Tomatoes on the Vine Picnic Pasta Salad
Ingredients
• 1 lb Tomatoes on the Vine, diced
• 8 oz dry, small shell pasta
• 3 Tbsp mayonnaise
• 1/2 cup high-quality Italian salad dressing
• 2 cloves garlic, finely minced
• 1/2 tsp black pepper
• 1/4 cup chopped parsley
• 1 cup shredded cheddar cheese
• 3/4 cup frozen peas, defrosted
• 1/3 cup small-diced red onion
• 1 can (2.25 oz) sliced black olives, drained well
Directions:
Cook pasta according to package directions, rinse and drain well.
In a large bowl whisk together the mayonnaise, dressing, garlic and pepper. Gently mix with pasta and remaining
ingredients.

BLT Salad with TOV and Blue Cheese Dressing
Incredibly good accompaniment to simple roasted chicken. Just add a crusty baguette and you’ve got dinner.
Makes 4 servings
Ingredients:
• 4 Tomatoes on the Vine
• 1 head butter lettuce
• 1/2 – 3/4 cup prepared blue cheese dressing
• 4 strips thick-sliced bacon, cooked crispy and chopped
• 1 1/2 cups large garlic croutons
• Plenty of freshly ground black pepper
Directions:
Separate lettuce leaves; rinse and spin dry. Arrange on salad plates. Cut tomatoes into thick slices and fan
across lettuce. Drizzle with dressing and sprinkle with bacon and croutons. Sprinkle with black pepper. Serve
immediately
.

Tomato and Orange Ginger Salsa
This sassy salsa is perfect paired with the rich flavor of salmon. The salsa is also tasty served over your favorite grilled fish,
scallops or chicken. Salsa recipe makes about 2 1/2 cups
Ingredients:
• Salsa
• 2 Tomatoes on the Vine
• 1 large orange
• 2 tsp very finely minced ginger
• 2 Tbsp minced white onion
• 2 tsp fresh lime juice
• 2 Tbsp chopped fresh cilantro
• 1/4 tsp ground coriander
• 1/2 tsp sugar
• 2 Tbsp Thai sweet chili sauce*
• 1/4 tsp kosher salt
Directions: Dice tomatoes into 1/4″ pieces and set in a strainer to drain off any excess juice. Cut peel off orange and dice orange
into 1/4″ pieces, discarding any seeds. Add to tomatoes to drain.
In a medium bowl mix together remaining salsa ingredients. Add drained tomatoes and orange and stir to combine.

Steakhouse Sliced Beefsteak Tomatoes and Onion Salad
This retro classic is a great starter to any steak lovers menu. Makes 4 servings. Dressing: Makes 2 cups
Ingredients:
• 2 – 3 Beefsteak Tomatoes, sliced
• 4 leaves Bibb or green leaf lettuce
• 1 small or 1/2 large sweet onion, sliced and separated into rings
• 1/2 cup Old-School Homemade French Dressing (recipe follows)
Old-School Homemade French Dressing
• 2/3 cup cider vinegar
• 1/2 cup tomato-based chili sauce, such as Heinz Chili Sauce
• 1/2 cup vegetable oil
• 1/2 cup sugar
• 2 Tbsp diced onion
• 1 Tbsp dry mustard
• 1 tsp minced garlic
• 1 tsp salt
• 1/2 tsp black pepper
Directions:
Arrange lettuce leaves on a platter or four individual plates. Arrange tomato and onion slices alternately on the lettuce. Drizzle generously with
dressing and serve immediately.

Slow-simmered Roma Tomato Sauce
This go-to sauce can be spooned over chicken, meats or fish, or tossed with pasta. Makes 3 cups
Ingredients:
• 2 lb Roma Tomatoes
• 3 Tbsp olive oil
• 1 Tbsp minced fresh garlic
• 1/4 – 1/2 tsp red chili flakes
• 1/3 cup red wine
• 1/2 cup chicken or vegetable broth
• 1 tsp dry Italian herb blend
• 1 tsp sugar
• 3/4 tsp salt
Directions:
Dice the tomatoes. Heat oil in a medium saucepan over medium-high heat. Add garlic and chili flakes, and cook for 1 minute until fragrant, stirring
constantly. Immediately add wine, tomatoes, broth, Italian seasoning, sugar and salt. Bring to a boil then reduce the heat and simmer for about 40 to 45
minutes, or until a nice saucy consistency, stirring occasionally and checking the heat to keep the sauce at a gentle simmer.
Chef's Notes:
You can easily enhance this sauce by adding other flavorings such as: pancetta or bacon, pickled jalapeños, olives, gorgonzola cheese, sautéed
mushrooms, roasted peppers, etc.

