From the Executive Director
Welcome to summer! We are excited to celebrate some fun events in
June. Father’s Day is the 21st which coincidently also happens to be
the longest day of the year, the summer solstice. After four months,
we are really starting to find our groove! We have had some changes
and every time we do, it takes a little adjustment for everything to
settle down. We promoted Rusty to Health and Wellness Director and
she is really getting into the swing of things.
If you ever have any questions or concerns, please know that I am
always available to speak with you, as are all of the department
managers. Believe me when I say we are not perfect, but we all have
our hearts in the right place and that is to take care of your loved one.
When most of you moved in, I welcomed you to our family. If you
think about it, we spend more awake hours with this family than we do
with our home family.
I am excited to welcome you to the first “Inspiring Block Party” of the
year. We are going to have a party in June for all of our families, both
our work family and our home family! Check the calendar for the date
and time. We would like to invite you all to attend the party and bring
your family too! The plan is to have a quarterly party to celebrate with
the family we created by joining the Inspired Living Palm Bay family!
June 21 ~ The Longest Day ~ Kickoff to End Alzheimer’s Disease
Join us in the fight to end Alzheimer’s Disease. We have events planned in the next few months to raise awareness
and money for the cause. If you’re interested in volunteering at any of our events, please let us know. The more help
the better! The two events this month are the Courtyard Walk to End Alzheimer’s (that our residents are going to help

Programming Update

Time flies when we’re having
fun…and fun we have, that’s for
sure. May flew by and we enjoyed
the many programs scheduled.
However, many times the most
enjoyable times are when we can
sit down and visit with our
residents and maybe break out in a
sing-a-long, or an unscheduled
bingo game or movie.
We have a very fun-loving group
and although we want to have
planned programs, we also want to
be flexible enough to do what will
garner the most interest.
As the weather gets even warmer,
we want to make sure that our
residents are hydrated, so we’ll be
encouraging them to drink, drink,
drink water!
We love sitting out in our courtyard,
but also realize the importance of
not getting sunburned or
overheated. In June, we’ll be
reading about some of those
important issues in our reading
group.
We’ll also be making personal
pizzas in our cooking group and
ramping up our garden club. Yes,
our raised flower beds need some
serious hydration too!
Rex and Lura Holland have a
beautiful bird feeder in the
courtyard, so we’re waiting on the
cardinals to make a visit.
Our newly hatched butterflies will
be set free in our butterfly garden
soon. What an awesome and
exciting experience that was.

Ugly Salsa

A Taste of
Living
Ingredients:
Recipe Story:
1 firm avocado, seeded, peeled
This is a recipe that I have been
making for years! I make this and
regular salsa whenever I can. Before
I went back to work I would make
salsa and dinner every Thursday and
invite my family and friends to the
house to eat. I would wear my big
Mexican sombrero and serve
everyone who came to my house. It
got to a point where I had about 22
people coming on a regular basis. It
was at that point my sister-in-law
made me a jar for tips! I was going
broke feeding everyone, but I would
rather be poor in money, but rich in
family and love!
and chopped
1 medium tomato, chopped
3 green onions, sliced
1 small can (4 oz.) of chopped
black olives
1 small can (4 oz.) of chopped
green chilies
1 bunch of green onions chopped
fine
1 small can of Italian dressing, use
the can from the green chilies to
measure
Directions:
Combine all ingredients and mix
well. If it is too wet, add more
avocado or tomato until the
consistency is right.
Refrigerate for a couple hours or
overnight.
Serve with tortilla chips.
This is just a guide for the
ingredients because I never really
measure anything!

Mango Salsa Recipe
Ingredients
1 mango, peeled and diced
1/2 cup peeled, diced cucumber
1 tablespoon finely chopped
jalapeno
1/3 cup diced red onion
1 tablespoon lime juice
1/3 cup roughly chopped
cilantro leaves
Salt and pepper
Directions
Combine the mango, cucumber,
jalapeno, red onion, lime juice
and cilantro leaves and mix
well. Season with salt and
pepper, to taste.

