Spinach & Brie Crepes with Sweet Honey Sauce
Whole Wheat Crepes
Filling
• 2 large eggs
• 2 tablespoons olive oil
• 1/4 cup parmesan cheese
• 3/4 cup milk
• 2 cloves garlic, minced
• 1/2 cup whole wheat pastry flour
• 1/4 teaspoon salt
• 8 ounces of St.Andres Brie, sliced
• 1/2 cup all-purpose flour
• 1/2 teaspoon crushed red pepper
• 1/4 cup olive oil
• 1 jar marinated artichoke hearts, drained/chopped
• 1/4 cup fresh parsley, chopped
• 3 tablespoons butter
• 1/4 teaspoons salt
• 1/2 cup water
Sweet Honey Sauce
• 1/2 teaspoon pepper
• 3 tablespoons honey
• 1 bag fresh spinach

Instructions Makes 8-10 Crepes

• Crepes Add butter to a small saucepan and heat on medium • Sweet Honey Sauce Whisk together olive oil and honey. heat. Whisk for 5-6 minutes, then remove from heat and set aside.
• Combine all remaining ingredients in a blender. Add the browned butter and pulse for 30 seconds to combine. Place the crepe batter in the refrigerator for 30 minutes.
•
Heat a 12'' non-stick pan. Add butter to coat. Pour 1/3 cup of batter into the center of the pan and spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove from heat. Lay them out flat to cool. Makes about 10 crepes.
• Filling Heat a large skillet oven medium heat and add in 1 tablespoon olive oil and garlic. Add salt, pepper and crushed
red pepper, cook for 2 minutes.
• Stir in spinach and artichokes, cook 5-6 minutes. Reduce heat to low and stir in the parmesan, turn off heat. Remove from skillet.
Place in a small pot and warm through. Keep warm until ready to use.
• Assemby Wipe the skillet clean and heat over medium-low heat. Working with one crepe at time lay it flat in the skillet. Lay a few slices of brie on one quarter of the crepe. Layer on the spinach and artichoke filling and then top with more brie. Fold over the bottom of the crepe and then fold it over again to make a triangle.Cook for 2 minutes, flip and cook another 2 minutes. Repeat with remaing crepes until the brie and filling are gone.
• To Serve Remove the honey sauce from the heat and stir in the chopped parsley. Drizzle the crepe with the warm honey sauce and dig in!

Crumble Veggie Bake
Ingredients
For the casserole:
• 8 cups of cooked vegetables (steamed carrots, broccoli,
cabbage, potatoes, yams, onions, cauliflower, or any
combination thereof).
• 2 cups cooked beans (Chickpeas, lentils, split peas, black
beans etc.)
• 4 cups of Miso Gravy
Make it
1. Combine the veggies, beans and miso gravy in a large
mixing bowl.
2. Fold this mixture all together, making sure all the
vegetables are coated. Place into a 9x13” casserole dish.

For the topping:
• 4 tbsp butter or melted coconut oil
• 1 cup whole wheat flour
• 1 cup rolled oats
• 1/2 tsp salt
• ½ cup pumpkin seeds
• pinch cayenne
3. Mix the topping ingredients together, using your hands.
4. Sprinkle topping evenly over the veggies and bake at
350°F covered for about 20 minutes, remove cover and
bake 15’ more or until bubbly.
