RANDOM THOUGHTS
AND OBSERVATIONS
HOLIDAY CHEER LACKING: We were quite dismayed
over the fact that none of the area towns put up Christmas
decorations this year, and very few of the shopping centers
had them displayed. County Line Plaza in Tequesta has their
old sad-looking light post attachments, but there was nothing
sparkling and few lights. We don’t recall having seen any
other plazas with them. The one exception was Harbourside
Place. Wow! They really went all out, so one would have to
give them credit. Did you see that huge tree in the central
court they erected? Splendid job! Few stores bothered to do
any decorating locally. What we saw was again - sparse.
There were quite a few decorations up in the neighborhoods,
but nothing particularly spectacular like in past years, and it
seemed like it was down this year. Greetings were also sparse,
at least that was our experience. What’s with everybody?
Where’s that old holiday spark we once knew? Let’s get that
old spirit going once again and keep it intact. I actually
received more greetings on my birthday than at Christmas.
Can you believe that? Hopefully, next year will be different.
Happy New Year everybody! May it be prosperous for you.

GROWTH VS STAGNATION
I don't remember when I knew deep inside myself that I
would never "march in place" and that I would "never give up,
no matter what!" I also don't recall when I promised myself to
be open to life's ebb and flow and to accept that risk (even
though unfamiliar territory is more intimidating) was far more
rewarding than living in my comfort zone.
However, I do know the moment I first made the choice to
decide on continued self-awareness as a means of
understanding myself more fully. It was during one of the long
weekends of training in a mind/body program I was a part of,
studying to become a psychotherapist. Sometime during my
second year (which was quite intense and demanding) I had an
insight about my willingness - actually I learned it was an
"inner drive" - to understand myself.
Although, at the beginning, developing knowledge about
myself was a means to become a more "enlightened" therapist,
it ended with my discovery of who I am under all the
unconscious layers of my defenses. One of our assignments
was to write our feelings about how we saw the world and
how that would impact our being a therapist. I wrote the way
some people do...not planning what I would say, just
spontaneously putting down on paper whatever came to my
mind.
I'll share with you the essence that came to me so many
years ago during one of those weekends of intense selfexamination: I realized I had a total commitment to continual
learning about my inner self. My "Aha" moment was grasping
my eariler unconscious decision to accept risk and the
unknown as the basis for personal evolvement.
My essay began with seeing myself at the base of a
mountain. I couldn't see the top, yet I began to climb
regardless. I wrote that I experienced many years going by as I
climbed ever upward. One part of me wondered why I had left
the warmth of home to venture out into the unknown;
however, a deeper strength inside knew I would continue my
climb (in good weather and bad). At the end of my tale, and
years later, I reached the top.
As I stood looking out at a seemingly never-ending
panorama and breathed in the rarified air, I felt free!
All I knew in that moment was that all the hard work, the
changing climate, the unknown...was all worth it. And, today,
in this place and in this time, it still is!

The client lay prone on the massage table and the body presented a
stress pattern to the right pelvis and down the entire right leg. The right
pelvis was medially rotated rather than lateral causing a restriction at
the exit of the sciatic nerve. The right foot and knee also presented a
medial rotation. What we normally don’t look for when treating low
back pain is the ankle joint and the Achilles tendon, Soleus muscle and
Gastrocnemius muscle. With so many women wearing high heel shoes
these days I find it necessary to treat whatever I find because these
muscles affect the legs, low back, diaphragm, neck and eyes just
because of the pressure that these muscles can hold. In this case the
Achilles tendon was so extremely shortened and tight that it was
embedded between the joint of the heel bone (calcaneus) and ankle
bone (talus). The Soleus and Gastrocnemius muscles were very thick

Obviously the body presented the first layer of the yarn; however, we
must still treat the Sesamoid bones under the ball of the big toe due to
their involvement at the attachment at the base of the metatarsal of the
big toe. Most likely there is a stress pattern at this location due to the
longtime wearing of the 4” high wedge heels. Also, the tendons of the
Flexor Halluces Brevis, Peroneus Longus, Tibialis Anterior and Tibialis
Posterior need to be treated since these leg muscles attach to the same
metatarsal and are involved in foot pain.
Here is a list of symptoms that can happen when the feet and ankles
are in an elevated position for a long period of time: changing the footloading which causes an alteration in the low back muscle activation,
affect the pelvic tilt resulting in a different walking pattern and raise
the center of mass of the body affecting postural stability. Use wisdom

