Method
For the timbales Peel and grate the parsnip and carrot
on the large-hole side of the grater, then quickly fry in hot
oil in a wide heavy-based pan. After about 1 minute, pour
in approximately 100ml of water, and then add the split
vanilla bean. Cover and cook until the liquid has reduced
and the vegetables are tender. Turn off heat. Add the olive
oil, butter, lemon juice, salt and crushed cashews. Taste and
adjust quantities, if necessary (the mix should be moist but
with no excess liquid). Line 4 timbales with cling film and
divide the mix between them, pressing down. Reserve the
vanilla bean for garnish.
For the accompaniment
Heat the oil and sauté the
bacon until lightly coloured, add the garlic and cook for
a further 30 seconds. Remove bacon and add the halved
brussels sprouts to the pan. Sauté for about 1 minute, until
coloured, then add a splash of water and a pinch of salt.
Cover and steam for 1 minute. Pour off excess liquid and
return bacon and garlic to the pan. Add a splash of olive oil
and toss through. To serve Turn the timbales out onto a plate and remove the
cling film. Arrange the brussels sprouts around the base and
top with a slither of vanilla bean, a drizzle of oil and a grind
of black pepper.
Perfect with a traditional Christmas roast.

Fishy business
Spiced Moroccan Fish Paul Le Noury has been giving cooking demonstrations at the Market for
12 years, and is the chef behind Yum Catering and Fish Dish on Little Bourke
Street. His Moroccan spice recipe below can also be used for making
beautiful tagines and burgers, marinating meat and roasting vegetables.
Use this recipe as a guide and adjust as desired. Fresh mint, coriander,
parsley and spring onions all make beautiful accompaniments.
Serves 4

Method
To make the Moroccan spice Dry-fry spices over medium heat until lightly browned,
then grind using a coffee grinder or mortar and pestle. Store in an airtight container
(it keeps for up to 1 month).
To prepare the fish Sprinkle a little of the Moroccan spice over the fish and rest
for 30 minutes. Heat the oil in a pan over medium heat and fry both sides of the fish
until cooked and white all the way through. Sprinkle with salt to finish.
To serve Top the fish with slices of preserved lemon and serve with the yoghurt,
almonds, mint leaves and pomegranate seeds in separate little bowls spread across
the table. That way guests build their own dish with the garnishes on the side.
A couscous salad made with lots of fresh vegetables and herbs is also a lovely
accompaniment.

Our Story
My father landed in Australia from Italy in 1940 and opened Tomato City when
he was 19. Our stall has been in in the same position for 66 years now. My father
is 86 and still works with me four days a week!
Our Christmas
We have about 59 dishes on the table for lunch at Christmas, then we have dessert
in the afternoon (a special cake and puddings). We have roast pork belly, roast beef,
or sometimes we roast a ham. Last year we did roast turkey breast.
We always do our family’s stuffed capsicums and battered cauliflower, and I also
cook Aussie prawns—I do them in garlic, or with hot chilli—and everyone has a feast!
John’s Stuffed Capsicums
I give this recipe to customers who have tried it and
they reckon it’s beautiful. It’s not hard to make either.
Simply make a breadcrumb mix with parsley,
garlic, anchovies, crushed walnuts and sultanas.
Cut the tops off the capsicums and deseed, then
stuff with the breadcrumb mixture. Put the tops back
on and bake the capsicums in the oven, or shallow-fry
them in hot olive oil.

Our Story
My dad started out as a fruiterer at the Market in the early 1960s, and opened our
current stall when Sunday trading first started in 1979. He also part-owned the
second or third pizza shop ever in Melbourne on the corner of Victoria and Peel
Streets (now Josie’s Take Away) in the late-1960s.
Our Christmas
Our Christmas is all about family. But running a very close second to family is food!
After I spend the morning opening Christmas presents with my wife and three
daughters, we all go to mum and dad’s for a very long lunch. There is always plenty
of wine, beer and homemade Limoncello (made by my brother-in-law), as well as
the obligatory espresso coffees.

Antipasto: Typical Italian cured meats, cheeses,
olives, and anything else you want!
Seafood Antipasto: Freshly shucked Tassie oysters,
cooked Aussie prawns, raw mussels dipped in red
wine vinegar, baked open mussels (delish!), and raw
squid pieces marinated in olive oil, lemon juice, salt and

SB: “Making sure you leave room for the food!
A lot of people go a bit overboard with all the lovely
decorations, but you’ve got to leave space for the
gorgeous Christmas feast. Christmas is such a special
time—you might as well go all out with some lovely
cutlery, beautiful glassware and pretty plates!”

SB: “Bear in mind what you’re cooking because you
don’t want to spend a lot of time and energy setting up
a beautiful spread only to have it clash with the food.
Dinnerware in solid, bright colours—like yellows and
reds—can really overwhelm simple, classic dishes like a
roast and vegies—they work better for salads or sides.
“Keep centrepieces low so you can still have
a conversation, and there is just something so
wonderful about a white tablecloth and crisp, white
linen napkins—it doesn’t matter if it has a few stains
and spills at the end of the day”

I sell upcycled clocks, made from bits of road
signs and everyday objects. My clocks are
functional and one of a kind.
There is a nostalgia associated with the stuff
I put the clocks on, like the old tobacco tins your
grandfather might have had, teapots or vinyl
records. It’s recycling but there is something familiar
about it too.
My mother had a really old little sewing tin and I made that into
a clock for her, and now it’s hanging in the kitchen. I’m happy to work
with you to customise something special—creative clocks make great
Christmas presents.

Sweet Soy candles
We show people how to make soy candles, soap, lip balm, body
butters and healing creams. Our main business is teaching and selling
supplies but you can purchase some ready-made candles and we do
custom orders. A regular-sized candle with 50 hours burning time is
around $20 (instead of $30 or $40 in the shops). Soy candles are cheap
to make and by giving classes I hope to make it more affordable for
everyone to burn candles that not only smell nicer, but are also healthier
for them and better for the environment.
The soaps, candles, incense, body butters and healing creams
have 100 different scents to choose from, with five possible lip balm
flavours—chocolate, cherry bomb, vanilla bean, apple blast and
a super fruity one called ‘monkey’s fart’.

Simon: I specialise in custom artworks, lighting, furniture, lamps,
stools and Greg does a lot of fine art work, fine laid veneer and that
sort of thing.
We do a lot of commercial work (we did the fit-out for the Padre
Coffee’s stall here in String Bean Alley), but the Market is more about
being a bit more creative. We personally design and make all of our
wares, create custom artworks and feature walls, and we do handpainted murals.
Greg: Our pieces come in all shapes and sizes and we can custommake things to suit your price range and needs. If you have an idea
for something (for yourself or someone else) come and talk to us
and we’ll put your spin on one of our designs.

The Beware the Rhino campaign aims
to reduce the number of people being
struck by trams. The distinctive yellow
and black messages on trams and at
stops remind pedestrians to ‘beware’
around trams at all times, even if they
aren’t intending to catch one.
With the increasing popularity of MP3
players, smartphones and all the other

many pedestrians and cyclists are
putting themselves in danger.
