Salt Alternatives
Vinegar and lemon juice : Have a magical ability to bring out the flavor of food. They also act as a preservative and
can lengthen shelf life of foods similar to salt without the salty taste. Marinating meats in vinegar and lemon
juice tenderizes it and adds so much flavor the need to add salt is reduced.
Spices : Cumin, turmeric, coriander, nutmeg, cinnamon add a spicy kick to foods. Each spice imparts its unique touch
to a dish and so much flavor, you can just skip the salt. You can use spices in everything from soups to salads. Added
bonus : they are chockfull of antioxidants and protective in nature.
Herbs : Herbs both dried and fresh can transform a dish from ordinary to extraordinary. Dried herbs can be bottled
with other seasoning to make a salt free seasoning which can be sprinkled over anything. They are a seriously yummy
salt reducer.
Salt Free Seasoning (i.e. Mrs. Dash) : You can find several flavors of home-made and store-bought seasoning blends which
you can add-on everything from vegetables to meats. They enhance a dish and reduce the need for sodium so much you won't
be able to do without them.
Tomatoes: These function like lemon and vinegar and enhance the flavor of food. Fresh frozen or purred they make
any dish magic. Just make sure you're not using canned tomatoes or ketchup which had added sodium. Just use
more of them. They are packed with lycopene and Vitamin C ! So good for you .
Onion : Red, white yellow... they're all bursting with flavor and add so much depth to any dish. Saute them in, add
them raw or grill them and add to dishes. So much flavor, you can reduce the salt in the dish and not feel it.
Garlic : Strong flavor which transfers on to any dish! Anything that has a strong flavor can reduce the need for salt.
Roast garlic for a unique flavor. Garlic has health properties as well.
Ginger : Add fresh ginger to sauces, smoothies, soups.. any dish you want to give that special kick to. Add dry ginger
to your home-made salt free seasoning and to other dishes as well.
Peppers :These add a tingly heat to any dish and transform the taste to spicy! Jalapeno, black pepper, capsicum, red
chile, chilli powder ... all of them distract the tongue and reduce the need for salt. Use as tolerated.
Zest of lemon and orange : There's something quite powerful about lemon and orange zest. Adds a tangy taste
that is quite unique. Just scrape a fresh lemon or orange to get lemon and orange zest and try it in your dishes.

Recipe of the Week
Tri-Color Quinoa & Black Bean Salad
Recipe courtesy of Jim Dirkes
Ingredients:
- 1 container (85g) tri-color quinoa
- 1 container (1 1/2 cups each) black beans rinsed
- 100g green pepper, raw
- 100g red bell pepper, raw
- 4 oz. yellow pepper, raw
- 50g celery, raw
- 1/2 cup red onion, raw
- 2 tbs. lime juice
- 1 tbs. sesame seeds
- 1/4 cup extra virgin olive oil
- 1 tbs. ground cumin
- 1 tsp. celery salt
- 1/8 cup parsley flakes
Directions:
1. Prepare the tri-color quinoa per instructions. Spread the quinoa out on a tray and allow to cool
2. Dice the peppers, red onion, celery and add to a large bowl
3. Put sesame seeds in a saute pan and heat over medium-high heat, constantly moving the seeds so that they don't
burn. Remove when the white seeds begin to change color
4. Mix the quinoa and veggies in a bowl along with the remaining ingredients
5. Cover the salad and place in the refrigerator for at least one hour preferably more so that the flavors can meld

Dr. Woolf is a Board Certified Orthopaedic Surgeon and Sports Medicine Specialist with MUSC. Dr. Woolf earned his
medical degree from the Penn State College of Medicine, completed his residency and fellowship in Orthopaedic
Surgery at the Medical University of South Carolina, and completed a Sports Medicine fellowship at the Taos
Orthopaedic Institute.

Parking
HCC parking is available under the Wellness Center building. Gates will be open before 7:30am and after 4:30pm.
From 7:30am-4:30pm, please notify parking services upon entering the parking lot that you are with the Healthy
Charleston Challenge.
Additional parking lots are located diagonal from the Wellness Center and will be available to HCC participants before
7:30am and after 4:30pm.
MUSC Wellness Center Nursery Hours:
Monday-Friday 8:15am - 12:15pm
Tuesday & Thursday 4:30pm-7:30pm
Extended hours Thursday night for HCC participants may be available upon request.
