Beth has worked in the health and wellness industry for over 20 years. She received her Bachelor’s in Business Administration from Merrimack College in North Andover, MA and her MBA from Southern NH University while working full time in corporate health and wellness. Beth is certified through the American Council on Exercise in Personal Training and Group Fitness Instruction. Beth moved to Florida in 2001 to be closer to her mother and step father who had converted from snow birds to full time Florida residents a year before. During the past 13 years in Vero, Beth has worked extensively personal training and teaching group fitness classes for a variety of ages and fitness levels. She spent 12 years at Christi’s Fitness Center and several years teaching at Quail Valley Fitness & Spa. In 2012 she co-founded her own business called Adventure Training of Vero. Beth has two children who are the light of her life, Benjamin (12) and Abigail (9). She enjoys cooking, reading, crafts and doing adventure races in her free time. Our craft club started Knitting for Newborns so they have been busy making booties and caps for newborns at Indian River Medical Center. Thanks to Dot Hoffman for leading this group during our craft club last month and volunteering her time at the hospital for such a great cause. Another project for November was our Holiday Mail for Heroes Program for the American Red Cross. Residents created homemade holiday cards for service members and veterans separated from their families during the holiday season due to deployments and hospital stays. A special thanks goes to Sue Hand for organizing the group during our craft club and helping other residents create some beautiful cards. Thank You for Your Understanding. 12 Days of Wellness Tis the season and time for the Twelve Days of Holiday Wellness. I know you have heard the song “The Twelve Days of Christmas.” Once again this season the Wellness Center has tweaked the old song and is bringing you the Twelve Days of (Holiday) Wellness. This is an easy 12-day challenge to help keep your body and mind in good health and spirit. All you have to do is complete one task for each of the 12 days and then turn it into the wellness center office. If you complete all 12 days, oneday-at-a-time, you will be eligible for a prize! The challenge runs on weekdays from Monday, December 8 - Tuesday, December 23, 2014. Wednesday, December 24 will be a “make up” day so that if you missed anything during the 12 days, this is your chance to complete the challenge. Please bring your completed score card to Beth, Dawn, or Denise in the Wellness Center by December 31st, 2014 to claim your prize. “Twelve Days of Christmas” History The “Twelve Days of Christmas” was originally written to help Catholic children, in England, remember different articles of faith during the persecution by Protestant Monarchs. Christmas Facts & History 1 Although many believe the Friday after Thanksgiving is the busiest shopping day of the year, it is not. It is the fifth to tenth busiest day. The Friday and Saturday before Christmas are the two busiest. America’s official national Christmas tree is located in King’s Canyon National Park in California. The tree, a giant sequoia called the “General Grant Tree,” is over 300 feet (90 meters) high. It was made the official Christmas tree in 1925. 3 Candy canes began as straight white sticks of sugar candy used to decorate the Christmas trees. A choirmaster at Cologne Cathedral decide to have the ends bent to depict a shepherd’s crook and he would pass them out to the children to keep them quiet during the services. It wasn’t until about the 20th century that candy canes acquired their red stripes. Christmas caroling began as an old English custom called Wassailing - toasting neighbors to a long and healthy life. The earliest collection of carols was published in 1521. 5 4 Silent Night was written in 1818, by an Austrian priest Joseph Mohr. He was told the day before Christmas that the church organ was broken and would not be prepared in time for Christmas Eve. He was saddened by this and could not think of Christmas without music, so he wrote a carol that could be sung by choir to guitar music. The modern Christmas custom of displaying a wreath on the front door of one’s house, is borrowed from ancient Rome’s New Year’s celebrations. Romans wished each other “good health” by exchanging branches of evergreens. They called these gifts Strenae after Strenia, the goddess of health. It became the custom to bend these branches into a ring and display them on doorways. 6 Cheesy Cauliflower Gratin Ingredients • 4 cups raw cauliflower florets • 4 Tbsp butter • 1/3 cup heavy whipping cream • salt and pepper to taste • 6 deli slices pepper jack cheese Directions the cauliflower, butter, In a microwave safe dish, combine roughly.
