A grocer at Garden Organics (Stalls 74-75, I Shed), Stephen traces his love of food back to his childhood in the English countryside, where his family lived off the land. Parsnip and Carrot Timbales with Brussels Sprouts and Bacon serves 4 Ingredients Parsnip and Carrot Timbales ✽✽ 3 medium parsnips (Garden Organics; see above) ✽✽ 1 large carrot (Garden Organics; see above) ✽✽ 100ml water ✽✽ 3cm piece vanilla bean, split (Green Valley Spices; Stalls 36-40, B Shed) ✽✽ 2 tbsp olive oil (Dianne’s Delights; Shop 43-46, Dairy Hall) The Accompaniment ✽✽ 300g good bacon, cut in pieces (lardons) (Vic Meat Supply; Shop 18, Meat Hall) ✽✽ 2 cloves garlic, sliced (Garden Organics; see above) ✽✽ 100g butter (Tina’s Gourmet Deli; Shop 33-35, Dairy Hall) ✽✽ 1/3 bunch spring onion, finely sliced diagonally (Garden Organics; see above) ✽✽ lemon juice (Garden Organics; see above) ✽✽ salt (Tina’s Gourmet Deli; see above) ✽✽ 250g crushed cashews (Nut Trek; Shop 55-56, Dairy Hall) ✽✽ 400g brussels sprouts, cleaned, stem split, then halved (Garden Organics; see above) ✽✽ salt (see above) ✽✽ olive oil (see above) Method For the timbales Peel and grate the parsnip and carrot on the large-hole side of the grater, then quickly fry in hot oil in a wide heavy-based pan. After about 1 minute, pour in approximately 100ml of water, and then add the split vanilla bean. Cover and cook until the liquid has reduced and the vegetables are tender. Turn off heat. Add the olive oil, butter, lemon juice, salt and crushed cashews. Taste and adjust quantities, if necessary (the mix should be moist but with no excess liquid). Line 4 timbales with cling film and divide the mix between them, pressing down. Reserve the vanilla bean for garnish. For the accompaniment Heat the oil and sauté the bacon until lightly coloured, add the garlic and cook for a further 30 seconds. Remove bacon and add the halved brussels sprouts to the pan. Sauté for about 1 minute, until coloured, then add a splash of water and a pinch of salt. Cover and steam for 1 minute. Pour off excess liquid and return bacon and garlic to the pan. Add a splash of olive oil and toss through. To serve Turn the timbales out onto a plate and remove the cling film. Arrange the brussels sprouts around the base and top with a slither of vanilla bean, a drizzle of oil and a grind of black pepper. Perfect with a traditional Christmas roast. 4 qvm.com.au Fishy business Spiced Moroccan Fish Paul Le Noury has been giving cooking demonstrations at the Market for 12 years, and is the chef behind Yum Catering and Fish Dish on Little Bourke Street. The life of the Queen Victoria Market marketlife JOHN AND his parents PINO AND his dad Petito Christmas through the Generations Two Market families share their Christmas traditions. John Pontelandolfo Pino Perillo Tomato City (Stall 7, H Shed) Pino’s Kitchenware (Stalls 3-4 and 57-58, A Shed) Our Story My father landed in Australia from Italy in 1940 and opened Tomato City when he was 19. Our stall has been in in the same position for 66 years now. My father is 86 and still works with me four days a week! Our Christmas We have about 59 dishes on the table for lunch at Christmas, then we have dessert in the afternoon (a special cake and puddings). We have roast pork belly, roast beef, or sometimes we roast a ham. Last year we did roast turkey breast. We always do our family’s stuffed capsicums and battered cauliflower, and I also cook Aussie prawns—I do them in garlic, or with hot chilli—and everyone has a feast! John’s Stuffed Capsicums I give this recipe to customers who have tried it and they reckon it’s beautiful. It’s not hard to make either. Simply make a breadcrumb mix with parsley, garlic, anchovies, crushed walnuts