by hand. Using authentic Swiss recipes
and skills passed down through the
generations, the staff at L.A. Burdick
Chocolate continues these traditions
at their home facility in Walpole,
NH. From bean to bonbon, attention
to detail is present every step of the
way. Each bonbon is hand-garnished,
hand-finished and hand-packed. The
Burdick chocolate mice go through 12
separate hand-worked steps before ever
being received by a customer. While
Burdick's craftsmanship is a far more
labor-intensive process than that of
conventional, molded, “machine-made”
chocolates, to us it is a labor of love. It is
the attention to detail that sets Burdick’s
above the rest in terms of quality:

Grenada cocoa trees grow in their natural, optimal state scattered amidst the fruitand nut-bearing trees of the tropical forest. Grenada cocoa is an exemplary flavor in
L.A. Burdick bonbon assortments.
The island has thousands of independent farmers with intimate knowledge of the
cocoa production process.
L.A. Burdick has partnered with the Grenada cocoa farmers to build a chocolate
factory in the northwest of the island. This partnership benefits the farmers by
helping to take more beans out of the commodity market and into value-added
products. By making cocoa farming more profitable, our partnership fosters the next
generation’s interest in farming and helps to protect a unique and distinct ecosystem.
L.A. Burdick in Grenada
Many of Burdick’s bonbons, drinks, bars and
pastries contain chocolate made from Grenada
cocoa beans. Grenada cocoa grows in an intact
tropical ecosystem, surrounded by fruit, spice
trees, herbs, bushes and flowers. These things
along with the island’s ideal overall climate and
unique volcanic soil create cocoa beans of unusual
quality. When turned into chocolate, it is hard
to overstate the effect of the ecosystem on the
chocolate flavor (terroir). The flavors of these
chocolates are deep, complex, long lasting and
taste of everything that is going on around
the cocoa trees.

In winemaking, there’s a concept
called “terroir,” which refers to a
region, like Bordeaux or Burgundy,
with a special set of soil and weather
conditions that gives its wine a
distinct flavor and personality.
Chocolate making is no different.
L.A. Burdick Chocolate presents
the best chocolate flavors from
the best cocoa growing regions in
the world.
HOT CHOCOL ATE
Something to keep in mind: the
higher the cocoa content of the
chocolate, the lower the sugar
content. But higher cocoa content
does not necessarily mean higher
quality or better flavor. In a
chocolate made from inferior beans,
higher cocoa content means more of
something inferior.
Likewise, to a certain degree the
discussion on criollo content can be
misleading. I have tasted chocolates
made from beans higher in criollo
content that were mediocre and
some without any criollo content
that were the most complex and
interesting I have ever tasted.

is often too simplistic. Many things
added together decide what the
quality of the chocolate will be:
terroir, harvesting, fermenting,
drying, storage, roasting, how it
is ground, how it is mixed and

Classic Hot Chocolate
ingredients:
6-8 Tb of shaved chocolate
¾ to 1 cup milk
blend of Caribbean and South
American shaved chocolate with a
68 to 75% cocoa content. Its flavor
and richness is reminiscent of the
intense, polished drinking chocolate
experienced in European cafés. It will
take the chill out of any winter day.
For a simple yet luxurious cup
of hot chocolate, whisk scalding
milk into shaved chocolate in
your favorite mug.

fishing community Marquis St. Andrews,
Grenada hand-weaves these baskets; the
cocoa bar boxes are hand-woven from sea

We are happy to offer this healthy,
