Choosing flavor

Chefs who have led the farmto-fork movement in this country
are beginning to take their concerns about flavor beyond what
is happening on farms today.
Dan Barber of Blue Hill at Stone
Barns recently held a gathering
of chefs and plant breeders. He
thought it was time for chefs to
have some say about the seeds
that will be used to grow produce in the years ahead.
Barber told Food and Wine
Magazine about his effort to
develop a better squash from
his point of view. “I was talking
with a seed breeder— a brilliant
young guy who looks like Harry
Potter—and when I told him I
was looking for a particular flavor in a squash, he stopped me:
‘No one has ever asked me to
breed for flavor.’ Everyone has
asked him to breed for yield.”

Many farms abide by the philosophy of Conscientiously Grown®.
The farmer uses good cultivation
management and integrated pest
management practices to avoid
using chemical controls.
Most supermarket buyers never
see a customer, much less talk to
them. With few exceptions, the
supermarket is buying produce
from large producers who grow
it to look good, ship well, and
produce a high yield at the lowest possible cost. And, if you ask
the person stocking the produce
counter if the green beans where
sprayed with pesticide, they won’t
know unless it is certified organic.
Breaking the Habit
We are all subject to being
seduced by a beautiful piece of
produce. But, over the past decade,
I’ve found my hand halting when I

Looks Vs Flavor
As you walk the aisle of a
supermarket, notice the uniformity and pristine appearance of the
produce. Then, notice the same
products at your farmers’ market
stand. There will be a great variety
of shapes and sizes in a basket of
apples. Carrots may be twisted
or multi-legged. And, the corn
may have a worm which proves it
wasn’t filled with pesticides.
In summer, I bring a protective
plastic container to take my tomatoes home because they are so
fragile and ripe, they would bruise
and crack on the walk. The same is
true of strawberries in spring and
raspberries in fall. They may be
very delicate, but they are packed
with flavor.