and sultanas. Cut the tops off the capsicums and deseed, then stuff with the breadcrumb mixture. Put the tops back on and bake the capsicums in the oven, or shallow-fry them in hot olive oil. Electrolux Cooking School celebrates its 15th year! Keshav, one of Melbourne’s most enduring Indian chefs, demonstrates authentic dishes with local seafood from the Market at Seafood With Indian Aromatics on Sunday 2 Our Story My dad started out as a fruiterer at the Market in the early 1960s, and opened our current stall when Sunday trading first started in 1979. He also part-owned the second or third pizza shop ever in Melbourne on the corner of Victoria and Peel Streets (now Josie’s Take Away) in the late-1960s. Our Christmas Our Christmas is all about family. But running a very close second to family is food! After I spend the morning opening Christmas presents with my wife and three daughters, we all go to mum and dad’s for a very long lunch. There is always plenty of wine, beer and homemade Limoncello (made by my brother-in-law), as well as the obligatory espresso coffees. Dinnerware in solid, bright colours—like yellows and reds—can really overwhelm simple, classic dishes like a roast and vegies—they work better for salads or sides. “Keep centrepieces low so you can still have a conversation, and there is just something so wonderful about a white tablecloth and crisp, white linen napkins—it doesn’t matter if it has a few stains and spills at the end of the day” Market shopping tip: For beautiful table spreads visit Anton’s Table Linen (call Market for location) and Cassa Nova Kitchenware (Shop 2, F Shed). I sell upcycled clocks, made from bits of road signs and everyday objects. My clocks are functional and one of a kind. There is a nostalgia associated with the stuff I put the clocks on, like the old tobacco tins your grandfather might have had, teapots or vinyl records. It’s recycling but there is something familiar about it too. My mother had a really old little sewing tin and I made that into a clock for her, and now it’s hanging in the kitchen. I’m happy to work with you to customise something special—creative clocks make great Christmas presents. Kylie Wilson from Live in Spirit Sweet Soy candles We show people how to make soy candles, soap, lip balm, body butters and healing creams. Our main business is teaching and selling supplies but you can purchase some ready-made candles and we do custom orders. A regular-sized candle with 50 hours burning time is around $20 (instead of $30 or $40 in the shops). Soy candles are cheap to make and by giving classes I hope to make it more affordable for everyone to burn candles that not only smell nicer, but are also healthier for them and better for the environment. The soaps, candles, incense, body butters and healing creams have 100 different scents to choose from, with five possible lip balm flavours—chocolate, cherry bomb, vanilla bean, apple blast and a super fruity one called ‘monkey’s fart’. Simon Cunningham and Greg Burton from Meykers creative interiors Simon: I specialise in custom artworks, lighting, furniture, lamps, stools and Greg does a lot of fine art work, fine laid veneer and that sort of thing. We do a lot of commercial work (we did the fit-out for the Padre Coffee’s stall here in String Bean Alley), but the Market is more about being a bit more creative. We personally design and make all of our wares, create custom artworks and feature walls, and we do handpainted murals. Greg: Our pieces come in all shapes and sizes and we can custommake things to suit your price range and needs. If you have an idea for something (for yourself or someone else) come and talk to us and we’ll put your spin on one of our