‫בעלי אופי ייחודי וסיפור מרתק‪ .‬אנחנו‬

‫כשהתחלנו את פרוייקט היין החדש לא האמנו שהדבר‬
‫יתפוס כל כך מהר ושנגיע לקהל גדול ומגוון כל כך‪.‬‬
‫נדהמתי לגלות לא רק כמה מנוסעינו אוהבים יין‪ ,‬אלא‬
‫כמה מכם מתעניינים‪ ,‬שואלים‪ ,‬מתענגים על הטעם‬
‫ואפילו…לוקחים את התפריט הביתה לקריאה שניה‪.‬‬

‫שרדונה כרם אודם ‪ -‬יקבי רמת הגולן ‪2013‬‬
‫זהו לא רק הכרם הגבוה בישראל‪ ,‬ברום של כמעט ‪ 1200‬מטר‪ ,‬זהו גם הכרם האורגני‬
‫הראשון בארץ‪ .‬זן השרדונה אשר חמיצותו הטבעית ורעננותו אינן מן המפורסמות‪ ,‬וודאי לא‬
‫בארץ חמה כשלנו‪ ,‬מוצא עצמו נשכר מתנאי הקור השוררים בגובה זה‪ .‬וכך מקבלים אנו יין‬
‫קטיפתי ועשיר הנשען על רעננות פרי טרופי טוב ומענג‪.‬‬
‫אדמה רוסאן ‪ -‬יקב תבור ‪20014‬‬
‫זו השנה השניה בסך הכל לזן הרוסאן בישראל אך היין של תבור‪ ,‬חלוץ יינות הרוסאן הזניים‬
‫בארץ ממשיך לשמח‪ .‬אם בשנה שעברה בלט היין עם טעמי גויאבה ופרות טרופיים‪ ,‬ניכר‬
‫שהשנה היין כבר מקבל מורכבות נוספת והופך ״רציני״ יותר‪ ,‬ועם זאת זהו יין מאוזן מרענן‬
‫המראה שזני דרום צרפת יכולים להתאים כמו כפפה לאקלים של ישראל‪ .‬‬
‫פטי קסטל ‪ -‬יקב קסטל ‪2013‬‬
‫יקב קסטל הנו כבר מזמן גאווה ישראלית ברמה בינלאומית‪ .‬הצרפתיות הניבטת מכל נים‬
‫ביקב‪ ,‬בתוויות ואפילו בטעם היין‪ .‬אלי ומשפחת בן זקן מפגינים על פני עשרים שנה עידון‪,‬‬
‫מצויינות וחתירה בלתי נלאית לביטוי מקומי‪ .‬הפטי קסטל‪ ,‬אחיו הצעיר של יין הדגל מפגין‬
‫את המורכבות הידועה של היקב אך בו בעת מאפשר שתיה מוקדמת יותר‪.‬‬
‫מרלו רזרב‪ ‬טפרברג ‪2011‬‬
‫יקב טפרברג עובר זה כמה שנים מהפכת איכות אמיתית ויינות היקב‪ ,‬במיוחד בסדרת‬
‫הרזרב‪ ,‬כבר אינם סוד לטועמים מנוסים‪ .‬המרלו רזרב של היקב הנו דוגמא לכך‪ .‬עמוק‪ ,‬עם‬
‫גוף עגול וטאנינים קטיפתיים‪ ,‬היין מראה שאפשר ליצור מרלו טוב בישראל‪.‬‬
‫שיראז ‪ -‬יקב דלתון ‪2011‬‬
‫יקב דלתון הינו מראשוני היקבים הגליליים שצמחו בשנות ה‪ ,90-‬עם אמונה בפוטנציאל שיש‬
‫לגליל העליון‪ .‬החזון של מתי הרוני הוליד יקב גלילי מוביל‪ .‬יין השיראז משמח פעמיים‪ ,‬ראשית‬
‫כי הוא עשוי היטב‪ ,‬עם התיבוליות הטיפוסית שלו‪ ,‬אך גם מפני שהוא יין מבושל וככזה‬
‫משמח הוא אף יותר‪ ,‬שכן אין זה קל כלל עיקר לשמור רעננות ביין בתהליך‪ ,‬כל הכבוד‪.‬‬
‫*בלאן דה בלאן ‪ -‬יקב רמת הגולן ‪ 2008‬‬
‫יינות מבעבעים עשויים בעיקר באזורים הקרים ביותר‪ ,‬כמו חבל שמפיין‪ .‬על כן ההצלחה של‬
‫יקבי רמת הגולן שנה אחר שנה‪ ,‬אינה דבר של מה בכך‪ .‬השילוב המנצח של רום הגולן‪ ,‬בציר‬
‫מוקדם במיוחד ובעיקר יינן שעבד בשמפיין הופכים את היין לסיפור הצלחה ישראלי מרשים‪.‬‬
‫עשוי על טהרת השרדונה זהו יין חד ומרענן‪ ,‬ובועותיו הקטנות מעניקות לו חגיגיות אצילית‪.‬‬
‫*גוורצטרמינר כרם שעל ‪ -‬יקבי כרמל ‪2010‬‬
‫שוכחים לפעמים‪ ,‬אבל הדבר החשוב ביותר ביין קינוח הוא לא המתיקות שלו אלא החמיצות‬
‫או המרירות המעניקה איזון‪ ,‬אורך ואלגנטיות ליין‪ .‬האיזון ביין כרם שעל שבצפון הגולן כל‬
‫כך טוב שלמרות המתיקות והפרותיות הטרופית המובהקת של הגוורצטרמינר הסיומת שלו‬
‫רעננה חדה ומהנה‪.‬‬

