Nutrition Notes
Parsnips
Submitted by: Ellen Foster , Registered Dietitian
R
oot vegetables are the edible underground
parts of vegetables. Some root vegetables
are beets, potatoes, carrots, rutabaga,
parsnips, and turnips.
The wild parsnip is not edible but cultivation has
produced a sweet, aromatic root that looks much like a
carrot, only it is a tan color with white flesh. Today’s
parsnips have a sweet nutty flavor and were actually
used as a sweetener until the development of the sugar
beet in the 19th century.
A fresh one will have a buttery-soft texture when
cooked, but an old parsnip will be fibrous and bitter.
The whiter ones tend to be the most tender, and should
be firm like a carrot.
Parsnips will keep for weeks if properly stored in a very
cool place. They can be also be cooked like carrots and
make a colorful addition to your plate when combined
with carrots. Also like carrots, parsnips should be
scrubbed rather than peeled; but unlike the carrot,
overcooking can turn them to mush. So cook your
carrots and parsnips separately, then combine when
ready to serve.
Nutritionally parsnips are a good source of fiber, having
more per serving than a lot of ready-to-eat cereals.
They also contain folate, magnesium, iron, potassium,
Vitamins C and E, calcium, thiamin, riboflavin, niacin,
and Vitamin B6.
Parsnips are a traditional American vegetable,
particularly around Thanksgiving, but they are also
popular in England, France, Scandinavia, Hungary,
and Holland, and
are harvested
throughout the fall
and winter.

HEAP 2014-2015

very year the Office for the Aging processes
HEAP applications for households with
individuals 60 and older or younger people with
disabilities. At the time this article was being
written, the opening date and the income guidelines for
the 2014-2015 HEAP season had not been released.
If you processed your last year’s HEAP application
through our office, then you will receive this year’s
application in the mail toward the end of August or early
September. When you receive your application, please
complete it to the best of your ability and submit the
application at our office. If you have had any changes to
your income or household, documentation of the
changes will be necessary for processing. Please note
that you may have to wait a few minutes to be seen by a
trained HEAP worker, should our workers be assisting
someone else when you arrive.
If you receive Food Stamps/SNAP, you most likely will
receive a HEAP benefit automatically and do not need
to apply. Check with your food stamp worker if you
are unsure.
If you did not receive HEAP last season and would like to
apply this year, you can pick up an application at our
office after the season opens this November. You can
also apply on-line at www.mybenefits.ny.gov after the
season opens.
The HEAP benefit is a one-time supplement to your
annual energy costs and will not replace your personal
payments. You should continue to pay your energy bill
as scheduled. HEAP benefits are paid directly to your
vendor and may take up to three months to see a HEAP
credit to your account.

Osteoporosis: The Bone Thief
Submitted by Kristine Voos, CHESPublic
Health Educator
Normal Bone/Bone with Osteoporosis
O
steoporosis is a disease that weakens bones
to the point where they break easily, most
often bones in the hip, backbone (spine), and
wrist. Osteoporosis is called the “silent
disease” because you may not notice any changes until
a bone breaks. All the while, though, your bones had
been losing strength for many years. Both men and
women are susceptible to the disease, although it is
most commonly found in women. Keys to preventing
osteoporosis or furthering its progress are through
adequate diet, vitamin D absorption, exercise, and
medications.
The best way to get the adequate amount of calcium is
through the foods you eat. For example, eat low-fat
dairy foods, canned fish with soft bones such as salmon,
and some dark-green leafy vegetables. Check the labels
on foods like orange juice, breads, and cereals to find
those with calcium added. Vitamin D is important to your
bone health because your body uses it to absorb
calcium. Most people’s bodies are able to make enough
vitamin D if they are out in the sun without sunscreen for
10 to 15 minutes at least twice a week. You can also get
vitamin D from eggs, fatty fish, and cereal and milk
fortified with vitamin D. Your bones and muscles will be
stronger if you are physically active. Weight-bearing
exercises, done three to four times a week, are best for
preventing osteoporosis. Walking, jogging, and dancing
are examples of weight-bearing exercises. Also, you can
talk with your doctor about medications that are also
available to help prevent or treat osteoporosis.
As many are unaware if have they have the “silent
disease,” there is a bone density test to find out how
strong your bones are. Your doctor may suggest a
type of bone density test called a DXA test (dualenergy x-ray absorptiometry) if you are a woman age
65 or older or if he or she thinks you are at risk for
osteoporosis.