designs. String Bean Alley is open Friday, Saturday and Sunday, and during the Suzuki Night Market. qvm.com.au 11 marketlife The life of the Queen Victoria Market 27 SHOPS 9 26 ME QUEEN ST Market Insider 20 3 Cassa Nova Kitchenware 15 Market Juice 29 Sonja and Aaron 4 Clockeyed 16 Market Organics 30 Suga 5 Dianne’s Delights 17 Market Sports 31 Swords 18 Melbourne City 32 19 Meykers 8 Green Valley Spices 20Nautical Replicas 34 21 NGO Greetings 35 Tina’s Deli 22 Nut Trek 36 23 Original Fit 38 Vinnie’s PELHAM 39 Woods ST Aussie Deli ST PI ST IE ST COBDEN KE QUEEN ST G DE ELIZ L ETH AB HP BLIG ST ST E G D BR I G E QUEENS BRIDGE AN RO KP MEN AD SO &L E KA 8 RE EUDECK Y SK NK A HB T B UTH UT SO HA W TB RS N EN OWINM X CR TA PLE R TE OM EN C EY D RD ST PEEL ST CHETWYN ST DRYBUR GH BO TS FO AB WA Y A MY R LA EEN T DS ST WESTERN BOUVER LE QU N BO F YO RSIT OGY IVE OL UNECHN T ALL ANA SO EEN QU IDGE BR UARE SQ IDGE K) LINK RD (CITYLIN PA L S AU EC TH SG CA AB UIT Moonie Pon ds Cr eek VID SDA LL PRE EQ E NE A O E GP URN LBO MA A ST RIDG I LA NT PLA CH E PO CE R A RE LLS SA CO TU NT L R P Y CE TER EY DA DEPA S TAT NE OW H UR JO TO PL ID NA AV ED S D ME LA NE DA LA JO ION E UN IAN AY ON CK CAD EW BLO& AR PL JO ER IAM AN TM BA ARK P LED CA MY OL GP ME L RE WA T RD INC HA PREC LA INS N LA NK TO RA UR RB WA PL L WIL NE UR N LBO TIO ME NVEN RE CO CENT CE RLD WOADEE TR NTR CE NK TRE BA ERY EN E RN OU M LB IU ME UAR AQ KINGS BRIDGE EC QV RE NT CE A A A AL C AN CH A L RIZ RP K TE EN PEAR 12 N SPE ST LIC PO RIA IA TO R VIC ICTOICE V OL M P SEU MU L RY VID DA RL IVE DR R GA NIA W ST LA ST ST E EW ST NE N ATIO IGR UM IMMMUSE ER NC S OS SPE CR BOL TE B N STO DR ETH AB L IE P LD GO RN T SS R DE A A NN IA ST RG O GE S DER FLIN O NT SIO ERS MISAFAR SE ER HIC G OT DIN Z G UIL AN NK B BA BAN OR GE LA VIL BR MY RIA LLE G GAOPPINZA SH PLA T HIS DD CITY RE NT CE 11 OF S TRYEATH S GIS RE HS, DIAGE T R BIR MAR & FLIN R AU AY IW N TA EN AN SW ELIZ AL T ES LAY HE 360 NE UR O LBO IALT ME AT R T SS LIN L CO 2 T SS SSIC LA XC R FO CACTION LLE CO E LA EW DR RS IDE SN RS LLE T VE TAC TRACONPOINT IS NC FRA NO LK H E IAN NG AL HA STR EXC AU OCK E ST NTR CE ST 'S AN TM BA HILL LIN L CO AN NG N KA TMA BA AFE T HNO. 8 BERT R ED A W DS A NO. 9 BE RT LLE ID 'S A SH W KLAN DOC ARK P L ER COLLINS F U T U RE R VE TRA S LA OD RA GO RO AY AU ILW ST RA GE LA VIL IE RV E AT W ST PHE ION DR RA GEOG AT NAVIG RIA TO VIC REEN G LA ST KE UR BO GE RID B IAN UT E T LA OR IMP AR AF SE ST NT HA RC ME SA AY FEW A CC BE RE E TH B HU BU The Slattery Media Group, 1 Albert St, Richmond Vic 3121 Tel: (03) 9627 2600 N Fax: (03) 9627 2650 TIO MA RIA OR TO INF VIC www.slatterymedia.com SO AD LAN IC BOU R ST HA KE UR BO ST NT F RD HA RC HAR ME D TH W TE ES RK U BO NR ER S T NOR XT ST 4 RIA TO VIC OINT P R AV KL UC BB HU D AN LE LORIM H TIO RA YAR R EDGA'S E G r H RT PO 14 BE RT Rive VIC L ER NO. SP STof Elizabeth and Victoria EN What would you do if you saw a herd of 30 rhinos racing down the street on skateboards? Naturally you would take notice and move out of the way. Yarra Trams is encouraging pedestrians to pay the same respect to trams—which weigh about as much as that rampaging herd of rhinos. The Beware the Rhino campaign aims to reduce the number of people being struck by trams. The distinctive yellow and black messages on trams and at stops remind pedestrians to ‘beware’ around trams at all times, even if they aren’t intending to catch one. With the increasing popularity of MP3 players, smartphones and all the other gadgets that are part of modern life, many pedestrians and cyclists are putting themselves in danger. ‘Spike’ the Rhino is a visible, memorable reminder to “pause the tunes, not your senses” and to be alert around trams.
