Turkey - Whole, Frozen & Fresh
Turkey Thigh Roast
If frozen, thaw for at least 48 hours in refrigerator or
until fully thawed • Remove neck and wipe inside and
out with paper towels • Fill neck and body cavities
with prepared stuffing and secure by sewing or by
skewer • Tuck wings under turkey and tie drumsticks
together with string • Rub skin lightly with melted
butter or oil, and dust with salt and pepper.
Thaw in refrigerator for at least 24 hours • Remove
plastic packaging • Do not remove foil • Not suitable
for microwave cooking.
Preheat oven to 180°C. Cover legs and wings with
foil and roast for suggested cooking time on pack.
Approx. 30 minutes before turkey is cooked remove
foil and pierce skin in several places to allow self
basting and browning.
Turkey Buffé
If frozen, thaw in sealed bag by placing in refrigerator
for 1- 2 days • Place Buffé breast side up in a roasting
dish with a little water and cover with foil.
Preheat oven to 180°C. Roast for approx. 40 minutes
per kilo. Remove foil for last 30 minutes to allow
self basting and browning.
Deboned Turkey Buffé
Turkey Half Breast with first wing joint.
Thaw in refrigerator for at least 24 hours • Place
turkey skin side up in roasting dish on a rack • After
roasting, cover turkey with foil and allow to stand
for 10 minutes before carving.
Oven Bake: Preheat oven to 180°C. Roast turkey for
2-21/2 hours until golden brown. Deboned Buffé/Half
Breast is fully cooked when meat juices run clear
when pierced with a skewer.
Turkey Carvery Roast
Thaw in refrigerator for at least 24 hours • Remove
plastic packaging • Do not remove foil • Not suitable
for microwave cooking.
Preheat oven to 180°C. Cook for approx. 50 minutes
per kilo. Remove foil and roast for the last 30
minutes of cooking time to brown.
Preheat oven to 180°C. Cook for approx. 2-21/2 hours.
Remove foil during last 10-15 minutes of cooking
time to brown.
Turkey Tenderloins
Thaw in refrigerator for at least 24 hours • Cover
with foil when oven baking.
Pan Fry: Preheat oil to medium heat and cook for
10-15 minutes turning once.
Oven Bake: Preheat oven to 180°C. Roast in lightly
oiled baking dish covered with foil for 45 minutes.
Remove foil for last 10 minutes of cooking time
to brown.

Roast Turkey with Toasted Pinenut & Rice
Stuffing, served with Glazed Balsamic Fruits
& Melon Salsa
To prepare stuffing, fry 1 large, chopped onion and
4 rashers finely chopped bacon 2-3 minutes.
Combine in a bowl with 150g toasted pinenuts, 200g
cooked short grain rice, 2 eggs, a handful of
chopped parsley and cracked black pepper. Spoon
mixture into turkey cavity and secure with string.
Bake turkey in a moderate oven, basting occasionally
with pan juices.
Glazed Balsamic Fruits
Whisk 125ml balsamic vinegar, 2 tablespoons honey
and the juice of 1 lemon together and brush over
fresh fruits - like peaches, apricots, figs and mango.
Just before turkey is ready, place fruits in baking
dish around turkey and bake for 10 minutes.
Melon Salsa
Peel, seed and finely dice 1 small honeydew melon
and 1 small watermelon. Allow to drain in a colander
1 hour. Mix in a bowl with 2 finely diced fresh red
chillies, 1 bunch chopped fresh coriander, the juice
of 2-3 limes and a good grinding of sea salt. Chill
well before serving.
