With regard to safety, these Bratt Pans have been designed and made according to applicable
gas and electrical regulations.
The regulation for place of use may impose stricter instructions (safety and health
instructions, protection against fire etc.) than the instructions contained in this manual. In
this case, the regulations should be respected.
Identification Plate
The identification plate and Moffat Supplementary Plates are located on the frame, after removing the right
hand vertical strip.

SMB 60G - Gas Bratt Pan.
A commercial heavy duty, gas fired Bratt Pan fitted with a 150 ltr capacity pan, of full stainless steel pan
construction, with a set of two gas burners. This appliance features an electric thermostat burner
control and multi-function use controls.

Installation
NOTE: It is most important that this appliance is installed correctly and that operation is
correct before use. Installation shall comply with local gas, electrical and health and
safety requirements.
Waldorf Bratt Pans are designed to provide years of satisfactory service, and correct installation is essential
to achieve the best performance, efficiency and trouble-free operation.
This appliance must be installed in accordance with National installation codes and in addition, in
accordance with relevant National / Local codes covering gas, electrical, fire and health and safety.

Installations must be carried out by authorised persons only. Failure to install equipment to
relevant codes and manufacturer’s specifications shown in this section will void the warranty.
Components having adjustments protected (e.g. paint sealed) by the manufacturer are only
to be adjusted by an authorised service agent. They are not to be adjusted by the installation
person.
Unpacking
For transport purposes, the appliance is seated on installation trolley designed to be moved around by a
pallet transporter.
A ‘bubble wrap’ plastic film is wrapped around the appliance and held on by bands.
BEFORE UNWRAPPING, CHECK THAT THIS HAS NOT BEEN PERFORATED.
The appliance must always be kept upright while being handled.
The installation trolley is returnable. Send it back as soon as the appliance is installed.
 Remove all packaging.
 Check equipment and parts for damage. Report any damage immediately to the carrier and
distributor.
 Ensure the 4 adjustable feet are fitted with the protruding centre screw.
 Remove any protective plastic coating from side panels.
 Report any deficiencies to distributor who supplied bratt pan.
 Check available gas supply is correct to as shown on rating plate located on bottom corner of front
right hand panel.

Installation must allow for a sufficient flow of fresh air for combustion air supply.
Any gas burning appliance requires adequate clearance and ventilation for optimum and trouble-free
operation.
Never directly connect a ventilation system to appliance flue outlet.
Installation must include adequate ventilation means, to prevent dangerous build up of combustion
products.
Position Bratt Pan in its approximate working position.
All air for burner combustion is supplied from beneath unit. Legs must always be fitted and no
obstructions placed beneath or around base of unit, as obstructions will cause incorrect operation
and / or failure of appliance.
NOTE: Do not obstruct or block appliances flue. Never directly connect a ventilation system
to appliance flue outlet.

DO NOT REMOVE THE TRANSPORT BASE BEFORE SETTING UP THE APPLIANCE.

THE LID MUST BE LOCKED.

Slide the forks of a pallet transporter under the transport base.
Make the appliance exactly level by adjusting the feet.
Unscrew the 6 attachment bolts of the wooden slats.
Remove the 2 slats, then the transport base.

instructions “SUPPORTING STRUCTURE - INSTALLING THE APPLIANCES”.

