Four taught Captain Fit in a recent health program. Cindy Blair, Judy Vaughn, Kathryn Sparks and Amy Chapman each presented sessions to students at Highlands Elementary. Physical activity, heart health, nutrition, strong bones, and the digestive system were all parts of the program. Cindy, Judy and Kathryn are all retired teachers from Highlands, still giving to the children to create better health! Good Job ladies! Congratulations Gwenda Adkins! Sharon received a state award for her role in community development which includes such efforts as Holiday Happenings and the Mini-Grant Program. Funding has been provided through that for quilt block murals throughout the county, not to mention signs, flower beds, community cleanups, and other projects to assist tourism efforts in putting Johnson County’s best foot forward for visitors as well as ourselves. Hats off to two great leaders! 2. Quilting Quilting is a highly valued tradition in Kentucky and many parts of the nation. Almost everyone has at least one hand made quilt tucked away in their closet or storage chest. Quilts have so much to tell when you dig a little deeper, particularly the older ones– those made from scraps of old clothing, clothing that loved ones wore, favorite fabrics, your Sunday best, or perhaps the only thing left from a worn out favorite garment. The story doesn’t stop there of course; the patterns and shapes go on to tell of times gone by, of warm thoughts of family, or just nature at it’s best, (the Flower Garden, Oak Leaf, …) , each design with their multitude of colors, warm the heart, and cheers us along the way. The quilt block mural below was modeled after a quilt made by Ernestine Vanhoose’s mother. Ernestine served as the Johnson County Extension Office secretary for 42 years! This pattern was popular for the past 100 years, changing names and shapes from time to time. In the 30’s it was known as “Colonial Lady”, locally referred to as Sun Bonnet Sue and other names. This quilt block will be hung at the Extension Office in honor of Ernestine, which is a small token of the wonderful talent and dedication she brought to the organization. Landscaping will be supported by Extension Homemakers and the Extension Office as well. “Thank You Ernestine for all you have done! We truly have appreciated it!” To learn how to quilt see the “Johnson County Piecemakers”, and to learn how to paint quilt block murals get on the OSCAR mailing list. 3. FCCLA Scholarships! Johnson County Extension Homemakers and the Family and Consumer Sciences Program at Johnson Central team up to present six student scholarships for (Family, Career, Community Leaders of America) FCCLA students. Homemakers raised $800 to give toward the cause. Bees– the quiet workers that bring life and success to the garden... Brian Jeffiers assists state specialist Phil Craft, State Apiarist with Kentucky Dept. of Agriculture. The program was called “Inside Your Hive” held at Mike Jude’s farm. A bee keeping exhibit is being planned for Mountain Home Place for the public to be able to observe. For more information on this and other Agricultural topics contact the office. Appalachian Community Theatre Performed Willie Wonka And will again be producing the play at Heritage Days. Heritage Days at Mountain Home Place Mark your calendars for September 2, 3 and 4th, don’t miss it! The Kentucky Academy in Ghana is our International project. We are also working with a group to learn textile design seen above. These pieces were created using a batik technique. Johnson County Extension Homemakers will be developing the green and pink piece through a “challenge” to all those interested in participating. You will receive a fat quarter -piece of fabric and from that piece you can make anything you want. We will have an exhibit of these items by International Day. Boyd County Homemakers have begun developing the blue piece of fabric. All original designs will be shared with our affiliates in Ghana so that they can make and produce them to help create additional income. Mountain Home Place Quilt Show Featuring some of the area’s best quilters… Johnson County Piecemakers meet at the Johnson County Extension Office once or more per month. The next meeting will be August 9th from 2-9 p.m. The group provides quilting classes, fellowship, and one- on- one mentoring; feel free to join the fun! Johnson County Extension Council Discusses Farmers’ Market As the council begins planning a new four year plan of work, upcoming programs were reviewed. The group 9. celebrated Ernestine Vanhoose for 42 years of service to the University of Kentucky Johnson County Extension Service. The upcoming Farm and Home Field Day and Farmers’ Market were also some of the other topics discussed. Note: Some Farm and Field Day Activities and Demonstrations are tentative and subject to change. 13. “Plate It Up” Recipes These new recipes were developed by UK students enrolled in Human Environmental Sciences Food Science and Nutrition courses. Agents, students, faculty, in cooperation with the Ky. Department of Agriculture’s “Kentucky Proud” program We have produced “Plate it Up”, a marvelous resource for Extension FCS Agents use. Color recipe cards are available and you’ll hear much more about this as we develop seasonal recipes featuring Kentucky fresh produce. Green Beans with Feta Cheese and Dill 2 pounds fresh green beans, trimmed 1/4 cup low fat Italian dressing 1/4 cup traditional Feta cheese 1/4 cup chopped red onion 1/4 cup chopped fresh dill 1/4 cup almonds 1 teaspoon lemon juice Steam green beans in a small amount of water for 5 minutes or until tender Rinse with cold water. Drain. Place the cooked green beans in a large bowl and add the remaining ingredients. Toss to coat Serve immediately or chill to serve later Yield: 10, 1 cup servings Nutritional Analysis: 100 calories, 4 g fat, 170 mg sodium, 10 carbohydrates, 3 g protein, 3 g fiber Fresh Corn Salad 5 ears of fresh corn 1/2 cup diced red onion 3 tablespoons cider vinegar 3 tablespoons olive oil 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 cup chopped basil Shuck and remove silks from corn. In a large pot of boiling water, cook the corn for 4 minutes. Drain. Cool by immersing in ice water. When corn has cooled, cut the kernels off the cob Toss the kernels in a large bowl with the red onion. Combine vinegar, olive oil, salt, and pepper. Pour over corn and gently toss. Chill to allow flavors to blend. Just before serving, add fresh basil Yield: 10, 1/2 cup servings Nutritional Analysis: 70 calories, 5 g fat, 101 mg sodium, 10 g carbohydrate, 2 g protein, 1 g fiber (If you are 60 and over and on a limited income you may be eligible for Farmers’ Market Senior Vouchers to purchase fresh produce from the Farmers’ Mkt.
