LO C A L LY GROWN PA R T N E R S H I P THAI MARINATED PORK RACK RIBS WITH TORN CILANTRO COOPFOOD.CA THAI MARINATED PORK RACK RIBS WITH TORN CILANTRO 4 limes juiced, approximately 6 tbsp. of juice 2 tbsp. lemon grass, grated 2 tbsp. ground ginger 1 tbsp. garlic, minced 1/2 bunch cilantro, roughly torn 4 tbsp. brown sugar 3 tbsp. fish sauce 4 tbsp. soy sauce 2 -3 pork rib racks In a medium mixing bowl, combine all ingredients except for the ribs. Whisk thoroughly to combine. Marinate the ribs in the mixture for a minimum of four hours or preferably overnight. Remove ribs from marinade and shake off any excess. Bake in a 320⁰F oven for 1 - 1.5 hours or until an internal temperature of 71⁰C (160⁰F) is reached. Alternately, you can grill them over high heat for 10 minutes on each side for a different, but equally delicious, option. Finish the ribs with a sprinkling of fresh cilantro.
