Summary & Speaker:
Join us in Houston as we explore FSMA and HARPC proposed rule http://www.ideafoodsafety.com. Food
manufacturing, packing and holding companies have to comply with the FDA’s Hazard Analysis Risk Based Preventive
Controls program as mentioned in the Food Safety Modernization Act (FSMA). Part of HARPC comprises of the
familiar Hazard Analysis while the other part requires companies to place Preventative Controls at points other than
at critical control points and critical limits. HARPC is a written food safety plan similar to HACCP and consists of
Hazard Analysis, Preventative Controls, Monitoring, Corrective Actions, Verification and Record Keeping.
Presentation on “Implementing HARPC” will be the second talk in the FSMA-HARPC series. It will provide an insight
into the proposed rule and brief description of differences between HARPC and HACCP. The presentation will provide
some guidance on the approach a company can take to implement HARPC.

BIO for April’s Speaker:
Dr. Amit Morey has a Ph.D. from Auburn University in Poultry Science with focus on poultry product
safety/microbiology. He has a M.S. in Seafood Science from University of Alaska Fairbanks where he conducted
research on microbial lipid chemistry and seafood spoilage. He has another M.S. from University of Agricultural
Sciences Bangalore in Industrial Fishery technology. He has significant applied research experience in various
areas of food science. He is passionate about Science and strives to bridge the gap between science and its
real-world applications. He is also passionate about Auburn football!
After working as a Principal Scientist at a company in San Antonio, Dr. Morey is now the Founder/President of
I.D.E.A Food Industry Consultants, which is dedicated to “Serving the Food Industry Through Science”. The
company provides expertise on various aspects of food safety, shelf-life, quality assurance, and auditing.
