POSITION AVAILABLE:
Head Chef / Kitchen Manager
Year Round, Full Time Employment at Park Place Lodge
This position is responsible for leading the overall kitchen operation for the hotel. You will be expected to
ensure that the finest quality and value of food products are available and presented to guests in all areas of the
hotel including Max Restaurant, The Pub Bar & Grill as well as hotel banquet/meeting facilities.
DUTIES













Reports to Hotel Operations Manager & Executive Director
Work with minimal supervision, and able to supervise & direct up to 15 staff members
Directing the development & training of new staff
Available weekdays, weekends, holidays and cover other shifts as needed
Available to work 40-50 hours a week as needed
Work in high pressure situation while maintaining a cool level-headed demeanor
Follow & implement the instructions of Hotel Operations Manager
Work with Pub Manager, Food & Beverage Manager, & Hotel Operations Manager in organizing
promotions, special events, and holiday menu’s
Ordering, inventory, scheduling, and receiving of goods & supplies
Organizing, implementing and producing daily & weekly appetizer, entrée, and dessert specials
Food costing, menu engineering, recipe & yield testing
Knowledge of all Menu’s & ability to fill in on any station
Prepare and cook using the following methods; steak grilling, poultry & seafood cooking, pastas, entrée
size salads, soup & sauce, small banquet preparation & execution, baking experience (cheesecakes,
torts, berry sauces, pies, chocolate work, etc.) steak cutting & small butchering , hors d'oeuvres,
vegetable preparation & cooking.

JOB REQUIREMENTS, SKILLS & EXPERIENCE










Red Seal Certification or equivalent Cook Trade Certification
Minimum 8 years kitchen experience in a high volume full service restaurant
Minimum 2-3 years in similar kitchen management or supervisory role
Food Safe Certificate Lv. 1 or equivalent Certification
Have basic knowledge of common food allergies and dietary needs (celiac, gluten free, shellfish
allergies, lactose, etc.)
Follow and implement kitchen cleaning schedules, temperature charts, “HACCP” records, and general
knowledge of “WHIMIS”
Responsible for maintaining and updating hotel Food Safety & Sanitation Plan
Inspect kitchen and food service areas, clean kitchen and work areas.
Able to inspect supplies upon delivery, and follow general “FIFO” guidelines
Monthly and yearly inventory as well as relative food cost tracking
