How I Got Back Control of My Diabetes

Getting Started…
“M
To be able to take control, you must understand what it is you
have to control, as well as how to.
y name is Carol Ann and I’ve been a diabetic since 1982”.
D’you know, writing that made me think of the AA not, I
hasten to add, that I’ve ever had call to attend an AA meeting ;¬) - I
don’t drink at all. But, like alcoholism, diabetes is a life-threatening
condition. And that’s not the only thing that is similar about them.
They are both ‘cured’ by taking control.
Diabetes is the resultant condition when our blood-sugars are
consistently higher than the safe range. This usually happens if we
either have a faulty pancreas - usually resultant in Type 1 Diabetes - or
we develop insulin resistance; more common in Type 2 diabetes. (You
can get more info about diabetes here).
You see although neither can really be cured, they can be
controlled. And that was the challenge facing me as a diabetic and, I
guess, is probably facing you or a loved one now. It is up to us to
understand our condition, accept it, take control and live life to the full.
It’s one of the reasons I decided to set up my diabetic website:
www.your-diabetes.com. I needed to know more and I guessed there
were probably quite a few diabetics who also wanted to know more - but
from a diabetic’s point of view, not the medical or research profession.
In this free publication I’m going to tell you how I - at last - got a
proper control of my diabetes. And I’m going to invite you to do the
same.
Discovering the Underlying Problem…
Part of that invitation will be setting your own goals of what you
want to achieve in your diabetes control. And I will be making
suggestions of some actions you can take that might help you, as they
helped me.
One of the things I discovered was the effect carbohydrate can
have on your blood sugars. And the info I discovered was contradictory.
On the one hand I found claims that low carbohydrate is the best
way to control blood-sugar levels. And, on the other, I found claims that
high carbohydrates were the best solution for diabetic control.

Which was it?
Well, actually it is both! But it all depends upon your
metabolism. (Read Type 2 Diabetic Succeeds with HIGH carb Diet).
It did explain the accepted wisdom amongst dieticians, when I
was first diagnosed, that a diabetic diet should include a high amount of
complex carbohydrates; bread, potatoes and pasta. (That’s beginning to
change now).

and I’m not (or wasn’t) controlling my diabetes and blood-sugars. And
why? Simple lack of attention and, I must admit, a certain amount of
laziness.
But that didn’t work for me - perhaps it doesn’t for you either. I
have been following my dieticians guide ever since I was first
diagnosed. It included a fair amount of complex carbohydrate foods;
whole-grain bread, baked potatoes, pasta and rice. When you read my
story of how I got control of my diabetes you’ll see this was the wrong
diet entirely for me.
My HbA1c blood readings were averaging 8.2mmol/l - it needed
to be below 7 and preferably between 5 and 6. (Blood sugar
measurements in the UK are different to those in the US. 8.2 mmol/l is
the equivalent of 146.4mg/dl).
Whichever you discover is the best control method for you, the
enclosed carbohydrate counter will help choose the right foods to eat.
So that was my goal - to reduce my blood sugars to a safer level.
How I (At Last) Got Control of My Diabetes..

How to do it? Well first I needed to understand why my average
levels were so high. You see, I didn’t snack between meals and I didn’t
eat loads of ‘taboo foods’ such as cakes, biscuits, desserts or sweets.
Plus my meals were not excessively large.
o you sometimes feel as if you’re getting absolutely nowhere? No
matter how hard you try the results don’t appear to be happening?
It’s real easy to slip into that thought pattern and yet, if we were
able to do a re-run of every minute of our day and study it, we’d see all
the little things we have achieved building into something more
substantial. But daily life gets in the way and we don’t always notice
these small triumphs.
What else could it be?
Unbelievable Reason...
Well I got a great clue to the reason for my problem when I found
out more about insulin resistance and what causes it. That was a real
eye-opener I can tell you, because I discovered what I was eating was
creating my problems. Thing is, it’s not just eating sugars, or food
containing a high level of sugars, that creates the problem. It’s the foods
that break down into sugars; carbohydrates - complex carbohydrates that we don’t tend to think of as being sugars to avoid.
One of the tricks to getting a result is to decide what you want the
result to be and then setting easy to reach steps to move you in that
direction. That’s what I did when I realized my blood-glucose levels
were consistently higher than they should be.
High Blood Sugars Were a Mystery!
I’m talking about bread, potato, pasta and rice here!
Don’t get me wrong - they weren’t high enough to put me in a
diabetic coma, but they were high enough to make me feel generally
unwell, tired and put weight on. What’s more I knew this was just a
warning of the health risks I was storing up for myself in the future.
And many other foods containing carbohydrate that breaks down
into the simple sugars that eventually create insulin resistance for us
diabetics. I’d never associated bread or potatoes with my blood sugar
levels before!
And I was already on the highest medication I could take without
going onto insulin. As a type 2 diabetic that was (and still is) my
greatest dread. Something had to be done!

