Red Velvet Cookies Makes 26 cookies Ingredients: 1 700-gram pack JOEY PRATS ULTRA MIXES™ Red Velvet Cake Mix 3 medium (150 grams) whole eggs 2/3 cup (150 grams) unsalted butter, softened Procedure: 1. Preheat oven to 350°F (180°C). Line sheet pans with non-stick baking paper. 2. Sift JOEY PRATS ULTRA MIXES™ Red Velvet Cake Mix into a mixer bowl. Add whole eggs and unsalted butter. Using the paddle attachment, beat mixture on medium speed for 3 minutes, scraping bowl after each minute. 3. Using a #30 scoop, portion batter and space them about 2-in (5-cm) apart on prepared sheet pans. You should have 12 cookies per sheet pan. 4. Bake for 12 minutes (for soft cookies) to 15 minutes (for crisp cookies). Cool cookies completely on sheet pans. Variation: Red Velvet Cookies with Cream Cheese Filling – Sandwich 2 cookies with cream cheese filling (recipe follows). Cream Cheese Filling Ingredients: 300 grams cream cheese 100 grams unsalted butter 300 grams sifted confectioner’s sugar Procedure: 1. Combine all ingredients in a mixer bowl.