Resident
Name: Elaine Casteel (Peppy)
Born: May 28, 1936
Passions: Embroidery, sewing,
painting, cats, & helping others.
Elaine was born in Erie, PA to Joseph
and Emma Peplinski (hence the
nickname Peppy)
Her dad worked on the railroad and her
mom was a housewife. Elaine had two
siblings. Her younger sister, Lorna, is
now deceased. Her brother, John, lives
here in Palm Bay.
She attended Penn State, and then
joined the U.S. Air Force, where she
met her husband at the bar at the
Officers Club. She retired as a Lt.
Colonel, after serving 20 years. Her
husband, Dan, also retired as a Lt.
Colonel.
Elaine is very thankful for her Air Force
career, as she was able to travel
throughout the world. She’s visited
China, Japan, Korea, England, Ireland,
South America, Mexico, & Thailand.
Her favorite place was Thailand.
After retirement, she and her husband
purchased a 500 acre ranch in Texas.
Those were her happiest times. They
didn’t fill their ranch with livestock but
rather enjoyed the nature in it’s purest
state. She described a lovely river that
ran through their property. They
enjoyed taking walks and just
appreciating nature.
Elaine enjoyed volunteer work in
Texas. She was instrumental with
helping the fire department raise money
for a new fire truck.
She served on many committees. Elaine
enjoys country and classical music and
loves to square dance.
When I asked Elaine if she had any
regrets, she replied “I have done a lot in
my life and I had the most wonderful
husband anyone could have. I lived on
a beautiful ranch in Texas and enjoyed
every minute of it. I have not one
regret.”
We’ve found Elaine to be friendly,
compassionate and so comforting to
many of our residents. She’s always
ready for a good time and first to offer a
helping hand.

Associate Spotlight: Lucinda Mora

We’re proud to announce that
Lucinda Mora, program coordinator
and concierge, has earned Associate
Spotlight of the month.
and a daughter, Reina. Both live here
in the area. Her favorite color is purple
and she sings all types of music, like a
bird. She’s very talented.
Lucinda joined our team when we
opened at the end of January. And
we’re so lucky that she’s a part of our
team.
Lucinda told me that this is the first
job that she’s truly loved. She loves the
residents, their families and her coworkers.
Lucinda was born in Seville, Spain
and was raised in Texas, as well as
Iceland (3 yrs) & England(7 yrs).
It’s a pleasure having her on our team.
We all benefit from her compassion,
dedication, patience and knowledge,
and we love her little giggle too! 
She has two children, a son, Angel ,
LUCINDA, YOU INSPIRE US!

Put your passion to work to fight Alzheimer’s disease.
The Longest Day is a team event to raise money and awareness for the
Alzheimer's Association. Held annually on the summer solstice, this
sunrise-to-sunset event symbolizes the challenging journey of those living
with the disease and their caregivers.
On the Longest Day, you choose your activity in the fight against
Alzheimer's. Your team will work together honoring the strength, heart
and endurance of those facing this devastating disease.
Step 1: Grab Your Friends! Grab your friends, family and co-workers and
form a team. Register online at www.alz.org. You will be surprised how
many people have been affected by Alzheimer's and want to join the fight.
Step 2: Put Your Passion to Good Work! On The Longest Day, select an
activity you love — or honor a caregiver, or someone living with or lost to
the disease, by selecting his or her favorite hobby. You're limited only by
your imagination.
Step 3: Raise Money and Move the Cause Forward! Every team is asked
to register and raise a minimum of $1,600 to further the care, support and
research efforts of the Alzheimer's Association. The Alzheimer’s
Association will help with coaching, tools and advice!
Step 4: Plan Your Day! From sunrise to sunset, The Longest Day
stretches 16 hours. Divide the day into segments and ask teammates to
cover a portion. Stay in touch with texts, tweets and Facebook posts.
Step 5: Celebrate at Sunset! Gather your team — whether in person or
virtually — and celebrate while recognizing the strength of those facing
Alzheimer's.

Look what fun we had this
month at Inspired Living!
Some of the fun programs we had this month included
celebration of Cinco de Mayo, with the piñata poking as the
highlight! Our residents did such a great job decorating
flower vases for Mother’s Day centerpieces that when
Emma, from Emma’s Flowers, came for a flower arranging
class, they looked like they belonged in a floral shop!
We made banana fritters in our cooking club and also
celebrated National Dance like a Chicken Day! We ended
the month with a picnic on the river, a Memorial Day
picnic, our monthly birthday party, art class and a pizza
party for lunch! And of course our Butterfly Habitat was a
huge success.
