Makes several 16 oz. servings
2 pints cut up pineapple
2 pints cut up watermelon
2 quarts coconut water
1 bag baby spinach
1 bag frozen blueberries
2 green apples or 2 bananas
Directions
Blend all of the ingredients together in a juicer, pour into 16 oz. servings. You can store or
freeze extra smoothies to drink later. Enjoy!

2c quinoa (before cooked)
3 roma tomatoes
1/3 oz fresh mint
1 c diced red onion
2 ears corn, uncooked
1 cucumber seeded and diced
Juice from 1 lemon
2 avocados
Salt/pepper to taste
Cook quinoa, set aside to cool.
Slice kernels from corn.
Combine everything except avocado and salt/pepper.
Mix and refrigerate.
Top with diced avocado, salt and pepper to serve.
(Can sub black beans and cilantro for the mint for a southwest flavor.

Here's a Granola recipe that I use and it is very good:
4 cups rolled oats
1/4 cup sesame seeds
1/2 cup water
1 cup sunflower seeds
1 cup raisins or dates
1 cup assorted nuts
1 cup coconut
1/2 cup honey
1/2 cup coconut oil
1. Soak oats and sesame seeds in water overnight. Add choice of nuts, etc. Pour honey and
coconut oil over all and mix together well.
2. Place on large baking sheet and bake at 350 degrees for 15 minutes. Stir and bake 15
minutes more or until lightly brown.
3. Cool completely and store in glass jar. May be refrigerated for longer life.
Makes 2 quarts.

You can even keep it in the Blender for the next day and just refrigerate and then reblend.
You can always add something extra. Yesterday I took a cucumber, parsley, 2 fresh peaches
and some Coconut Milk (Trader's Joe- can about 1/2). I added a little honey and then some
frozen peach to thicken. I drank one glass. It wasn't fabulous but was refreshing. Today I
threw in a Banana and it was better- made it more creamy and added a touch of sweetness. I
still have some left so in the blender and back in the refrig. Should keep fine for 1-2 days.

One of my favorite comfort dishes from childhood is corned beef hash. I just made a dish that
reminded me so much of it! I fried some onions & peppers in coconut oil, then added some
fresh corn (stripped from the cob from supper the other night), then added a drained can
each of black beans & red beans. Then I added a bit of medium salsa. I wasn't sure what I
would do with it at this point.

Here's a fave veg meal of ours that's fairly "normal" but it does have beans.....
1.) Take zucchini and cut them lengthwise into thin flat strips (I usually start by cutting each
zuke in half, then slicing each half until I reach the outer peel.)
2.) Brown zucchini strips in a bit of butter or olive oil in a skillet.
3.) Mash some cooked black beans with an equal amount of salsa
4.) Place the brown, crispy zucchini strips in a single layer on an oven proof plate or pie dish.
5.) Top with a thick layer of the bean/salsa mixture.
6.) Broil until slightly browned and bubbly.
7.) Sprinkle with diced avocado, sliced black olives, diced green pepper, green onions slices
and corn kernels (I like frozen corn, thawed and drained) before serving. You can garnish with
more salsa, and cheese or sour cream if doing dairy.

Another fairly "normal" but strange combination: Fruit and Veg Curry. I saute' green pepper,
onion, apple slices and carrot slices in butter until soft. Add in curry powder, a little water,
some pineapple chunks and raisins. Heat through. Serve over brown rice.

My husband and I moved in with my mom and stepdad to help take care of them, Every now
and then mom will have a smoothie with me, she said this one was good, it has frozen
bananas, red leaf lettuce, water, peaches, and chia seeds with a smattering of raw honey and
1/2 cup of almond milk. I have to say it was more refreshing than I remembered, maybe
because it's now full blown summer.

My favorite summer drink - water with raspberries and mint leaves. So refreshing! I simply
put a handle of berries and a couple leaves in the bottom of a 2 quart pitcher, fill it with
filtered water and let it sit overnight in the fridge. By morning, I've got my own half gallon of

Tried broccoli smoothie with blueberries, frozen banana, frozen strawberries and of course,
flaxseed! It tasted a little strange with the broccoli and challenged my mind to "drink" my
favorite veggie! "Adding too much broccoli will cause the smoothie to be too thick and bitter.
I found that adding banana with broccoli really helps to sweeten the taste and gives it the
right amount of creaminess. I usually add one large banana per one cup of broccoli I use.
Mangoes, peaches and berries help further mask the flavor of broccoli in green smoothies."

Great shake this morning made from: pear, gala apple, banana, oatmeal (uncooked),

making shakes with the spirutein powder, strawberries and blueberries, but like the taste of
the above combo better. The oatmeal has flax seed in it, too! It is Nature's Path Oatmeal with
Flax Seed. It does have sugar- only draw back. I might just use it a couple of times a week,
then start using regular oatmeal with stevia.

This morning’s breakfast was a Brown Rice Frittata. You take Eden Organics Brown Rice
Flakes and pour in a pan in an even layer. Then start to pour a little water around- you have

My lunch today: Seitan sautéed with onion, scallion, garlic and seasonings served with quinoa
and fried plantain. My first time trying seitan. I enjoyed the whole meal!

Chari & Telicia here's what I did: Cooked the quinoa in chicken broth according to the package
directions with a dash of black pepper and minced onion flakes. For the Seitan ( I bought it at
Whole Foods. It's the chicken flavored one) I seasoned it with black pepper, garlic powder,
turmeric, and creole seasoning. Didn't add salt due to the salt content already in it because it
comes pre-seasoned. In a pan, I sauteed chopped onion, scallion, and 1 garlic clove for a few
mins, then added the seasoned seitan. Sautee that for 5-8 mins (til it becomes a golden
brown colour). I fried up the plantain in another pan...and that's it! I was a little nervous to
try the seitan because I've never been open to meat substitutes before but this was actually
pretty good. I'm hoping I can trick my youngest son into eating it ;)

1/2 cup nonfat plain Greek yogurt
1/4 cup grated Parmesan cheese

3 medium (8-ounce) zucchini, cut into thin strips (3 inches long and 3/4 inch wide, like a big
