Liz Wall is the National President of the Irish Countrywomen’s
Association. For her, Christmas means more than two celebration
days in a month. It’s a time of reflection, reunions and traditions.

“As a child Christmas was all about Santa, Rudolf and the
giving and receiving of gifts. As an adult it is about family,
friendships and being together. All in all Christmas means
family, this means that the more time I have to spend with my
family, the better.
“My family have many Christmas traditions. For 25 years on the
second Saturday of December my husband and two daughters
go to select and buy ornaments for our tree to represent that
past year. During this time I make my coconut and pineapple
mince pies.
“On Christmas Eve we visit Dublin early in the morning, have
breakfast in Arnotts, stroll around the shops and then go and
visit relatives who live in the surrounding area. Christmas Day,
after opening presents, I make a cooked breakfast.
While we are cooking together we drink Buck’s Fizz using Aldi’s
Franciacorta Prosecco and freshly squeezed orange juice.
We have no set time for dinner as we generally just relax and
enjoy the day with family and friends.”

“Use a dry cured ham fillet from Aldi, I prefer to boil instead of bake. Cover in
cider and water, add an onion and two carrots, then simmer for 30 minutes per
500 grams. Allow to cool slightly, peel away the rind and place the ham back in
the cooking liquid until cool. Glaze with brown sugar, lemon juice and cloves or
you can use a pre-made glaze from the Aldi Christmas range. Place on a baking
tray and put in the oven for 15-20 minutes.”

“I love a dressed crab starter served with smoked salmon,
king prawns and salad and I love using a lime juice dressing;
for this you will need two tablespoons of lime juice and 30ml
of olive oil.”

“Using a free range Aldi turkey crown or turkey breast one must
remember that the breast is very lean and does not have a lot of fat,
so it dries out during a long cooking process. I use a tip I learned from
my mother to keep the crown moist. I cover the turkey crown in muslin
soaked in butter or you can use non-stick baking paper or cover
with rashers.
“Remember to baste the turkey regularly to prevent it drying out during
roasting. For an average of 2.6kg in weight cook at 190oC and place in
the centre of the oven on a bed of carrots, onions, garlic and thyme, for
flavour. After one hour reduce the heat to 170oC. Cook for a further hour
or until a skewer inserted into the meat causes the juices to run clear.”

Decanting is usually used as a means of
removing sediment from a mature wine.
It can also be very effective in softening a firm,
young red wine. The younger the wine, the
earlier you should decant. It is the pouring
action, bringing the wine into contact with the
air, that softens the wines.
For mature wines, decant later rather than
sooner. Exposure to air accelerates the wine’s
development. You can always swirl it around
in your glass to bring it out.

“Serving wine at the right temperature makes all the
difference. It does depend on personal preference but, as a
general rule, always serve wines on the cool side as they will
warm up in your hands, whatever the weather.”
Serving white wines
Chilled wines are refreshing. Chilling does mask flavour, so the finer
the wine, the less it will need chilling. Remember, ice with water in
an ice bucket chills more efficiently than just ice alone.
Serving red wines
The tannin level in a wine dictates the temperature at which it
should be served. The more tannic a wine, the warmer you should
drink it. Reds that are low in tannin can be chilled like a full-bodied
white. If a red is served too warm, it will become soupy and all you
will be able to taste and smell will be the alcohol. As with all wine,
serve cooler rather than warmer.

Christmas is one of those great, annual family
occasions of the year, but preparing Christmas
dinner can be a little daunting. So follow our
stress-free preparation guide and make sure
you enjoy every minute of the big day.
Stress-free Christmas dinners
start on
Christmas Eve
Get the veg prepped
Peel and trim carrots,
parsnips and sprouts. Peel
your onions and parboil your
potatoes. Then pop them
all in the fridge in a sealed
container or cling film.
Make some stock
Vegetable trimmings (apart
from spuds and sprouts)
can go in your stock pot
along with turkey giblets
and the carcass of a chicken
if you have one. Cook this
all up and it’ll help make
tomorrow’s gravy delicious.
Get the turkey out
Your turkey’s cooking time
depends on it being at room
temperature when you put it
in the oven. So get fresh ones
out early in the day or leave
frozen ones out overnight
(if you have a cat, make sure
it can’t get to it!).
Prepare your ham
Christmas Eve is the
traditional time to soak,
simmer and prepare your
ham. You’ll then have the
option of roasting or boiling
it today or leaving it
until tomorrow.
It’s not just about food
On Christmas Day you want
to concentrate on getting
dinner on the table, so get
as many other things out
of the way as you can. Chill
wine and beers. Lay the
table. Put out candles. Make
sure you’ve wrapped all your
presents. And don’t forget to
put a candle in the window!
Your Christmas
dinner timing plan
The night before
Grab a pen and work out
your timings. Decide when
you want to eat and work
back from there. Note the size
of your turkey, then calculate
the cooking time (see page 34),
adding at least 45 minutes
for the bird to rest. Subtract
this from the time you want
to eat. Factor in plenty of time
for getting the oven nice
and hot and set your alarm
clock accordingly! If this is too
early, move dinner to a
later time!
While the turkey is in
Boil carrots and sprouts until
they’re just underdone, then
pop them in cold water ready
to reheat and serve.
Heat up your roast potato
tray half an hour before the
bird comes out.
While the turkey rests
on a warm plate
Toss your parboiled potatoes
in fat or oil and spread them
on your hot tray. Sprinkle
them with salt and put the
tray back in the oven.
Stuffing balls or other side
dishes can go in the oven
now too.
Put the turkey’s empty
roasting tray on the hob and
whisk the bird juices with
some stock and/or white
wine, adding flour to thicken
it up.