Growing Chocolate Franchise
This Store Began in the Owner’s Home in 2003 and
has Developed into a Worldwide Chocolate Franchise
JUPITER -- Talk to Derri Cerbone, owner of the
international chocolate company, Tasty Image,
which just moved to new corporate headquarters at
75 E. Indiantown Road, unit #506. She will tell you
that starting a chocolate company with no business
background, but having a huge need to succeed and
an insufferable desire to make chocolate, has been a
rewarding trip.
“If I can do it, anybody can do it,” Cerbone told
this reporter in a recent interview. “Ms. Cerbone
was referring to the fact that she started out of her
home making chocolate and catering events back in
2003. The concept caught on and within two years,
a retail store was established in Tequesta. With
much intestinal fortitude the chocolate lady began to
franchise in 2010 and relocated to larger space in
Jupiter’s Chasewood Plaza. Tasty Image found a
way to print chocolate images and this concept has
been a large part of her
business and a perk for those
buying a franchise, because
her chocolate image printing
apparatus is patented and the
only one available.

all is right before patrons converge on the new store
December 23.
With the relocation, the company has gained
nearly twice the square footage than they had in the
previous location. Coming from 1,300-square-feet
to 2,400-square-feet has allowed the addition of so
many more new amenities. Derri explained: “This
new store will serve as a showcase for our
franchising. We are hopeful it will draw more
interest here in the U. S. and abroad.” Tasty Image
has eight franchises abroad and several in the
United States, primarily in
South Carolina and Nevada.

manufacture huge coral reef replicas that will be
modeled after the coral heads found in The
Bahamas. These replicas will be placed in clusters
and aligned in north-south corridors in 30- to 90 feet
of water on permitted artificial reef sites between
Jupiter and Juno Beach.
Funding of the reefs will be with part of the
$125,000 already raised and by giving naming rights
and design input to individuals. families, groups,

RESOLUTIONS
Many resolutions have been made in recent days. Some will be
kept, some will be forgotten. Others will wind up in the nebulous
regions of “in progress”.
Family caregivers have a particular challenge when it comes to
resolutions. It starts with something like, “I promised my mother we
would never put her in a nursing home…”
Caregivers help seniors maintain their sense of independence and
dignity by remaining in their own home. While this sounds simple,
it isn’t. Many resolutions for family caregivers this year will be, “I
need to find some help”.
If this resolution is yours, the following will be of some help in
getting started:
First, there are two kinds of caregivers; Companions and Aides.
While both will perform ‘homemaker services’, only Home Health
Aides or Certified Nursing Assistants are licensed to provide
‘personal care’. Personal Care pertains to the 6 Activities of Daily
Living (ADL’s); eating, bathing, toileting, grooming, dressing and
ambulation. Remember, only professional Home Health Aides (or
CNA’s) are trained and licensed for this kind of service.
Second, there are four levels of professionalism; Independents,
Companion Services, Contractors and Employees. An Independent
Caregiver will often come with references but not have any
insurance, training or license; a Companion service is not licensed
for personal care, so their caregiver cannot touch any one, thus
limiting their value; Contractors will be referred by a ‘Registry’
who will have done a background check, but they will be
responsible for their own basic insurance as well as tax withholdings
and not be covered by Workman’s Compensation. The Employee
will be provided by a ‘Home Health Agency’ and have full
screening, references, liability insurance, Workman’s Compensation,
bonding, supplemental driving insurance as well as company
management for scheduling and quality control.
Third, terms are like other services; there will be price differences,
but no one should ask for a long-term contract, although you will
most likely be asked for a retainer in advance. Billing will be hourly
and payment is usually handled on a weekly basis.
Finally, rates will range from 15 to 20 dollars per hour depending
on the type of caregiver, the number of hours and the level of
service you choose. Ask questions, compare, be clear on security
and coverage issues and know whether you are dealing with an
independent, a companion service, a registry or an agency before
you decide. Above all, know what form of business relation you are
creating.
Your Resolution to act should result in a lasting Resolution of
your challenge and an improvement of the quality of Your life going
forward in the New Year!

