In 1951 the McCaghey family raised 9 birds to sell for Christmas. Over the years,
3 generations have carried the business from strength to strength and it now employs
over 60 people, supplying a wide range of free range, whole turkey, everyday packs
and bronze turkeys for Christmas. They’ve been working with Aldi since 2007.

1.Pre-heat the oven to 160°C/320°F/Gas Mark 3.
Cut the turkey into strips, cook in oil, add cooking sauce
and cook uncovered for 15 minutes. Peel the onions, cut
in half and slice into medium slices.
2.Slice the peppers and add, along with onions, to the
turkey and cook, stirring for 10 minutes. When the
mixture is quite dry, keep it warm in oven.
3.Put the tortilla wraps in the oven as per the
pack instructions.
4.For the guacamole, peel and halve the avocados and
mash with the lime juice, onion and garlic and herb dip.
5.Serve the turkey alongside bowls of salsa, grated cheese,
guacamole and warm tortillas. If you want hotter fajitas
add 1 tsp Stonemill chilli powder to the turkey, while
cooking.

• 1 pack Irish Turkey Mince
• 1 Tomato, cut into thin slices
• Tomato Irish Country Relish • 1 Egg White, lightly beaten
• Irish Mayonnaise

• 1 Iceberg Salad Bag
• 1 Onion, ¼ diced and ½ sliced
• ½ Garlic Clove, crushed
• Sea Salt and Black Pepper
Make it
1.Mix the turkey mince, beaten egg white, diced onion,
crushed garlic clove and a pinch of salt and black pepper.
Blend together until the mince is fully coated.
2.Divide the mixture into 4. Take 1 portion and roll in your
hands to make a ball. Leave it in ball form before cooking.
Repeat this process for the other 3 portions.
3.Add the ball of mince into a hot pan with oil. With a
spatula push the ball flat onto the pan to create the
burger shape. Season with salt and leave for 4-5 minutes,
then turn and repeat the process.

• 25g Butter
• 25g Plain Flour
• 250ml Milk

2.Start by making your cheese sauce. Put 25g butter and 25g flour
in a saucepan over a medium heat and stir for 5 minutes
4.Gradually add 250ml warm milk in 3 steps, stirring all the time.
5. Finally add 75g grated cheese to the mix and allow to melt.
6. Brown the mince and mix in the vegetables and when they are piping hot, add the pasta sauce and stir until hot.
7. Now start layering your lasagne in a shallow baking dish.
8. First a layer of the meat mix, then a layer of lasagne sheets
followed by a layer of cheese sauce.
10. Take care not to overlap the lasagne sheets or they will
not cook through.
11. Bake in the oven for 45 minutes.

• 50ml Apple Juice
• 1 tsp Organic Honey
• Splash of Lemon Juice
• Ice Cubes
• Fresh Apple slices
1. Mix the honey and apple juice
together in a whiskey glass.
2. Stir in the whiskey, add a splash of
lemon juice. Fill the glass with ice,
then stir through.
3. Decorate with a couple of fresh
apple slices and serve (serves 1).