Moffat may not be held responsible either if the standards for the prevention of
accidents and fires or the standards for the safety of gas installations are not
observed.
Gas Classification: The appliances are Type A (not connected to an evacuation conduit for combustion
products).
Caution
Check that the supply pressure and type of gas being used for installation are
the same as marked on the Identification Plate for the appliance.
For information, we would like to remind you that, appliances installed in premises used by the public must
conform with certain statutory installation conditions.
The installation and maintenance of the appliance must be carried out in conformity with the regulations
and practices used in the trade in effect, and particularly:Safety Regulation for fires and panic in establishments used by the public
Article GZ: Liquid hydrocarbon and combustible gas installations. Then in line with use.
Article CH: Heating, ventilation, refrigeration, air conditioning and the production of steam and sanitary hot water.
Article GC: Installation of cooking appliances for catering purposes.
General Regulations
The appliance must be installed in a well-aired room and under an extractor hood in order to ensure that
all of the burnt gases produced during combustion are extracted.
The automatic control of the hood by the appliance, if forced extraction is used, must cut off the gas supply
if there is no electrical power supply. The rate of change of the air must take into account air required for
combustion of 2 m3/h/kW for the gas power installed, and the “Well-being” of the persons who working in
the kitchen.
The appliance must be carefully connected to the mains using rigid or flexible piping and complying with
shown at the start of this section. The diameter of the piping will be selected according to the length of
piping, type of gas and pressure distributed.
After the gas connection has been made, the seals and connectors must be checked to ensure that there
are no leaks; use soapy water or other gas detection equipment.
The appliance must not be installed less than 200mm from inflammable lateral partitions.
An easily accessible shut off valve must be provided.
Close to this will be positioned an expansion valve, calibrated according to the flow rate required for the
appliance. Refer to the ‘Gas Specifications’ for spec. details.
IMPORTANT !
IF BOTTLED GAS IS USED, ENSURE CORRECT FUNCTIONING OF THE SYSTEM BY INSTALLING A
SUFFICIENT NUMBER OF BOTTLES.
WHEN CHANGING THE GAS TYPE, CHANGE THE COLOURED ‘GAS TYPE’ STICKER LOCATED CLOSE TO
THE GAS INLET.
The position for the gas, water and electrical connection points and the dimensions for piping
for each appliance model are shown in the ‘Specification Section’.

Installation
Adjusting the Electrodes
When replacing the detection or ignition electrode, the gap between the electrodes and the burner body
must be adjusted to the values shown below.

Water Connection
Install a stop tap near the appliance for each inlet.
Attach the water inlet pipe to the dia. 15 x 21 - 1/2» flexible pipe, located at the rear right lower part of
the appliance (be careful not to invert hot and cold water inlets).
Water Pressure: 200 - 300 kPa.
Make sure that the water specifications are as recommended (in order to prevent scaling).
Treated Th 5° to 7° - pH 7 to 10.
If necessary, add a water softener.
With regard to the water supply, the installer shall comply with existing health regulations
(e.g.: dis-connector for certain regions).
Water Consumption
Lid cooling (cold water): 20 litres/hour (SMB 60G MULTI P).
Drainage Connection (Pressurised Models Only)
Caution
It is obligatory that the drainage pipe is not connected
to another pipe or tube but drains into a funnel.
Never make a sealed connection onto a stand-by drain.
Temperature of evacuated liquids can reach up to 100°C.
Drainage of the condensates and lid cooling water dia. 20 x 27 3/4", evacuation to duct using a PVC pipe
dia. 32, or connection to a funnel.
Role of the drainage: in cooking under pressure mode, it removes condensates and allows draining lid
cooling water.

Installation
Electrical Connection
The appliance should only be wired up by a qualifi ed electrician, and the mains
connection, earthing, circuit breaker and protection must conform with the
standards and regulations in effect.
Caution
 Check that the voltage marked on the Identification Plate is the same as that
of the mains supply.

 1 Cable with 3 Conductors (Phase + Neutral + Earth).
Multi-Function Pressure Bratt Pans
NOTE:
A transformer integrated into the appliance supplies all the lid components in low
voltage (24 V).
Before Use Checks
Before putting the appliance into operation, check that:
- The gas connection is correctly done and the shut off valve is in the open position,
- The water connection is correct and the stop tap is open,
- The electrical connection is correct,
- The drainage tube is not obstructed and that the label stuck on lid has been removed (multi-functions
pressure bratt pans).
IMPORTANT ! BEFORE USING THE APPLIANCE FOR THE FIRST TIME, IT IS STRONGLY RECOMMENDED THAT
SUFFICIENT WATER IS BOILED TO CLEAN THE BRATT PAN AND ITS ACCESSORIES.

