Tools needed: white cutting board, rubber spatula, metal turner, Chef’s knife, 2 in full hotel pan,
cutting glove, disposable gloves, sanitizer solution.
Thaw pot roast under refrigeration overnight on a sheet pan.

Remove thawed pot roast from refrigeration. Cut and plastic packaging, lengthwise, open plastic packaging and
remove fat solids from packaging and place in separate bowl for disguarding. Pre-heat convection oven to 300°

Remove pot roast from plastic packaging. Using a rubber spatula, scrape beef stock into a separate bowl.
Reserve beef stock drippings, for later use.
Turn the pot roast lengthwise. Cut roast in half following illustration above. Turn pot roast on side

Prepare to slice roast, cutting against the grain. Using a scale, weigh 2 or 3 slices of roast in order to establish and
maintain proper portion size for serving approximately 1⁄8 inch – ¼ inch slices. Shingle slices in one direction,
preparing to transfer pot roast into hotel pan.

Using a metal turner, transfer sliced Pot Roast from cutting board to 2 inch Hotel pan. Repeating the same process,
slice and transfer the remaining piece of Pot roast into hotel pan.

Using a spoon or rubber spatula spread reserved beef stock over top of pot roast. Then cover pan with foil.
Place the covered hotel pan into a preheated Convection oven at 300°. Bake for approximately 40 minutes.
(Cooking time may vary based on type of oven. When using a conventional oven increase oven temperature by 25°)
Cook Pot roast until it reaches a minimum internal temperature of 165°
