He will present a dynamic and picture-filled talk about healthy eating. “We will cover some quick nutrition chemistry, a brief run through of Why We Get Fat…What is controlling this? Then onto Why the Calories in, Calories Out theory is just plain WRONG.” Dr. Malinow will conclude his talk with a review of the diet that he recommends to maximize the health of his patients. Speaker Biography: Dr. Louis B. Malinow Dr. Malinow is a Board Certified Internist affiliated with MDVIP, which provides very personalized and preventive care to patients with a strong focus on wellness. He is certified by the American Society of Hypertension as a specialist in the management of high blood pressure, and is also a Diplomat of the American Board of Clinical Lipidology, as a cholesterol expert. He completed medical school at University of Maryland, and both his internship and residency at Stanford University. The keynote speaker was Dr. James Harnly, from the Food Composition and Methods Development Laboratory in the Beltsville Human Nutrition Research Center in the Agricultural Research Service of the USDA. His talk, “Spectral fingerprinting for identification and authentication of botanical materials,” described chemical and statistical methods to authenticate nutritional supplements (distinguishing American ginseng from Chinese ginseng, for example). The ultimate goal of this work is to produce a publicly available database for botanical authentication and compound identification. After the address, members of the audience were taken on guided tours of the Speaker Dr. James Harnly and Alvin Bober McCormick Technical Center Research Labs, including the instrument lab, the molecular structure identification lab, the microbiology and microscopy lab, and the wet lab. McCormick scientists talked about their own work authenticating ingredients from suppliers and analyzing all the small components that add up to flavor (moisture, acidity, salts, sulfur, volatiles, etc.). After the tours, the Maryland Section Chair, Dr. James Saunders, gave a fascinating talk entitled “How does chocolate get from the tree to the table?” about the history and process of making chocolate. He described his own work on DNA fingerprinting different varieties of cacao in search of disease-resistant strains. To illustrate the different stages of chocolate processing, from the bean to the chocolate bar, the evening concluded with a chocolate tasting: beginning with 100% cacao beans (roasted, but not mixed with milk or sugar) and then ranging from white chocolate (essentially entirely cocoa butter (chocolate fat) without any cocoa) to Hershey’s kisses to 86% cacao dark chocolate. The event was an excellent opportunity for section members to meet scientists at McCormick and learn about food science. Dr. James Saunders with his chocolate display. Volume 70, Number 3 UPCOMING EVENTS AND ANNOUNCEMENTS Aberdeen Proving Ground Earth Day Celebration The annual APG Earth Day celebration is taking place on Friday, April 25 from 9am - 12:30pm. Parents are welcome to bring their children/young students to the morning event, which is open to the public. There will be over 20 interactive displays and hands-on STEM activities for students. This event is geared towards students K-6th grade but is also informational to older students/parents. SAVE THE DATE: Remsen Award Please join us on Thursday, June 5th to congratulate Dr. Emily Carter, of Princeton University, as she receives the Ira Remsen Award. This award was established in 1946 by the Maryland Section, in partnership with Johns Hopkins University, to honor Ira Remsen for his many years of service in promoting chemistry, and in service to the Johns Hopkins University. The recipients of the Remsen award are chemists of outstanding achievement in keeping with Ira Remsen’s long and devoted career as an exponent of the highest standards in teaching and research in chemistry. The Award culminates in a Remsen memorial lecture given by the recipient, followed by presentation of a plaque and an honorarium. SAVE THE DATE: Leadership Workshop The Maryland Section will host a Leadership Development Course, “Developing Communications Strategies.” This is one of several courses provided by the American Chemical Society to provide participants with an opportunity to learn essential skills that will strengthen their competitive edge. The workshop will be held in the UMBC Meyerhoff Chemistry Building on May 17th from 8:15am – 1:00pm. Continental breakfast and a coffee break will be served.
