Hiya, I’m Mel Hurst, aka SugarMama. I call beautiful New Zealand home. I am also a proud mum to
my son Aaryan Luke – 6 years old & my baby girl Maayan Zen – 2 years old. I have been happily married to
my best friend and soul mate – Avi, for the last 20 years. We are originally from India, though I am AngloIndian (my grandparents were British); we moved to New Zealand in 2000. I have been a flight Attendant
for most of my employed years and just closed that chapter in 2012 after my daughter was born. I am also
the CEO of my Company Mel’s Gourmet Foods – we manufacture gourmet Indian Curry Sauces for delis
and supermarkets in New Zealand & overseas. www.mels.co.nz
Art, Craft, Cakes & Sugarcraft has always been my passion and yes, if you come to my home, all the
paintings are done by me! I did a basic course in cake decorating 15 years ago, but moving to a new country
and trying to start life from scratch was a challenge, and hobbies were put aside momentarily! I enjoyed
making cakes for my kids but in 2012, I got really sick after my daughter’s birth and hit a real low with my
health. I felt like I had lost my ‘mojo’ for creativity. The turning point was when I was asked to do a 3 tier
wedding cake for a friend. I surprised myself and ignited the spark of creativity again. I played around and
made a website and called it ‘Sugar & Spice Cakes! The rest is history!
Today I run my spice brand Mel’s and Sugar and Spice Cakes from a HACCP approved kitchen in
Auckland and work with an awesome and talented team of friends.

Tools & Materials Required ~
Pink Fondant
Ivory/White Fondant
Edible Glue with brush
Fondant Rolling Pin
Square Cutter – 4cm
Round Cutter – 5½ cm
Round Cutter – 2½ cm
Oval Cutter - 2cm
Tear drop Cutter - 2cm
Flower Plunger – Medium
Corn Flour for dusting
Silver Cachous
Making the base ~
Dust your board with a little Corn Flour.
Roll out the White Icing to about 3mm
thick. Cut out a circle with the 5½ cm
round cutter.
This will be the base for your Tutu to sit
on. It will also be the base that will sit
on top of the frosting on your cupcake.
Making the Top of the Tutu ~
Dust your board with a little Corn Flour.
Roll out the Pink Icing to about 8mm
thick. Cut out a square with the 4cm
square cutter.
This will be the top of your Tutu.

Making the Top of the Tutu ~
Cut out a square. It should be quite thick
to give a good shape to the upper body.
Then using the other cutters as shown in
the picture, cut out the shapes to form
the upper body of the Tutu. Use the
small circle cutter to cut out the arm
holes, use the oval cutter to cut out the
neck line and shape the top of the tutu
with the square cutter by cutting a little
bit to form a waist.
Making the Top of the Tutu ~
Now you will be left with the upper part
of the Ballet Tutu.
Ideally this should be allowed to dry for
about 15-20minutes so that it will be
firm enough to stand up by itself.
If needed, some Tylose powder may be
added to the fondant at the start to make
it more rigid.
Attaching the Top to the Base ~
Make a small ball with Pink fondant.
This will be the stand for the top of the
Tutu.

Shape the ball into a slight conical
shape – almost like a rounded pyramid.
Attaching the Top to the Base ~
Spread some edible glue on the base
disc.
Attach the pink pyramid to the disc.
Press gently to stick.
Attaching the Top to the Base ~
Press down gently around the edges,
while still keeping the conical shape.
Attaching the Top to the Base ~
With the ball tool or similar, make a dip
in the top of the pyramid – it should be
wide enough for the top of the Tutu
leotard to sit in.

Attaching the Top to the Base ~
Apply some edible glue to the created
dip.
Attaching the Top to the Base ~
Sit the top of the leotard in the created
dip.
Press gently to secure.
Making the Frills for the Tutu ~
Roll out a thin layer of Pink fondant –
about 2mm thick.
Cut out many little tear drop petal
shapes.
Making the Frills for the Tutu ~
Brush the base of the Tutu with edible
glue.

Starting in the front and right at the
edge, stick on the first little tear drop
petal cut out. Continue with the other
petals around the edges, keeping them
side by side.
They should just slightly overlap the
white base.
Making the Frills for the Tutu ~
Continue all around the Tutu rim.
With the help of the ball tool, gently
curl the edges up.
This will make it look more natural and
give a sense of motion.

Once all the pieces are placed covering
the outer rim, it should look like this.

Now for the second row...
Apply a little edible glue to the tops of
the tear drop shapes.
Now we are going to place another layer
of tear drop shapes to form a second
row.

Start placing a second row of tear drop
pieces in between the petals of the row
below.
Continue all around the Tutu till the
entire second row is complete.

Remember to gently curl the petals
upwards.
Making the Frills for the Tutu ~
Remember to place the second row of
tear drop pieces in between the petals of
the row below.

Once again, brush a little edible glue on
the tops of the petals.

Making the Frills for the Tutu ~
For the third row, cut off the tips of the
tear drop petals, and stick on, going
right up to the waist.
Complete a third row of tear drop petals
in between the petals of the row below.
Continue all around the Tutu till the
entire third row is complete.

Once complete, the little Tutu should
look like this.
Remember to curl the petals upwards.
Attaching the Sash ~
Brush a little edible glue on the waist.

Roll out a thin stick of White fondant.
Attaching the Sash ~
Starting from the front, attach the sash
to the waist.
Press gently to secure.
Attaching the Sash ~
Once the sash is attached, roll out a thin
layer of white fondant and cut out a
flower with the plunger cutter.
You could even make these little
plunger flowers in advance, allow them
to dry and store them in a box for when
you need to use them.

Attaching the Sash ~
Dab on a little edible glue on the front
left side of the sash.
Attaching the Sash ~
Place the plunger flower on the sash.
Attaching the Sash ~
Dab a touch of edible glue in the flower.

Attach a little silver cachou in the centre
of the flower.
...and you are done!!!
A Variation ~
To make a slight variation, use a longer tear drop
cutter to make the frills of the tutu and attach only
two rows.
Notice in this design I have made the top part of the
tutu slightly different too. Enjoy.

Once complete, your pretty Tutu must be lightly brushed to ensure you remove any traces of excess
Corn flour. You could also dust on a shimmer dust for added effect.

~ How to make Edible Glue ~
This Glue is easy to make and dries quite hard. It may take a few hours to dry completely.
How to make Edible Glue ~
Take a small piece of white fondant in a
small Microwavable dish.
Mash or flatten the fondant a bit.
How to make Edible Glue ~
Add a couple of teaspoons of water.
How to make Edible Glue ~
Microwave the fondant and water on
high for 40 seconds.
It may start to bubble.
How to make Edible Glue ~
Remove from the microwave and mix
well.
Your edible glue is now ready to use!
You may cover and keep your glue in
the fridge for a few days. If it gets too
dry, add a teaspoon of water and
microwave again for 30-40 seconds.
