Place the frozen strawberries and 1 tablespoon of
the honey in a food processor or blender and whizz
until small pieces are formed. Place a couple of
teaspoons of the mixture into the base of each
mould and press firmly (if you think the lollies may
stick you can line the moulds with cling film first).
Using a teaspoon, fill the moulds almost to the top
with ice cream and again press down well to push
out any air pockets. Push a wooden stick into each
and place in the freezer whilst you prepare the biscuit
crumb. Clean the processor or blender and add the
biscuits along with the remaining honey. Whizz until
fine crumbs are formed. Press the crumbs into the
moulds using the back of a teaspoon. Return the lollies
to the freezer for at least an hour or until required.
