Cooking Tips & Recipe Variations FRIED GREEN TOMATO BATTER Also great on mushrooms, shrimp and more. Try frying dill pickles for a fun twist. For thinner batter add slightly more water and for thicker batter use less water. Green Tomatoes with Feta Cheese – Select small firm green tomatoes. Prepare according to directions. After cooking, place on a paper towel to drain excess fat. Sprinkle with crumbled feta cheese (while hot). Bacon Lettuce Green Tomato – Make a BLT using Fried Green Tomatoes. We like it with lightly toasted sourdough bread and light mayo. Tomatoes with Dip, Sauce or Gravy – Dip: 1/2 cup ranch dressing with 1 to 2 Tbs. Tobasco, Stir. Or, serve with your favorite gravy. Sawmill gravy is great. Or, try with your favorite sauce or dip. Corn Dogs – Place a wooden skewer in the center of the hotdog, running it through more than half way. Using the Fried Green Tomato batter, coat each hot dog generously with thick batter. Fry until golden (for thick batter use less water). Eggplant Parmesan – Grate or sprinkle parmesan into mix. Sprinkle more parmesan on top after frying if you like. makes a delightful topping for pies. Its special blended sugar is the secret. Sweet Potatoes – Slice sweet potatoes approx 1/4 inch slices. Lay evenly into baking dish. Prepare crisp according to directions. Spread over potatoes. Bake @ 350° for 40-45 min. (You may add some marshmallows on top while cooking if you like. Add the last 10 minutes.) Bananas Foster-style – Slice banana into ovals. In a saucepan melt 1 stick of butter, add 1/2 bag apple crisp, and 1 Tbs sugar, stirring to blend. Add 1/2 cup water, stirring well over low heat (more or less water to reach desired consistency). Add banana slices. At the last minute add 1/4 cup dark rum. Simmer to blend flavors. Pour hot and steaming over ice cream. Caramel Apples – Cover your baked apple crisp with a drizzle of caramel ice cream topping. Apple Crumble Pie – Top an apple pie with apple crisp for a special treat, bake as usual. GRILL-IT This spice blend adds a unique flavor of ‘just off the grill’ to any food. It can be used as a rub on any cut of meat, or sprinkled on fish for a light blackening. It can also be used as a sprinkle on popcorn, baked potatoes, or scrambled eggs. Use it as a cooking spice in soups and stews to add a grilled flavor. Keep it on the kitchen table for everyday use. Red Eye Roast – Coat a 3-4 pound roast with Grill-it, then brown all sides in a heavy skillet. Lower heat and add 2 cups left over strong coffee and 2 cups water. Cover and cook 4-5 hours until done. Corn on the Cob – Cook ears of corn until done. Butter, sprinkle Grill-It generously for grilled corn flavor. COBBLER We have found this mix to be so versatile. It can be used to make a delicious dessert and can also be used as a topping. Baking time may vary with fruits or desired texture. As a topping – Mix 1/3 bag of mix with 2 Tbs butter, mix to crumbly texture, and spoon over baked beans, pies, or souffle. Breakfast Spoon Bread – Using a box of Cobbler mix, combine 1/4 cup melted butter, 1 small can crushed pineapple, and 2 eggs. Stir together. ONION RINGS BATTER Pour into a small loaf pan. Bake @ 350° for 30-35 min. Scoop out with a spoon. My Favorite: This wonderful batter is great not only on Melt cheddar cheese on top (after cooking). onions, but on other veggies as well. It is similar to the Fried Green Tomato Batter, but with APPLE CRISP spices added. Makes great fried okra. We receive raves from everyone who tries this Try it with any veggies; even bite sized blocks of Apple Crisp. A scoop of ice cream with a warm crisp makes the perfect dessert. Try a mixture of cheese or olives. apples and pineapple or berries. This crisp also Awesome Onions – Take a medium sized onion, slice through from the stem to the root – leaving 1/2 