Muriel H. Marshall Program Provides Financial
Management Assistance for Older Adults in
Genesee County
Submitted by: Karen Hall, Lifespan’s Financial
Management Coordinator
A
new service is available for residents of
Genesee County age 60 and older. Lifespan
of Greater Rochester, a nonprofit
organization, is providing in-home bill paying
and budgeting assistance thanks to funding from the
Muriel H. Marshall Fund for the Aging and assistance
from the Office for the Aging. Trained staff members
and volunteers visit older adults at home to help pay
bills, plan budgets, balance checkbooks, work with
creditors and complete insurance forms.
This service is perfect for people who do not have
experience with finances and those who have health
problems that prevent them from being able to handle
their finances. There is no cost for this service however
donations to Lifespan are gratefully accepted.
Signs that an older adult could use our services
include:
·
·
·
·
·
·
Overdue bill notices
Piling up mail
An often misplaced checkbook
A home that needs to be maintained or liquidated
and has nobody to assist
A lot of mail that asks for money (donations) or
claims “you are a winner!”
Complaints that the bank or vendors make mistakes
on their statements.
Any of these signs indicate that a person has difficulty
managing their finances and could use assistance from
Lifespan’s In-home Financial Management program.
Please note that Lifespan cannot consolidate or pay
down any individual debts. We can only advise
regarding debt, including consolidation options.
For more information, please call Karen Hall, (585)
259-2781 or email [email protected]. Karen’s
office is located within Genesee County Office for the
Aging at 2 Bank Street in Batavia.

the opportunities of longer life.”

Smart Driving Tips

Keep your headlights on at all times.
Drive on streets you know.
Take routes that avoid risky spots like left turns and
hectic intersections.
Do not drive when you are stressed or tired.
Leave at least two car lengths between your car
and the one in front of you and leave even more
space if the weather is bad or you are driving at
higher speeds.
Before the bad weather arrives, make sure your
wipers are working and rotate your tires for even
wear, while replacing tires, as needed.
Consider taking a driver refresher class every few
years. Many insurance companies will offer a
discount on your insurance after completing the
course. Check with AAA, AARP or contact our
office to see if we know of any upcoming refresher
courses being offered in our area.
If you just can’t bear the thought of cleaning off your car
and dealing with winter driving conditions, call the
Office for the Aging’s Transportation Coordination
Program for transportation options available to you at
343-1611. This program is made available through the
generosity of the Muriel H. Marshall Fund for the Aging

Stock up on food that doesn’t require preparation in
case you lose power. Cereal, granola bars and
canned foods are good choices (make sure you have
a can opener!).
If your heat shuts off, pipes can freeze up, leaving
you without water. Make sure you have enough
stored for at least three days. Each person should
have a gallon of water for each day.
Keep spare batteries for flashlights, clocks and radios
handy.
Have a first aid kit prepared and keep a first aid
handbook with it.
Make sure you have a week’s supply of all
prescription medications.
Make an emergency kit for your pet as well. Keep
extra water, food, and toileting necessities in it.
Don’t forget to always keep a shovel by the door with
rock salt and sand to provide more grip on icy surfaces
and help melt the snow. Always dress warmly when
going outside, and remember that layering clothing will
provide great protection against that cold air. Don’t forget
about your feet! Insulated, waterproof boots are best for
walking in, even if it’s just to your car and back.