But hey, how could I be sure the product was genuine; could
actually help me achieve the first step in my goals?
I did say laziness has some part in this - well that’s true. I’m not
the world’s fittest person, heck I’m not even the fittest person in my own
family! Although not quite a ‘couch-potato’ I certainly did not rush to
fit exercise into my daily habits. That needed to change, but gradually.
Well, I had a good look through the whole site. I checked:
The scientific evidence - it made sense and was pretty impressive.
Heck they were even validated by a Nobel Prize for physiology. Pretty
good credentials, eh? But I’m a ‘lay-person’ - not a medical
professional - so it would probably be quite easy to ‘pull the wool over
my eyes’! So…
So, what were my goals? (You might even identify with some of
these).
1. Reduce my insulin resistance
2. Reduce my average blood sugars
3. Reduce my weight
I checked what the medical profession had to say and then I read
all the testimonials from other users.
Now all the experts tell us we have a better chance of achieving
our goals if we are specific about what we want. It’s something to do
with our subconscious (or unconscious) taking control and moving us
towards the stated goal. So for me, saying I want to reduce blood sugars
and reduce weight really wasn’t going to ‘cut the mustard’. Let’s face it
I could reduce my average blood glucose level by 0.2mmol/l and my
subconscious would think I’d achieved my goal.
It looked pretty promising, but what really swung it for me was
their 90-day money-back guarantee. What had I got to lose? Nothing;
but a whole healthy life to gain. So I went for it.
That was at the beginning of June 2006. My WSN Diabetic Pack
arrived on 9 June and I started their recommended program straight
away.
So my specifics were:
Part of the instructions they gave for using the WSN Diabetic
Pack was to reduce my sugar intake so the re-sensitizing of the insulin
resistant cells of my body could get started.
1. Reduce my average blood sugars to a safe range of between
5 (89mg/dl) and 7 (125 mg/dl)
2. Reduce my weight by 2 stone (28 lbs)
That’s where knowing about carbohydrates comes in. And it is
why I’ve include the food chart showing you the carbohydrate value of
different foods. (You can read more about low carbohydrate diets
controlling blood-sugars in the books by Dr Richard K Bernstein;
Diabetes Solution and The Diabetes Diet).
Plan of Action
How to reduce blood sugars? A two-pronged attack was needed;
a) increase my insulin effectiveness and b) reduce my sugar intake.
Secondly; Reduced Blood-sugars…
First; Insulin resistance…

Energy levels: Great - don’t feel like falling asleep in the
afternoons as I did before.
Exercise: Walking every day; sometimes 15 minutes (I walk
around to the local post office to take the office mail instead of sending
someone else!); often 30 minutes. I’ve started an aquarobics class, once
per week as well. (I tried swimming but wasn’t keen. Aquarobics
works for me; gentle exercise with fun company).
bring my sugar levels down (in fact I started cutting the carbs whilst
waiting for the WSN pack to arrive). But it wasn’t until I was taking the
foodform supplements of WSN that my sugar levels seemed to become
steady at a good level; my insulin resistance was reducing and I was
finding it easier to keep my blood sugars within my target range.
And thirdly; Weight-loss…
The bonus? It was taking me towards my 3rd goal as well! I was
losing weight at a steady rate; it was just slipping off. That felt great
because it was happening without any hardship on my part; I wasn’t
starving myself; my sugars were on a good level; I had more energy and
I felt so much better. And all I had to do was change by eating lifestyle
and use the WSN supplements as directed.
And my husband took my goals seriously and went out and
bought a couple of bikes! So now we go out for a bike ride in the local
woods at the weekends as well.

