ROASTED
BUTTER CHICKEN
INGREDIENTS
1 Roasting Chicken (2-3 lbs.)
1 Lemon, quartered
2 TBSP Butter (1/4 stick)
Kosher Salt
Black Pepper
1 TSP Minced Thyme
Approximate cook time is 90 minutes.
Grill this recipe over high-heat until
internal temperature reaches a minimum
of 165°F.
DIRECTIONS
• Preheat your grill on the highest setting.
• Remove the chicken giblets. Rinse the
chicken inside and out. Remove any excess
fat and pat the outside dry.
• Stuff the cavity with lemon quarters.
• Place grate inside Flavor
Chamber and spray all
interior surfaces with a
no-stick cooking oil.
• Place chicken atop the grate inside the
Flavor Chamber and brush with melted
butter. Salt and pepper to taste.
• When done, move chicken to cutting
board, sprinkle with thyme, and let it rest
for 10-15 minutes before slicing.
Always use oven mitts or gloves when handling a hot Flavor Chamber.
STEAMED
LEMON BROCCOLI
INGREDIENTS
1 lb. Broccoli (2 med-large florets)
1 Cup Water
¼ Stick of Butter
1 Garlic Clove, minced
1 lemon
Salt and Pepper
Approximate cook time is 15-20 minutes
total .
Prepare this recipe outdoors on the grill
over high heat and use the sideburner to
prepare the roasted garlic.
DIRECTIONS
• Mix water and the juice from ½ lemon in a
measuring cup.
• Place broccoli florets inside
the basket and the Flavor
Chamber over high heat.
• Pour lemon juice and water
mixture over the broccoli
florets.
• Cover with lid and steam until broccoli is
bright green and tender, 10-15 minutes.
• While broccoli is steaming, melt butter in
a small saucepan and pan-fry garlic until
roasted brown.
• Remove broccoli from the Flavor Chamber
and pour butter and garlic mixture over
broccoli, tossing to coat all pieces.
• Squeeze the juice from the remaining
lemon half over the broccoli while tossing
• Salt and pepper to taste.

SMOKED
APPLE SALMON
INGREDIENTS
2-3 Salmon Fillets
½ Cup Mayonnaise
¼ Cup Dijon Mustard
1 TSP Dried Dill
1 Apple Simple Smoke™
DIRECTIONS
• Preheat grill on the highest setting.
• In a bowl, stir together mayonnaise and
mustard.
• Prepare Apple Simple Smoke as directed.
• Place grate inside Flavor
Chamber over the wood
chips and spray all interior
surfaces with a
no-stick cooking oil.
• Place salmon on grate, spread mixture onto
fillets and sprinkle with dill weed before
moving to the grill.
Approximate cook time is 45 minutes.
Cook this recipe outdoors on the grill over
high heat until the salmon is easily flaked
with a fork.
Always use oven mitts or gloves when handling a hot Flavor Chamber.

• Place a Simple Smoke into 1/2 cup of water.
After a couple of minutes, drain any excess
water and sprinkle wood chips into the
bottom of the flavor chamber. Over highheat, cover with lid until the wood chips are
smoking as desired. Once smoking, you can
reduce temperature if desired.