Maintenance Operations
No work should be carried out unless the main gas tap has been turned off, the
appliance switched off and the temperature of the element to be worked on
checked.
Annual Inspection
To guarantee safety and long life for your appliance, you are advised to carry out an ANNUAL INSPECTION
by an installer trained and approved by Moffat. During inspection, gas components, safety elements and
wearing parts are checked.
Every year, the condition of the gas supply, swivel joint must be checked and it
should be changed if necessary.
Cleaning the Venturis
Dust and fat droplets carried by the gas tend to settle inside the venturis. They need cleaning annually.
DO NOT USE ANY METAL OBJECT TO UNBLOCK THE CALIBRATED INJECTOR HOLE, AS
THEY MAY BECOME ENLARGED, WHICH WOULD RESULT AN INCORRECT FUNCTIONING
OF THE BURNER.
Periodic Inspections
- Check that the electrodes are in perfect condition, and
replace them if necessary (split insulator).
- Check the gap (4mm) of the ignition electrode.
Multi-Functions Pressure Bratt Pans
Regularly check the correct operation of the lid gas cylinders. As soon as their power decreases, replace
them. The gas cylinders are accessible after removing each case cover located on both sides of the lid
(10mm A/F spanner).
Do not drill nor expose the Lid Gas Cylinders to heat (Risk of Explosion).
- Check that all regulation components are working properly (Pressure Sensor, Safety Valve, Air Bleeder,
Proximity-Effect Sensors), scaling and the lid cooling flexible pipe.
- Any defective part must be replaced.

Multi-Functions Bratt Pans - without Pressure
Adjusting the Hinges
After being used for a certain length of time, hinges may
require re-adjusting. Carry out adjustment as shown
below.
- Unscrew hexagonal cap nut (B) on right hand side
(viewed from front).
- Turn socket head cap screw (A) using an hexagonal
wrench:
• to the right to tighten the lid,
• to the left to free it.
- Adjust it so that the lid remains balanced.
- Re-tighten the hexagonal cap nut.
Greasing the Hinges
- Close the lid.
- Remove hexagonal Cap Nut (B) on left hand side
(viewed from front).
- Apply 20g of special hinge grease (contact your
installer) through the Lubricator Nipple (C) using a
grease gun.
- Re-tighten the hexagonal Cap Nut (B).
- Open and close the lid in short movements, so that the
grease can spread.

Adjusting the Hinges
Caution
If the Hinge is replaced, it is imperative to mark each Proximity Effect Sensor before
dismantling the hinge fixing screws. This will ensure that the Factory Adjustment of the
Scraper Stroke is maintained.
After being used for a certain length of time, the hinges
may require re-adjusting. Carry out adjustment as
shown in the instructions below.
- Remove each case cover located on both sides of the
lid (10mm A/F spanner).
- Turn socket head Cap Screw (A) using a hexagonal
wrench:
• to the right to tighten the lid,
• to the left to free it.
- Adjust the lid so that it remains balanced.
- Refit the covers.

Gas Conversion and Specifications
Gas Type Conversion Procedure
Caution
Ensure Appliance is isolated from gas supply before commencing servicing.
NOTE:
 These conversions should only be carried out by qualified persons. All connections
must be checked for leaks before re-commissioning appliance.
 Adjustment of components that have adjustments / settings sealed (e.g. paint sealed)
should only be adjusted in accordance with the following instructions and should be
re-sealed before re-commissioning this appliance.
 For all relevant gas specifications refer to the table at rear of this section.
Caution
Check that the type of gas being used for installation is the same as marked on
the Identification Plate for the appliance.
Conversion from one type of gas to another is carried out by changing the calibrated burner injectors.
The primary air setting must also be modified, by placing the venturi in the (d) position as per the tables
below.
All work must be carried out by a qualified installer, and the standards and
regulations in effect must be observed.
Refer to the Specifications Section for gas supply requirements.
To check the inlet pressure, remove the ‘IN’ pressure screw on gas valve and use a gas manometer.
Re-tighten the screw firmly (when connecting the manometer, the gas inlet must be closed).
After making the gas connection, check all seals and connectors to ensure that
there are no leaks; use soapy water or other gas leak detection equipment.
Leak testing may also be performed by monitoring the counter of the installation.
Adjusting the Burner Primary Air Setting
The injectors are accessible after opening the cover
(beneath the burner).
- Loosen the knurled Ring C.
- Screw the Venturi (A) in or out, to the value (d) as shown
in the ‘Gas Type Conversion’ tables at the rear of this
section.
- Tighten the knurled Ring (C) firmly by hand.
Changing Burner Injectors
- Unscrew and remove Injector (B) and replace with the
correct size injector for the gas type being used as shown
in the ‘Gas Type Conversion’ tables at the rear of this
section.
- Adjust the primary air by following the instructions shown
above in ‘Adjusting the Primary Air’ paragraph.
