Bourbon:
The Federal Standards of Identity for Distilled Spirits (27 C.F.R. 5) state that
bourbon made for U.S. consumption must be:
Produced in the United States made from a grain mixture that is at least 51% corn; aged in new, charred-oak
barrels; distilled to no more than 160 (U.S.) proof (80% alcohol by volume); entered into the barrel for aging
at no more than 125 proof (62.5% alcohol by volume); and be bottled (like other Whiskeys) at 80 proof or
more (40% alcohol by volume).
Bourbon has no minimum specified duration for its aging period. Products aged for as little as three months
are sold as bourbon. The exception is straight bourbon, which has a minimum aging requirement of two years.
In addition, any straight bourbon aged less than 4 years must state the age of the spirit on the bottle.
Bourbon that meets the above requirements, has been aged for a minimum of two years, and does not have
added coloring, flavoring, or other spirits may (but is not required to) be called straight bourbon.
Bourbon that is labeled as straight that has been aged under four years must be labeled with the duration of
its aging.
Bourbon that has an age stated on its label must be labeled with the age of the youngest Whiskey in the
bottle (not counting the age of any added neutral grain spirits in a bourbon that is labeled as blended, as
neutral-grain spirits are not considered Whiskey under the regulations and are not required to be aged at all).
Bourbon that is labeled blended (or as ‘a blend’) may contain added coloring, flavoring, and other spirits
(such as un-aged neutral grain spirits); but at least 51% of the product must be straight bourbon.
Canadian Whisky:
Canadian Whisky is a type of Whisky produced in Canada. Most Canadian whiskies are blended
multi-grain liquors containing a large percentage of corn spirits, and are typically lighter and smoother than
other Whisky styles. Several hundred years ago, when Canadian distillers began adding small amounts of
highly-flavorful rye grain to their mashes people began demanding this new rye-flavored Whisky, referring
to it simply as “rye.” Today, as for the past two centuries the terms “rye Whisky” and “Canadian Whisky” are
used interchangeably in Canada and refer to exactly the same product.
Historically, in Canada, Whisky that had some rye grain added to the mash bill to give it more flavour
came to be called “rye”. Although some Canadian whiskies are still labelled as “rye”, Canadian “rye”
Whisky usually contains high-proof grain Whisky blended with lower-proof rye-grain Whisky and Canadianmade “bourbon-style” corn Whisky as flavouring. Occasionally barley Whisky is also used for flavouring.
Flavour may also derived in other ways, such as flavour development from the aging process.It is a common
misconception that Canadian whiskies are primarily made using just rye grain. The use of rye grain is not
dictated by law, and the primary grain used to make most Canadian Whisky is corn.

What is Scotch?
Scotch Whisky, which is generally just referred to as Scotch, is Whisky made in Scotland.
Scotch Whisky is divided into five different categories:
Single Malt Scotch Whisky
Scotch Whisky produced from only water and malted barley at a single distillery by batch distillation in pot
stills.
Single Grain Scotch Whisky
Scotch Whisky distilled at a single distillery but, in addition to water and malted barley, may involve whole
grains of other malted or unmalted cereals. “Single Grain” does not mean that only a single type of grain was
used to produce the Whisky—rather, the adjective “single” refers only to the use of a single distillery (and
making a “Single Grain” requires using a mixture of grains, as barley is a type of grain and some malted
barley must be used in all Scotch Whisky). Blended Malt Scotch Whisky (formerly called “vatted malt” or “pure malt”)
A blend of two or more Single Malt Scotch Whiskies from different distilleries.
Blended Grain Scotch Whisky
A blend of two or more Single Grain Scotch Whiskies from different distilleries.
Blended Scotch Whisky
A blend of one or more Single Malt Scotch Whiskies with one or more Single Grain Scotch Whiskies. All
Scotch Whisky must be aged in oak barrels for at least three years. Any age statement written on a
bottle of Scotch Whisky, in the form of a number, must reflect the age of the youngest Whisky used
to produce that product. A Whisky with an age statement is known as guaranteed age Whisky.
Irish Whiskey
Irish Whiskey must be distilled and aged on the island of Ireland. The product must be aged for at least three
years in wooden casks. If the spirits comprise a blend of two or more such distillates, the product is referred
to as a “blended” Irish Whiskey.
Styles of Irish Whiskey:
Single Malt Irish Whiskey is made from 100% malted barley by a single distillery in a pot still.
Grain Whiskey is particularly light in style. Made from corn or wheat, grain Whiskey is produced in
column stills.
Blended Whiskey constitutes 90% all Irish Whiskey production. Jameson and Kilbeggan are famous
blended Irish whiskies.

