Mango pickle is spicy food item that people prepare mostly in summers. So usually it is prepared by using unripens mangoes and raw mangoes. Many of the varieties can be made using the dried mangoes like Bellam Avakaya, Nuvvu Avakaya, Allam vakaya, Palli Avakaya, Pesara Avakaya, Mukkala pachadi and Maagaya. People from Andhra called this mango pickle as “Avakaya”. It will be good and clean instead of buying the mango pickle from outside shop. Most of the people great combination is mango pickle with curd rice in the burning (hot) season. Generally these pickles are prepared with extreme care as they preserve it for all the year. Intake of raw mango has many advantages. They are helpful in producing the amount of needed component like vitamins and minerals. Some of the raw mangoes are full with the vitamin C and keeps away from digestion problems and helps in curing scurvy. Are pickles good for health? As this is a storage pickle can be eaten with rice and roti. It takes less time for the making and no south Indian meal is complete without the mango pickle. Ingredients required for Mango Pickle Recipe: Raw Mangoes-1kg Oil-250gm Salt-1 small cup Red chilli powder-2 cups Mustard seeds powder-1 small cup Raw Garlic-25gms Life of the pickle-1 year Mango Pickle Recipe Preparation Process: 1. Firstly make sure of washing the raw mangoes and wipe them with the clean cloth. 2. Take a pan, heat the oil and keep aside. 3. Cut the raw mangoes into medium size pieces. 4. Take a big size bowl and add mangoes, red chilli powder, salt, peeled garlic and mustard powder. 5. Mix all the ingredients thoroughly so that everything is mixed well. 6. Add the cooled oil to the mixture. 7. Once again stir it properly so that all get mixes well. 8. Take a dry jar, put all the mixture in it and cover the jar with the lid. Allow it to store for 3 days. 9. On fourth day check whether the oil gets floated in the jar. If the oil is not floated then add required amount of oil. 10. Taste the pickle and add salt if necessary. If all the ingredients are exact then there is no need of adding anything. After one week your yummy and spicy mango pickle is ready. You can enjoy it with the hot rice and ghee.
