slices sandwich bread or sliced loaf bread (coupon p.16)
Preheat the oven to 425°F. Arrange olives,
tangerine and onion on a large, parchment-paperlined baking sheet and roast until onion begins
to brown, 10 to 15 minutes. Toss gently, scatter
tuna over the top, season with salt and pepper,
and continue roasting until tuna is just cooked
through, 8 to 10 minutes more. Squeeze tangerine
over tuna, onion and olives. Sprinkle with reserved
zest; toss well and serve.

1. Preheat the oven to 350°F.
2. Cut or tear bread into (5" to 7") pieces; don’t
worry about removing the crusts…they’re the

until fragrant and just dried through, about 15

golden, 5 to 7 minutes. Add greens, salt and 3 cup
water; cover and cook, tossing once or twice, until
very tender, about 10 minutes more. Using tongs,
transfer greens to a large bowl, leaving residual
liquid in the skillet. (You’ll need at least 3 cup, so
add more water, if needed.) Whisk to scrape up
any browned bits and to make sure liquid is very
hot, and then slowly whisk hot liquid into fromage
blanc to make a sauce. Gently stir sauce into
collard greens, transfer to plates, top with kielbasa
and serve.

Meanwhile, in a small pot, simmer wine over
medium heat until reduced by half, about 15
minutes. Uncover the bean pot, stir reduced
wine and salt into beans and continue to simmer,
uncovered, until beans are very tender and
creamy, 20 to 30 minutes more; discard bay leaves.
Ladle into bowls, top with remaining green onions
and serve.

WHY SHOULD I?
Let your imagination run wild dipping all manner
of goodies in rich, velvety dark chocolate. Dried
and fresh fruits work great but so do nuts, chips,
crackers and cookies. Pair your chocolate-dipped

Scallops don’t have to be just a restaurant treat when they’re so easy to sear beautifully
at home. With a few tricks up your sleeve (perfectly dry scallops, simple seasoning,
hot oil), you can prepare them impressively at home. Pair with Globerati Gascogne Blanc (at right).
WHAT DO I NEED?
Frozen Whole Catch® Wild Caught

1. To thaw scallops, arrange on a paper-towellined plate, cover and refrigerate overnight.
Alternatively, place in a resealable plastic bag
and thaw in a bowl of room temperature water,
changing water halfway through, about
30 minutes.
2. Using paper towels, pat scallops very dry and
arrange on a plate. Season all over with salt
and pepper.
3. Heat 1 tablespoon oil and 1 tablespoon butter
in a large skillet over medium heat until very
hot but not smoking, 1 to 2 minutes. Arrange
scallops in the skillet in a single layer and cook,
without touching, until deep golden brown
underneath, about 2 minutes.
4. Using a metal spatula, swiftly loosen and flip
each scallop. Cook until deep golden brown
on the second side and just firm and opaque,
1 to 2 minutes more. Transfer to a large plate
and serve immediately.

WHAT ELSE SHOULD I KNOW?
•Make scallops for 1 or 10. Just remove from
the resealable bag and thaw only the scallops
you need.
•Use this same cooking method for any fresh
or frozen scallops; for smaller ones, the searing
time will be shorter.
•Serve seared scallops over cooked
pasta or grains, or alongside steamed
or grilled vegetables.
For An Easy Sauce
After removing cooked scallops from skillet,
reduce heat to medium-low and whisk
3 tablespoons lemon juice into the skillet,
scraping up any browned bits. Add 2 tablespoons
cold butter a few cubes at a time and continue
whisking constantly until just melted. Whisk
in 3 teaspoon sea salt. Drizzle over scallops.
Garnish with parsley and serve immediately.

Line a large sheet tray with parchment or wax paper.
In a small pot, heat chocolate over medium-low

minutes. Remove from heat and transfer to a small
bowl. One at a time, dip pretzels and fruit into
chocolate, shaking off any excess, and arrange in a
single layer on the prepared tray. (For moist items,
like fresh citrus, be sure to pat them dry before
dipping.) Set aside in a very cool spot to let harden,
2 to 3 hours, or chill until set, 20 to 30 minutes.
TIPS
•When it comes time to dip, choose a smaller
bowl as a deeper well of chocolate will help with
even dipping.
•Dip dry ingredients like pretzels or dried fruit first,
and then dip fresh fruit. This helps maintain the
best dipping texture for the chocolate.
•Dip items just enough to cover the tip in
chocolate or submerge them to completely
enrobe in chocolate.

2 grapefruits, peel, pith and seeds removed,
cut into segments
In a medium pot, bring 2 cups water to a boil.
Add tea and cherries, cover and set aside off
of the heat to let steep for 5 minutes; discard
tea bags. Whisk in honey, and gently stir
in grapefruit. Set aside to let cool to room
temperature and then transfer to a bowl, cover
and chill until ready to serve.
