Boneless Ham Shapes
A full line of savory hams are perfect for profits any time of day.
All are simple to prepare and right at home on any menu.
Pit Style, Teardrop or Pear Shape
Whole muscle. Features old-fashioned
appearance with a higher yield than bonein hams. Ideal for carving traditional ham
steaks and buffet lines. Hams should be
heated before serving.
Flat Ham or Buffet Ham
Whole muscle, consistent shape. These
hams provide good plate coverage and
flexible portion control, making them ideal
for entrée applications.
Round: Large or Small Diameter
Whole muscle, consistent shape. Large
hams are very versatile; smaller products
are good for breakfast and deli serving.
Rectangular or Squared Ham These fully cooked hams offer 100% yield
and consistency for slicing or deli shaving.
Natural Flat or D-Shaped
Whole muscle. These hams appear less
processed and offer great plate coverage
and eye appeal.
Endless Hams
Best slicing yield because both ends are
removed. Consistent shape throughout.
Ham Classifications
Natural Juices
A ham labeled “ham with natural juices” contains at least
18.5% protein and has had a small amount of water added
when cured. Its cured weight cannot be more than 8% higher
than its uncured weight.
This ham is moister and has a smoother texture, making it a
popular choice for a special dinner or premium sandwich.
Water Added
A ham labeled “ham—water added” contains at least
17% protein and has no more than 10% added solution.
Its cured weight cannot be more than 8% higher than its
uncured weight. The added water content makes this ham
more versatile.
This ham is commonly used for steaks and slices.
Ham and Water
A ham product that is less than 17% protein and can contain
any amount of water. The water content must be clearly stated
on the label as a “% of added ingredients.”
This type of ham is great for thin slicing to use in sandwiches.
Natural-Seamed or Close-Trimmed: What’s the Difference?
Each of our hams is carefully hand-crafted to ensure
quality and consistency each and every time. We use a
few different processing methods that help to achieve
the variety and features that you’ve come to expect from
Gordon Food Service®.
Close-Trimmed
Process: Each bone-in ham is hand-processed to remove
the bone. All included muscles are separated and
closely trimmed of fat before the ham is shaped and
hardwood-smoked.
Natural-Seamed
Process: Each bone-in ham is hand-processed
to remove the bone. All included muscles are left
intact with their natural seams, and they are partially
trimmed of fat before the ham is shaped and
hardwood-smoked.
Distinction: Hams are very lean for a pleasing appearance
and flavor. Results in a great whole-muscle ham.
Distinction: Small cover fat provides a rich flavor and helps
protect from drying. Provides a natural whole-muscle ham
with all muscles lined up in the same direction.
Close-Trimmed (Multipiece)
Process: Each bone-in ham is hand-processed to
remove the bone. Muscle portions are separated and
closely trimmed of fat before the ham is shaped and
hardwood-smoked.
Distinction: Lean hams that provide consistent value.