inch at the bottom. Cut around the onion like slicing a pie. Soak the sliced onion in ice water for 30 minutes to open the petals. Batter the onion allowing the batter to soak in between the petals. Fry in a pot of hot oil that is deep enough to cover the onion. Serve with a spicy dip. Baked Onion Rings – Prepare onion rings and batter according to box directions. Place on a greased cookie sheet. Bake at 350° for 15-20 minutes. Fried Cheese – Cut small blocks of a firm cheese. Coat with batter and fry quickly in hot oil. Cool before serving. CHICKEN BATTER This batter was perfected and brought to you to help you make perfect fried chicken Every Time. This batter makes the perfect crust for frying. It can also be used for baking when you want a lighter ‘fried chicken’ flavor. Kids love it on chicken fingers, or popcorn shrimp. Chicken Fried Steak – Bread individual servings of ground round with batter. Pan fry or bake in the oven until golden. Serve with mashed potatoes and gravy for a southern treat. Home Fries – Slice potatoes into wedges, soak in buttermilk and batter according to directions. Pan fry until golden. Popcorn Shrimp – For a milder crust, coat small shrimp with Chicken Batter. The kids will scoop them up! WHISTLESTOP MARINADE We have been told that our marinade is the best on the market. It enhances flavors… without using MSG. You may add a little to soups and stews. It is also an excellent tenderizer for a less expensive cut of meat. Great with chicken, steaks, chops, and ribs. For fish, use the marinade for 30 minutes or less. Vegetables are great when marinated and grilled. Salmon with Marinated Vegetables – Sprinkle salmon steaks with Grill-it. Add fresh mushrooms and slices of onion. Pour in 1/3 cup WhistleStop Marinade. Add 1/3 cup Italian dressing. Let sit 10-20 minutes. Place in the oven @ 350° and bake until fish is flaky. Serve with rice and use the juice as a thin gravy. WhistleStop Pot Roast – Marinate a large roast in a Ziploc bag. Rub roast with Grill-it. In a crock-pot or dutch oven, place roast with 1/3 cup marinade. Add potatoes, onions and carrots to the pot. Cook until done. Roasted Onions – Clean large sweet onions, but don’t peel them. Cut out the stalk end, leaving an opening the size of a dime. Pour 1 tsp of marinade into each. Bake @ 350° for 45-50 min. Pork Tenderloin – Marinate tenderloin in a large Ziploc bag overnight. Wrap meat in foil. Grill for about 20 minutes. Unwrap and place directly on the grill for another 10-15 minutes. Allow 10 minutes before slicing and serving. SEAFOOD BATTER This versatile batter can be used wet or dry. Down Under Coconut Shrimp – Mix coconut flakes in with our dry batter in a dish. Dip large shrimp in egg mixture, then in the coconut/ batter mixture. Cook until golden. Baked Tilapia – Dip fillets first into egg mixture then batter to coat. Place fish on a cookie sheet coated with non-stick spray. Bake @ 400° until done. Trout Almondine – Batter fish fillets and place on a cookie sheet, skin side down. Top with sliced almonds. Bake @ 400° until done. Fried Crab Claws – Rinse crab claws and pat dry. Batter individually and fry. CHILI STARTER Our Chili Starter has gotten rave reviews. You can use ground beef, chicken, or ground turkey. I like to add slightly more ingredients than directed. We like to mix beans. Our favorites are black beans, red beans, chili beans, and white beans. (We recommend not pre-seasoned.) We also use stewed and diced tomatoes. Our favorite batch is 3lb ground turkey, 50oz beans, 50oz tomatoes and of course our chili starter. Our 7oz pouch makes a bunch of Chili, so if you like just use 1/2 bag, seal and put in fridge. We like to put leftover chili in freezer bags, bag up meal size portions and freeze... Enjoy! Note: Use a pinch or two of Chili starter with stew or soups.
