Beth Ratliff was born in Massachusetts and grew up on Big Island Pond in
Derry, NH. Beth has worked in the health and wellness industry for over 20
years. She received her Bachelor’s in Business Administration from Merrimack
College in North Andover, MA and her MBA from Southern NH University
while working full time in corporate health and wellness. Beth is certified through
the American Council on Exercise in Personal Training and Group Fitness
Instruction.
Beth moved to Florida in 2001 to be closer to her mother and step father
who had converted from snow birds to full time Florida residents a year before.
During the past 13 years in Vero, Beth has worked extensively personal training
and teaching group fitness classes for a variety of ages and fitness levels. She
spent 12 years at Christi’s Fitness Center and several years teaching at Quail
Valley Fitness & Spa. In 2012 she co-founded her own business called Adventure
Training of Vero.
Beth has two children who are the light of her life, Benjamin (12) and Abigail
(9). She enjoys cooking, reading, crafts and doing adventure races in her free
time. Beth is looking forward to meeting everyone here at the Brennity and
invites you to come by the Wellness Center to say hello!

Giving Back Programs
In the month of November, we had great success with our Giving Back Programs. Our craft club started Knitting
for Newborns so they have been busy making booties and caps for newborns at Indian River Medical Center. Thanks
to Dot Hoffman for leading this group during our craft club last month and volunteering her time at the hospital for
such a great cause. Another project for November was our Holiday Mail for Heroes Program for the American Red
Cross. Residents created homemade holiday cards for service members and veterans separated from their families
during the holiday season due to deployments and hospital stays. A special thanks goes to Sue Hand for organizing
the group during our craft club and helping other residents create some beautiful cards.

Ingredient of the Month - Cauliflower
Delicious in casseroles, soups and medleys, cauliflower is a
staple vegetable in many American homes. Crunchy and fresh

or cabbage flower is one of the commonly used flowervegetables. Its compact flower heads hold numerous health
benefiting phtyo-nutrients such as vitamins, indole-3-carbinol,
sulforaphane etc., that help prevent overweight, diabetes and
offer protection from prostate, ovarian, and cervical cancers.
Cauliflower is very low in calories. 100 g of the fresh
cauliflower head provides only 26 calories. Nevertheless, it
comprises of several health-benefiting antioxidants and vitamins
in addition to being low in fat and zero cholesterol. Its florets
contain about 2 g of dietary fiber per 100 g; providing about
5% of recommended value. Fresh cauliflower is an excellent
source of vitamin C; 100 g provides about 48.2 mg or 80% of
daily recommended value. Vitamin-C is a proven antioxidant
helps fight against harmful free radicals, boosts immunity and
prevents infections and cancers. Cauliflower contains several
anti-cancer phyto-chemicals like sulforaphane and plant sterols
such as indole-3-carbinol, which appears to function as an
anti-estrogen agent. Together, these compounds have proven
benefits against prostate, breast, cervical, colon, ovarian cancers
by virtue of their cancer-cell growth inhibition, cytotoxic effects
on cancer cells.
It contains good amounts of many vital B-complex groups
of vitamins such as folates, pantothenic acid (vitamin B5),
pyridoxine (vitamin B6) and thiamin (vitamin B1), niacin (B3)
as well as vitamin K. These vitamins are essential in the sense
that body requires them from external sources to replenish and
required for fat, protein and carbohydrate metabolism.
Further, It is an also good source of minerals such as
manganese, copper, iron, calcium and potassium. Manganese
is used in the body as a co-factor for the antioxidant enzyme,
superoxide dismutase. Potassium is an important intracellular
electrolyte helps counter the hypertension effects of sodium.

12 Days of Wellness
Tis the season and time for the Twelve Days of Holiday Wellness. I know you
have heard the song “The Twelve Days of Christmas.” Once again this season the
Wellness Center has tweaked the old song and is bringing you the Twelve Days
of (Holiday) Wellness.
This is an easy 12-day challenge to help keep your body and mind in good
health and spirit. All you have to do is complete one task for each of the 12 days
and then turn it into the wellness center office. If you complete all 12 days, oneday-at-a-time, you will be eligible for a prize!
The challenge runs on weekdays from
Monday, December 8 - Tuesday, December 23, 2014.
Wednesday, December 24 will be a “make up” day so that if you missed
anything during the 12 days, this is your chance to complete the challenge.
Please bring your completed score card to Beth, Dawn, or Denise in the
Wellness Center by December 31st, 2014 to claim your prize.

remember different articles of faith during the persecution by Protestant Monarchs.

9 Ladies Dancing = the nine Fruits of the Holy Spirit

Take a Minute to Unwind Over the Holidays
1. Have 15 minutes? Call a family member or friend that you have been meaning to
connect with and have just been too busy to call.
2. Have 30 minutes to spare? Sit down and create your own Christmas cards for
your close friends and family. Creating your own cards allows you the ability
to personalize the cards to your liking.
3. Have an extra 45 minutes? Start on your “to do” list for the New Year.
Take this time to unwind and make some decisions of things you want
to accomplish for the new year.
4. Fortunate enough to have 60 minutes to spare? Take the family
outside to embrace the colder weather. If you live in a snowy
region, have fun making a snowman or maybe going
sledding or ice skating. Do whatever it takes so you and
your family can enjoy some of the simple pleasures
of the season. There’s nothing better than creating
memories that you will share for years to come.
Christmas Facts & History

Although many believe the Friday after Thanksgiving is the busiest shopping day of
the year, it is not. It is the fifth to tenth busiest day. The Friday and Saturday before
Christmas are the two busiest.
America’s official national Christmas tree is located in King’s Canyon National Park
in California. The tree, a giant sequoia called the “General Grant Tree,” is over 300
feet (90 meters) high. It was made the official Christmas tree in 1925.

Candy canes began as straight white sticks of sugar candy used to decorate the
Christmas trees. A choirmaster at Cologne Cathedral decide to have the ends bent to
depict a shepherd’s crook and he would pass them out to the children to keep them
quiet during the services. It wasn’t until about the 20th century that candy canes
acquired their red stripes.
Christmas caroling began as an old English custom called Wassailing - toasting
neighbors to a long and healthy life. The earliest collection of carols was published
in 1521.

Silent Night was written in 1818, by an Austrian priest Joseph Mohr. He was told the
day before Christmas that the church organ was broken and would not be prepared
in time for Christmas Eve. He was saddened by this and could not think of Christmas
without music, so he wrote a carol that could be sung by choir to guitar music.
The modern Christmas custom of displaying a wreath on the front door of one’s
house, is borrowed from ancient Rome’s New Year’s celebrations. Romans wished
each other “good health” by exchanging branches of evergreens. They called these
gifts Strenae after Strenia, the goddess of health. It became the custom to bend these
branches into a ring and display them on doorways.
