Because, in India both the taste and cost matters a lot. May be that’s why a bunch of young city-based food entrepreneurs have started this popular food trend – the Food Truck – right here in the nation’s capital, Delhi. If you have ever gone abroad, you would know these Food Trucks by now, because they are pretty popular in those Western countries. Even, in our own place, we daily see a lot of food-makers pushing a food-cart on four wheels, to the roadside and start serving hot and spicy junk food. Of course, we eat their daily too. This food truck concept is similar, but with a broader scope for healthy food and wide area of service. These have the whole kitchen, storage and dining equipment in one single truck that travels to the customers. Gaurav Gianchandani, says, “There’s a difference between Chinese food vans and a specialty food truck serving hygienic and quality fast food.” These food trucks also won’t charge much for the food, as our roadside-foodlovers won’t be paying high-end prices. But what we can expect from them is the tasty,hygiene and quality food at affordable rates. Where can you find them ? As you know, these are trucks. Mobile Restaurants. They don’t stay at a place, but can be tracked within an area. Social network is the best place to find their menus and calendars. Vikrant Misra, founder of Eggjactly, a truck which serves Belgian pancakes and cinnamon crepes, says, “People find our locations through tweets and Facebook Pages. For the unknown reason, these Food Trucks are not properly treated at our courts. There are yet no clear rules and regulations pertaining to the business. Pallavi Kuchroo, co-founder Frugurpop, a dessert truck, says, “We have all the mandatory FSSAI licenses but in the absence of clear laws, we have to park the truck at corporate houses or parks after ‘greasing’ the authorities palms.” “As this thing is totally new to India, it’s pretty difficult to explain the concept to the local police and authorities. Even though we have all the required permissions, they don’t know what is required to check for this kind of business. And in Delhi, it’s much more strict. We are now thinking of forming Food Truck Associations to deal with the government.” Says Karan Malik from Super Sucker. How can we start one ? If you want to find one, it would be easier ! As told above, nothing is yet clear how to start this business without any legal problems. Even though the profit rates and flexibility itch us to start our own food truck, it’s better to wait until the governments decide something on it. But for now, these are the basic and common arrangements to be made to start your own Food Truck with a catchy name. A commercial vehicle license from the RTO. Food Business Operating License (FSSAI License)from FSSAI (Food Safety & Standards Authority of India). You would require individual licenses from FSSAI for the Delivery Boys/Vehicle. A shop and establishment license (this varies across states). Separately, depending on the commercial construct (e.g. partnership), relevant paperwork from Ministry of Corporate Affairs. Eating house license : This is provided by Licensing Police Commissioner of that city. Clearance from Fire Department. You have to ensure the compliance of all the fire safety guidelines. Every business, along with those success stories, also have failure stories too. That is how a business world works. One such example of this Food Truck business failure is Awestruck. With declining profits and increasing regulatory issues, Awestruck opened an Italian restaurant in Gurgaon last month.