2 Gingers - Irish Whiskey ABV 40% - 2 Gingers Whiskey is faithfully distilled at the famed Kilbeggan Distillery

start, with a tingle of honey and citrus. The woody essence of this four-year aged blend suggest caramel and vanilla

The Big Ginger- Fill a Collins glass with ice. Next, measure 2 parts 2 Gingers Irish Whiskey. Place in the glass and top with

Connemara - Irish Whiskey ABV 40% - Connemara’s smooth sweet taste and complex peat flavours make it a truly

Revelstoke - Canadian Whisky ABV 40% - A primo 3-year Whisky and a mature 8-year come together to create a blended
Canadian that’s unlike anything else on the shelf. Named after Revelstoke, the mountain resort town in British Columbia, Revel
Stoke Spiced Whisky is actually distilled in the next province over: Alberta. It is distilled from Canadian prairie wheat and rye,
and after ageing, it is infused with spices and natural flavours. On the nose these evoke essences of vanilla, camphor, and
cherry. Very sweet like a liqueur but not as unctuous or syrupy. Quite cherried with some zippy bitter citric zest, and spicy hot
pepper. A veritable spice box. Revel Stoke’s blender has taken great care to ensure none of the flavourings overpower and

Pendleton 1910 Rye - Canadian Whisky ABV 40% - Light gold in color, it’s clear that this Whisky has been partially aged
in more neutral oak. Canadian Whisky can have as little as 40% rye content and be called rye, but Hood River has indicated
that this Whisky is 100% Canadian Rye. The nose on the 1910 is light and slightly sweet with light vanilla and butterscotch
backed by light oak and a subtle tobacco note. The entry is easy and lightly sweet with a honey vanilla note at the front that
morphs into a nice butterscotch note. Things get spicy in the midpalate with oak, black pepper, and tobacco notes jumping
into the mix. The 1910 has a medium finish with light spice and some sweetness that quickly dries out and leaves your mouth

High West - Rye Whiskey ABV 46% - Marriage of two straight rye whiskies that combines the feisty properties of a high
rye 2-year-old and the saddle smooth richness of a 16-year-old. The 2-year-old has a 95% rye 5% barley malt mashbill. The
older rye has a “barely legal” rye mashbill of 53% rye and 37% corn. The extra age and corn provides some extra sweetness

Cody Road - Bourbon Whiskey ABV 40% - This bourbon is made form a mash of 70% corn from LeClaire, 20%
wheat and 10% unmalted barley from Reynolds, IL. It is aged for one year in newly charred 30 gallon oak barrels,
about half the size of a traditional Whiskey barrels. Cody Road Bourbon is a flavor and aroma experience unlike
any other. Enjoy sweetness of corn, light fruit from wheat and a grassy, nutty finish from the unmalted barley.
Vanilla and caramel from the oak dance around the sweet grain. Bottled at 90 proof, this bourbon has enough

Enjoyed on its own, with a dash of still or sparkling water, or with soda or ginger ale as a long drink. Or make an Old
Fashioned. Ingredients: 1.5oz of Johnny Walker Black Label, 2 dashes of bitters, 1 sugar cube, lemon twist and orange twist.
Combine Whisky, bitters and sugar cube in a rocks glass and stir. Garnish with the lemon and orange twists.
Marker’s Mark - Bourbon Whisky ABV 40% - More than 50 years ago, Kentucky distiller Bill Samuels, Sr., founder of
Maker’s Mark, set out to make a better tasting bourbon Whisky. What he discovered was that if you used winter wheat in
the mash instead of the traditional distiller’s rye, your bourbon Whisky was smoother and less bitter...and that’s made all
the difference. Made in batches of less than 1,000 gallons (around 19 barrels at a time). On the nose, Maker’s Mark offer
up warm aromas of rich soft caramels, a touch of Missouri oak and vanilla bundt cake. Hints of honey and just a touch of
frutiness are detectable as well. Perhaps apple pie? And there is just the slightest hint of cedar shingle hidden below. Creme
brulee dominates, with huge caramel and vanilla notes on the forefront before giving way to soft notes of burnt sugar and
molasses at the end. On the finish, Maker’s offers more warm notes of fresh baked molasses cookies, apple pie spice,
vanilla and caramel. The finish is a bit of a tease, ending quicker than you’d like but tempting you with the smorgasbord of

After Midnight in Kentucky: Ingredients: 2 parts Maker’s Mark Bourbon, 2-3 blackberries, 1/2 part Razzmatazz liqeuer, 2
parts ginger ale. Muddle 2-3 blackberries in an old fashioned glass with the Razzmatazz liqeueur. Add bourbon and ginger
and stir gently. Top off with ice.
Woodford Reserve - Bourbon Whiskey ABV 45.2% - Woodford Reserve Bourbon controls all five sources of bourbon
flavor to create a craft bourbon. The water is drawn from deep limestone water which means the water is low in iron
and very clean. The grain bill contains 18% rye which gives it a spicy and unique flavor. The fermenters are made from
cyprus wood and were built small to keep batch sizes small. The mash is distilled in three copper pot stills which makes
Woodford Reserve the only bourbon to be made with this method. It is then matured in barrels made at the Woodford
cooperage and stored in a climate controlled facility. This makes Woodford Reserve a must try for any bourbon drinker.

Classic Manhattan- Ingredients: 2oz Woodford Reserve Bourbon, 1oz Sweet Vermouth, 2 dashes Angostura bitters, 1 orange
twist. Fill mixing glass or shaker with ice and add ingredients. Shake or stir based on preference. Strain into a cocktail
glass. Garnish with the orange twist.
