• The industry is bored with ubiquitous designs
• Simply investing in hygiene factors doesn’t
grow sales sustainably in any material sense
• Don’t focus on counters, focus on customer
areas – historically its been the other way
round - the caterer does the counters and the
client allocated a small sum to the FF&E…
• Build in flexibility to change and adapt