Exercise Helped…
One of the other things you can do to control blood-sugars is to
take regular exercise. As I said before, I’m not the fittest person, so I
had no intention of joining a gym and going for a ‘marathon in fitness’!
But starting gentle, with a bit of exercise every day, was perfectly
feasible. So I followed the exercise advice on my own website - and
started off gradually and built up. Again I set a goal so I knew what I
was aiming for:
Keep your own journal so you can check your progress and feel
proud of what you achieve. Remember, even small steps build up to a
long distance. And small steps in your blood-sugar control take you that
much closer to your own personal diabetic goals.

Yellow food coloring
Sterilize 2 half-pint jars by covering with water and boiling for 15 minutes.
Soften gelatin in 1 cup apple juice. Heat to a boil the other cup of apple juice. Remove
from heat.
Add juice with softened gelatin. Add lemon juice.
Bring to full boil and cook about 2 minutes. Remove from heat; add food coloring and
sweetener to taste.
Pour into sterile half-pint jars, seal, and cool. Store in refrigerator. Makes 2 half-pints.

Recipe: LEMON SAUCE

Grated rind of 1 lemon
2 tbsp. margarine
2 tbsp. lemon juice
1 drop yellow food coloring
8 (1 gram) pkg. Equal
Combine water, cornstarch, and salt. Stir until smooth in a small saucepan. Cook and stir over
medium heat until thickened and clear, then continue to simmer, stirring constantly for another
2 minutes. Remove from heat and add remaining ingredients to sauce, stir lightly to mix well.

¾ cup chopped onion

3 pounds chicken thighs and/or drumsticks

1 medium onion, chopped
1 garlic clove, crushed thru a press
¾ cup orange juice
3 Tbsp raisins

/3 cup slivered almonds
Season chicken with the spices. In a large fry pan, heat oil over med-high heat. Add
chicken, in batches if necessary, and cook, turning until browned, about 10 minutes.
Remove and set aside. Add onion to pan. Cook until soft, about 3 minutes. Add garlic
and cook 1 minute longer. Return chicken to pan. Add orange juice and raisins. Cover,
reduce heat, and simmer 15 minutes, until chicken is tender. Garnish with almonds.

Lamb with Sweet Red Peppers
3 pounds boneless leg of lamb, cut into 1½ -inch pieces
½ tsp pepper
3 Tbsp olive oil
2 garlic cloves, chopped
2 cups hot water
3 Tbsp chopped fresh parsley
2 large red bell peppers, cut into 1½ to 2 inch pieces
Season lamb with ¼ tsp pepper. In a large frying pan or flameproof casserole, heat oil
over high heat. Add lamb and cook, turning frequently, 3-5 minutes, or until browned
on all sides. Add garlic, water and remaining ¼ tsp pepper. Bring to a boil, reduce heat
to medium, and cook partially covered 30 minutes. Uncover and cook 10 minutes
longer, or until lamb is fork tender. Add parsley and red peppers to pan. Cook 10
minutes, or until peppers are just tender.
Cajun-Style Broiled Swordfish
1 t paprika
4 swordfish steaks, ¾" to 1" thick
½ t dried thyme
¼ t garlic powder
¼ t black pepper
¼ t oregano

/8 t ground red pepper
¼ c lemon juice
Thaw fish, if frozen. Rinse and pat dry with paper towels. For seasoning mixture, in
shallow dish, stir together spices. Place lemon juice in bowl. Dip steaks in juice, then
coat lightly with seasoning mixture. Preheat broiler. Spray unheated rack of pan with
nonstick spray. Arrange seasoned fish on rack. Broil 4 inches from heat until fish flakes
easily with fork (4 to 6 minutes per ½" thickness). Turn once during broiling time.

