We're expanding the hours at the snack bar and the kitchen this summer: starting June 1st, increased snack bar hours mean you’ll be able to enjoy food and drinks at the pool 7 days a week. We now have a very extensive menu including our new pizza oven, and even grab and go items at the snack bar! Please, we kindly ask you not to bring your own food or order for delivery to the club during regular kitchen and snack bar hours. Enjoy the summer months at the club and stay safe! Paul V. You'll need roughly 2 1/2 cups cooked quinoa. As it cooks, gather and cut up your summer vegetables. Ingredients: Olive oil 1 onion, diced 3-4 cloves garlic, chopped 1 yellow summer squash, sliced A fistful of slender asparagus or green beans, trimmed, sliced 1 Japanese eggplant (small eggplants are less bitter), peeled, sliced into bite size pieces 1 bell pepper- red, yellow, orange or green, cored, sliced 2 cups Baby Bella mushrooms, trimmed, sliced A handful of grape or cherry tomatoes, halved Sea salt and ground pepper Herbs, to taste- parsley, basil, thyme, red pepper flakes- whatever you prefer 1 tablespoon balsamic vinegar Extra virgin olive oil, to taste Instructions: When the quinoa is almost done, heat a splash of light olive oil in a wok or large skillet over medium heat. Add the onion, stir until translucent. Add the garlic and cook for a minute. Add the remaining vegetables. Season with sea salt, pepper, and herbs. Add the balsamic vinegar. Stir-fry until tender. Scoop the cooked quinoa out of the rice cooker and add it into the wok. Stir to combine with the vegetables. Taste test and add more salt or seasoning if it needs it. Remove from heat. Drizzle with extra virgin olive oil and toss to fluff. Serve immediately; or allow it to cool, then cover and refrigerate it to eat as a salad. before serving it cold, taste test again and adjust seasonings. Serves 4. Join us! On the Court... The Women's A and B Singles Finals The Women's A and B Singles Finals have been completed! Both Women's finals pitted the #1 and #2 seeds against one another. In the A final, #1, Gabi Hayes, played #2, Alita Guillen. This had the makings of a good final with two great athletes squaring off against one another. In the first set, Guillen competed strongly but, Hayes would not be denied her 9th MTC Women's Singles title, as she showed that she was the one to beat, running away with a 6-3 6-0 victory. In the Women's B Final, #1,Susie Shoop, played #2, Heidi Segal. Both ladies were playing their first ever MTC Singles Tournament. Shoop quickly showed why she was the top seed with her swift use of her strong forehand and court speed, to prevent Segal from getting her teeth into the match. Shoop prevailed 6-2 6-2. Well played finalists and congratulations to the winners!