Grilled Shrimp and Grape Tomato Cocktail Skewers
A fun twist on the traditional “shrimp cocktail”! Serve as an appetizer or cozy up to a steak for a sassy riff on a surf-and-turf.
Makes 6 skewers
Ingredients:
• 1 pint grape tomatoes
• 11/2 medium sweet onion cut into 1” chunks (or 18 pickled cocktail onions)
• 12 medium raw shrimp, peeled and deveined
• Oil for brushing
• Salt and pepper to taste
• 1/2 cup purchased cocktail sauce (plus more for serving if desired)
• 6 metal skewers or 10″ heavy wood skewers soaked in water
• Garnish: 2 – 3 cups shredded lettuce, lemon wedges
Directions:
Thread ingredients onto skewers in the following order: onion, grape tomato, shrimp. Repeat. Finish with a piece of onion and
a tomato.
Lightly brush skewers on each side with oil and season to taste with salt and pepper.
Preheat grill to medium-high and cook skewers, turning and basting regularly with cocktail sauce, until shrimp is cooked
through, about 5 – 6 minutes. Arrange on platter of shredded lettuce with lemon slices and additional cocktail sauce if desired.

Oven-Roasted Tomatoes
Ingredients:
• 12 whole plum tomatoes, quartered
• ¼ cup olive oil
• 1 tablespoon garlic, minced
• 1 tablespoon shallots, minced
• 2 teaspoons fresh basil, chopped or 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1 teaspoon fresh thyme
• ¼ teaspoon salt
• ½ teaspoon fine black pepper
Tips:
Adjust time for the number and variety of tomatoes used. This recipe is a great way to use up heirloom tomatoes
before they get rotten, but they may require 2-3 hours to cook, as they are often more watery.
Directions:
Preheat oven to 250 degrees.
Mix all ingredients and toss with tomatoes. Lay tomatoes on a sheet pan.
Roast in the oven for 1-2 hours, or until the tomatoes and garlic begin to brown. Let cool before serving.

Tomato Pie
Ingredients:
• 1 (9-inch) deep-dish pie shell
• 4 large tomatoes, sliced
• 1 large sweet onion, sliced very thin
• ½ lb. hot Italian sausage, crumbled, fried and drained
• 1 cup shredded cheddar cheese
• 1 cup shredded Swiss cheese
• ¼ cup Parmesan cheese
• ¼ cup mayonnaise
• ¼ cup finely slivered fresh basil
Tips:
You can substitute the Italian sausage with ground turkey or chicken sausage.
Vidalia onions are the most widely available sweet onion.
Directions:
Preheat oven to 375 degrees.
Slice the tomatoes and pat both sides with paper towel to remove some of the juice.
In alternating layers, fill the pie shell with the tomatoes, onion, sausage and basil, reserving some basil to garnish.
In a small bowl, mix the cheeses with the mayonnaise and spread over pie. Cover loosely with aluminum foil and bake for 30 minutes.
Remove foil and bake for 30 minutes more.
Garnish with fresh basil slivers. Can be served hot or cold.

Roasted Heirloom Tomatoes with Fresh Mozzarella
Ingredients:
• 1 large round Heirloom Tomato of any flavor/color
• Freshly Grated Parmesan Cheese
• Kosher Salt
• Olive Oil
• Fresh Mozzarella Medallions
Directions:
Turn your oven onto low Broil with backing rack in the middle of the oven.
Place your slices on a greased cookie sheet. Drizzle the top with Olive Oil; be generous. Now, sprinkle top with Kosher Salt. Now
sprinkle the top with freshly grated Parmesan cheese. On top of the Parmesan, place a slice of fresh Mozzarella. Place your baking
sheet into the oven. Keep an eye on them, but it should take about 6 minutes or so until cheese is melted and has a couple brown
bubbles on top.