Fresh Spinach Salad
1 lb. fresh spinach, washed, drained and torn into desired pieces
1 can sliced water chestnuts
1 lb. fresh mushrooms, sliced thinly
½ lb. bacon, cooked and crumbled
4 hardboiled eggs, sliced
Make sure spinach has been well drained and isn't watery. Combine all above salad
ingredients in a large bowl. (toss the spinach, mushrooms, and water chestnuts
together then top with bacon and sliced hardboiled eggs as garnish until time to serve.)
Chill. This is a wonderful change from a plain iceberg lettuce salad. Leftovers don't keep
well, spinach tends to wilt down. So eat it all at the first serving or shortly thereafter.
Italian-Style Sautéed Broccoli

onion, diced

head broccoli, cut into small flowerets, with stems peeled and thinly sliced
Bring a large pot of water to boil over high heat. Add broccoli and cook until bright
green but not completely tender, about 3 minutes. Plunge into cold water to stop the
cooking process and preserve the bright color. Heat oil in a skillet over medium heat.
Add garlic, onion, and cook, stirring, 2-3 minutes. Add tomatoes and stir well. Cover
and simmer 10-15 minutes. Remove cover and stir in broccoli. Simmer, uncovered, 2-3
minutes. Serve hot, makes 4 servings.

Cream of Cauliflower Soup
1 large head of cauliflower
2-3 stalks celery
1 carrot
2 cloves garlic
1-2 onions
1-2 tsp ground cumin
½ tsp pepper
a few sprigs of parsley
¼ tsp sage (or your favorite blend of herbs; spices)
Chop head of cauliflower (save a handful of tiny flowerets for a raw garnish) and put in
a soup pot. Chop; add stalks celery, carrot, garlic and onions. Add spices. Barely cover
with water, bring to boil and simmer until veggies are tender. Blend the contents of the
pot and adjust seasonings to taste. Add a little hot water if the soup is too thick. Serve
garnished with raw flowerets. Serving suggestion: Serve with a steak, plus a
spinach/lettuce and mushroom salad garnished with grated carrot and parsley. You can
use the same basic recipe for Cream of Broccoli or Cream of Asparagus Soup. You

"Guilt-Free" Low-Carb Ice Cream
1 Pint of heavy sweet cream
¼ tsp real vanilla extract
½ cup of Splenda
2 trays of ice
Fill a blender one-third full of ice cubes. Pour in the sweet cream just to the top of the
ice cubes. Add in the vanilla and Splenda. Start mixing on slow speed and as the ice
breaks up keep increasing the speed of the blender. Assist the stirring as needed with a
long spoon. It will become very thick and smooth and your blender may need a little
help in keeping the mixture moving. This will make 4 servings of soft vanilla ice cream
containing about 4 grams of carbohydrates per serving. As soon as it is smooth and
creamy, quickly dish it out and enjoy!
This must be eaten as soon as it is made or it will get too soft, and it does not freeze
well. Best eaten fresh out of the blender. Adding a quarter cup of ripe blueberries and
reducing the equivalent volume of sweet cream results in an incredible soft blueberry
ice cream!
Steamed Chinese Style Fish
1. Use fish chunks or whole fish.
2. Cut shallow slices into fish and insert garlic slices.
3. Place in top of steamer or on lettuce leaves in top of steamer. [I've
also used a wok: place wooden chopsticks across bottom of wok and a
heat-proof dish on chopsticks. Water in wok underneath chopsticks] Fish on
plate and cover.]
4. Place sliced green onions over fish and any other seasoning wanted.
Cover.
5. When fish is tender/soft/flaking remove and quickly pour sauce over.
6. Add fresh sliced green onions to serve.
Sauce
While fish is steaming warm ½ cup oil and ½ cup soy sauce together, add
chopped/sliced/mashed garlic… however you like it.