Chardonnay Kerem Odem - Golan Heights Winery 2013
At 1200 meters, this is not only the highest vineyard in Israel; it is also Israel’s first
organic vineyard. The Chardonnay varietal’s natural fresh acidity are not particularly
well known, especially not in a hot country like ours, so it benefits immensely from
the cool altitude – resulting in a delightfully rich and velvety wine.
Roussanne - Tabor Winery 20014
This is only the second year of Roussanne varietal wines in Israel, but the Tabor
Winery continues to delight. If last year the wine excelled with guava and tropical
fruit flavors, this year it remains a refreshing, balanced wine; proving that varietals
from southern France can adapt perfectly to Israeli climatic conditions.
Petit Castel – Castel Winery 2013
Castel has been a proud Israeli success story for years, producing internationally
recognized wines. Eli and the Ben Zaken family have demonstrated refinement,
excellence and indefatigable efforts in unique Israeli wine production for over
twenty years. Petit Castel maintains the celebrated complexity of the winery, even
while indulging us somewhat earlier.
Merlot Reserve - Teperberg 2011
Teperberg has undergone a true revolution in quality wines for several years now,
especially the Reserve series; these wines are no longer a secret. Merlot Reserve
2012 is a perfect example: deep, black, well-rounded, with velvety tannins; this wine
proves that good Merlot can be produced in Israel.
Shiraz - Dalton 2011
Dalton was one of the first Galilee wineries to believe in the potential of the
mountainous Upper Galilee. This Shiraz is doubly pleasurable, first because it is very
well done, with the typical fruity richness, but also because it is a “mevushal” wine
and it is not at all easy to maintain freshness in the process.

*Blanc de Blanc - Golan Heights Winery 2008
Sparkling wines are best produced in cold areas, such as the Champagne region.
The winning combination of the Golan Heights, an early harvest and an exceptional
winemaker who worked in Champagne earn this Israeli wine unparalleled success.
Produced entirely from Chardonnay grapes, the wine is intense and refreshing and
its tiny bubbles make it the aristocrat of wines.
*Shaal Vineyard Gewürztraminer - Carmel Winery 2010
The most important thing in a dessert wine is not its sweetness, but rather the
tartness or acidity that gives the wines their balance, length and elegance. The balance in
this Shaal Vineyard wine is so good that despite the unmistakable tropical sweetness
and fruitiness of the Gewürztraminer, the ending is delightfully fresh and sharp.

When we began our new wine project, we had no idea that
it would catch on so fast and reach such a varied audience.
I was amazed at just how many of our passengers are wine
aficionados, and how many understand, are interested, ask
questions and enjoy the tastings ... even taking the wine lists
home for a second review.
Thank you for your responses. I do hope you will enjoy the
new menu too. For me this is a labor of love; I want to offer
not only quality wines, but also wines that are appropriate for
flight conditions. So please; polish your palate, sit back, relax;
together (virtually) we’ll continue down the path of constantly
improving Israeli wines.
