Greetings,
I don’t know about you, but I am
happy for a change to warm, sunny
weather. There is nothing I love more
than seeing the flowers in bloom and
the sweet smell of Spring. Now is a
great time to get outside and get
moving!! Our area has several State
Parks close by, so I encourage you to go
exploring. One of my favorite things to
do is pack a picnic lunch and go
hiking. Hope to see you out on the
trails!

OPENS for the season!!!
CES. This month we are making T-Shirt scarves.
Every Thursday 5:00-8:00p.m.
This class takes ordinary household items and
repurposes them. Participants will need to bring a at Knox County Extension Office
large T-shirt in order to participate.
Come enjoy the fresh produce and company of
our wonderful Knox County farmers.

Summer Activities for Kids
Are you worried that your kids will spend too much time on their phones or in front of the television
this summer when school lets out? If so, plan some activities that allow your kids to take an athome adventure while challenging their minds. Some ideas suggested by teachers from EducationWorld.com include:


Research recipes from different countries or periods in history and cook with kids
Make home-made or glow-in-the-dark bubbles and experiment with different bubble blowing
tools
 Go on hikes and learn more about your neighborhood or area
 Make musical instruments from items around your house and record a song
 Learn more about fireflies and then go catch some for observation
 Start a collection of rocks or sand from a recent vacation
 Plan a family day with events and activities
 Throw a themed party
 Tour college campuses either in person or virtually
 Visit a local museum
 Redecorate a room without spending money
 Volunteer in the community

Look at all the FUN we are having at
the Knox County Extension Office!!
During April’s Make It Monday! class Matti Daniels, Whitley Co FCS Agent, taught arm knitting to eager participants.
On March 18, members of the Redbud Trail Quilt Guild
went on a day trip to Pigeon Forge, TN for the 21st Annual
Smokey Mountain Quiltfest. A good time was had by all as
we fellowship with one another during lunch at The Old
Mill and admired beautiful quilts at the quilt show.
April’s Lunch& Learn recipe of Crunchy Fruit and
Chicken Salad.
Danielle Barrett, FCS Agent, manning the
Knox County Extension booth at the Redbud
Festival at Union College. We had a great
couple days celebrating our Appalachian
heritage and culture.
Only a few of the quilts Town & County Homemakers and Redbud Trail Quilt Guild made this month to take to the
KEHA State Meeting in May for the Center for Courageous Kids. GREAT JOB, Ladies!!! Your hard work and dedication
shows how much can be accomplished when you work as a team!

FCS Summer Program Calendar
We have some exciting programs coming up this summer!
Read the descriptions and plan accordingly.
***DO NOT FORGET TO REGISTER FOR CLASSES!!***
Appalachian Book Club meets weekly to discuss an Appalachia-themed book in a coffee shop inspired setting… coffee and snacks will be provided! Our first book is A Parchment of leaves by Silas House. Participants
are can purchase his/her own book or request a copy be bought for him/her then pay for the book at the first
meeting. Ebooks or library books are also okay to use.
Beginners Cake Decorating is a two-classes program that will teach basic cake decorating techniques. No
prior cake decorating experience required. All needed supplies will be provided.
Beginners Sewing is a four-classes program that will teach basic sewing techniques. No prior sewing experience required. Participants are encouraged to bring his/her own sewing machine. A limited number of sewing machines are available at the office for use. All other needed supplies will be provided.
Couponing Basics will cover everything you need to know about how to be successful at couponing.
Food Preservation Boot Camp covers the basics of food preservation. Participants will learn about pressure canning, boiling-water canning, freezing, and dehydrating. This same class is offered twice, participants
will only need to attend one of the classes. Participants will need to register and pay a $10 registration fee by
July 6th to participant.
Green Cleaning: Recipes for a Healthy Home will teach participants to make homemade cleaners to
use around the home. Participants can make up to three cleaners. Participants are required to bring plastic
spray bottles for cleaners all other supplies will be provided.
Knox County Farmers Market is located in Knox County Extension’s parking lot. Come out and support
our local farmers. Cooking demonstrations and samples by Danielle Barrett, Knox County FCS Agent will be
provided the first and third Thursdays of the month.
Lunch & Learn Offers a cooking demonstration and nutrition lesson from either the Kentucky Nutrition
Education Program calendar or Plate It Up! Kentucky Proud recipes.
Make It Monday! takes ordinary household items and repurposes/recycles them. Repurposing is a great
way to keep things out of the dump and to give your home a little décor boost. These projects are relatively
easy, take little time and best of all, they allow you to completely repurpose that trash into something useful.
Marble Jewelry takes glass marbles and makes beautiful jewelry pieces. Participants must bring either a
neckless chain or bracelet. All other needed supplies will be provided.
Mind/Body Connection introduces safe, simple meditation techniques, deep breathing methods, and
basic standing and seated stretching exercises. This program will introduce you to physical activities and flexibility exercises and you will learn how to release stress and tension when needed.
Pinterest Pals meets monthly to discuss a lesson from Small Steps to Health and Wealth and completes a
Pinterest-inspired activity.

Day Trips
June 26th: Sterns, KY
Cost: Adult $36.25 Senior (60+) $34.75
Ride the Kentucky & Tennessee Railway on a three hour, 14 mile round-trip into the Daniel Boone
National Forest and Big South Fork National River & Recreation Area. The trip is full of spectacular
scenic vistas, lush vegetation, and mountain streams as it descends 600 feet into the gorge before
stopping at the Blue Heron Coal Mining Camp, a National Park Service outdoor interpretive site.
Your ticket also includes admission to the McCreary County Museum in Stearns. Lunch consists of
1/2 ham & 1/2 turkey sandwich, coleslaw, applesauce, dessert & drink packed in an insulated souvenir lunch bag and available for pick up at Whistle Stop Cafe to take with you on the train and enjoy
during the layover at Blue Heron Mining Camp.
Must register and pay by June 5th in order to purchase tickets in time.