Cold Shrimp Stuffed Avocados
3 large avocados
juice of 1 lemon
1 pound cooked shelled shrimp coarsely chopped (reserve 6 whole shrimp)
1 hot chili pepper, peeled if fresh, seeded, washed and chopped fine
1 hard-cooked egg, chopped
2 dozen pitted green or black olives, chopped
mayonnaise
pepper
3 Tbsp minced fresh coriander leaves or parsley
Cut avocados in half lengthwise, pit, and scoop out the flesh. Put the flesh into a bowl,
and then sprinkle the shells with a little lemon juice to prevent darkening. Mash the
avocado flesh with a fork. Add the shrimp, hot pepper, egg and olives and mix well.
Add enough mayonnaise, beginning with 1/3 cup, to bind the ingredients together.
Pepper to taste. Stuff the avocado shells with this mixture. Top each with one of the
reserved shrimp and sprinkle with coriander. This recipe makes 6 servings.
Low-Carb Holiday Eggnog
6 Eggs, slightly beaten
10 – 12 Packets of Splenda
½ Teaspoon salt
5 Cups heavy cream
1 Teaspoon vanilla
¼ to 1 Cup light rum (optional) or 1 Teaspoon rum extract
Nutmeg
In a large sauce pan, combine eggs and salt. Stir in cream. Cook over low heat, stirring
constantly until mixture thickens and coats the spoon. Remove from heat, stir in the
Splenda and vanilla. Cool; refrigerate immediately. At serving time, pour into serving
bowl. Stir in rum or rum extract and sprinkle with nutmeg. Makes approximately 12 –
16 (½ cup) servings at approximately 3 carbs per ½ cup serving.

Apple-Cider Vinegar Salad Dressing
Apple cider vinegar is vinegar that works well. It is recommended that the typical apple
cider vinegar product carried by large grocery chains be avoided. Instead, look for raw,
unfiltered, unpasteurized apple cider vinegar, usually available at many health food
stores.
To make a quantity of your own salad dressing, just mix one part oil (or water) to two
parts vinegar. Condiments such as garlic and/or onion powder, salt and pepper, should
be added to taste.
Baked Custard
4 Large Eggs
½ Cup of Splenda
½ Teaspoon salt
1 ½ Cups Heavy Cream
1 Cup Water
1 Teaspoon Vanilla Extract
1
/8 to ¼ Teaspoon Ground Nutmeg, for garnish
Preheat oven to 350 F
COMBINE eggs, Splenda and salt in large mixing bowl. Add milk, water and vanilla
extract; beat until mixed. Pour into six 6-ounce custard cups. Sprinkle with nutmeg,
Place cups in 13X9-inch baking pan; fill pan with hot water to 1-inch depth.
BAKE for 35 to 40 minutes or until knife inserted near center comes out clean. Remove
cups to wire rack to cool completely. Refrigerate until ready to serve.

Diabetic-Safe Cheesecake
Crust:
1½ Cup fine ground pecans
2 tablespoons melted butter
1 tablespoon Splenda
Mix all ingredients - press evenly into a greased "spring form pan" (I line the bottom
and sides of the pan with the new Non-Stick Aluminum foil). Bake crust for 10 minutes
at 350° and let cool before adding cheesecake mix.
Cheese Cake:
5 - 8oz packages of cream cheese
5 large eggs
2 large egg yolks
¼ cup heavy cream
½ teaspoon of vanilla extract
½ teaspoon of either almond or lemon extract (my favorite is the almond)
1¾ cups Splenda (approx 42 packets)
Preheat the oven to 475°. In a bowl beat cream cheese with sweetener until smooth.
Add eggs, cream, yolks and extracts - beat for 5 minutes. Pour mixture into greased or
lined spring form pan, and bake for 12 minutes. Turn oven down to 350° and bake for
35 minutes longer. Turn off oven and leave cake in for another 30 minutes. Remove
cake and let cool completely in pan. Refrigerate overnight and remove from pan before
serving. Cake may crack during baking but don't worry - it's normal. You can top the
cheesecake with a no-sugar jelly (e.g. "Fifty50" brand - some of the flavors are peach,
blackberry, apricot, and strawberry). You won't believe how good this is!

Cauliflower Soufflé
½ cup steamed, mashed cauliflower
1 egg
¼ cup cottage cheese (or ricotta)
2 Tablespoons grated cheddar cheese
pinch of nutmeg ; dash of cloves
salt, pepper to taste ; onion/garlic (optional)
Mix all ingredients together, microwave for 5 minutes or bake for 20. If you use ¼ cup
of heavy cream instead of the cottage/ricotta cheese, it will be more like a quiche than
a soufflé.