Increasing your exercise not only lowers your LDL. It also raises

What's in Store For the Real Estate New Year?
Despite the ebbs and flows of our local real estate
market, 2014 was fairly stable as well as seeing an
increase in our property values. There are many reasons
to be optimistic that the trend will continue in 2015.
Inventory of homes, or lack thereof, has impacted our
local market. There are signs, however, that inventory
will be on the rise. There are more listings compared to
this time last year. Based on the Realtors Association of
the Palm Beaches local market update, inventory of
single family homes is up 19.7 percent from last year.
Since more houses have appreciated in value,
homeowners have recouped equity in their properties
and are closer to test the market by putting their homes
up for sale. Prices are not likely to increase much more
since increased inventory of homes means there will be
more competition. Sellers will have incentive to sell
before prices flatten out.

Interest rates are another factor that have positively
influenced our local market. It was predicted by many
that the rates would go over 5 percent in 2014 but they
are still hovering at about 4 percent and even dipped
below that for 30 year fixed mortgages. While it is not
expected to have a sudden increase early in the year,
potential buyers will want to take advantage of the low
rates.
Recent programs extended to first time homebuyers,
that according to the National Association of Realtors
only comprises 33 percent of buyers, will also lend
promising results to our local market. Fannie Mae and
Freddie Mac are offering 3 percent down payment
programs that will help to make purchasing their first
home a reality, especially if they have good credit and
steady employment but not enough saved for a 10-20
percent down payment. We expect to see the percentage
of first time homebuyers increase by this time next year.
All in all, 2014 was a great year for both sellers and
buyers and we look forward to an exceptional 2015.

This Beacon issue addresses the magic sauce which Whole
Body Cryotherapy (WBC) activates in the brain to release a
collection of wonderful chemicals inside the human body to help
rejuvenate and heal.
Within 30 seconds inside a Cryosauna at minus 220 degrees

other day and we decided it is to be placed on our list of places
to go in the future. Meanwhile, try their “Hippie Burger” and tell
me what you think. That’s quite a name for a burger. The menu
says it is two grilled quinoa burgers served on a potato bun with
a side of neon relish. That neon concept probably makes it a
hippie and no doubt makes all who go there curious. The quinoa
is probably a curious thing, too. If you don’t know what it is,
well, it’s a protein-packed grain found in the Andes. It was
brought to America and people are including it in all kinds of

I Hope everyone had a great Holiday Season and a Happy
New Year. 2014 was a great year. Now we are in 2015 and
most of us will have a New Year’s resolution. Most of the
New Year’s resolutions have something to do with shedding
the extra pounds we put on from Holiday Dinners. A good
clean diet is a great way to start. After all, we are what we
eat.
At the Ocean Bleu, we believe in eating the freshest
vegetables and proteins, not using any processed foods. We
use local purveyors that are also available to the public. We
connected with most of our local purveyors through
farmer’s markets around town. My wife and I go to the
farmer’s markets every week. Most of the purveyors at the
Markets are GMO free and Organic, and their product tastes
great. Here is a very popular and healthy side dish recipe at
the Ocean Bleu;
Black Eyed Pea Succotash
2 oz Good Quality Bacon
2 oz Red Bell Peppers Small Diced
2 oz Red Onions Small Diced
6 oz Local Corn removed from the Cob
6 oz Kai Kai Farm Black Eyed Peas lightly blenched
1 oz Fresh Pesto
Salt and Pepper
Directions; In a saute pan render the bacon fat, add the red
peppers and onions. Cook the mixture until onions are
lightly caramelized. Add in the corn and black eyed peas,
cook for 2 minutes , mix in the pesto and season.

year and it is well worth attending. There is live entertainment, a
silent disco and other activity going on the whole time. But,
remember, it’s all about the beer!

Band is Making Big Strides
Here with Real Life Originals
This Group Had their First CD Release Party in Late
November at Guanabanas and was Well Received
JUPITER -- He’s a Pilot, He’s a Surfer, He’s a Rocker and a Hit
Maker. That sounds like the lyrics of a pop song, don’t you think?
Maybe not, but in the case of one Perry Strait, he is all of these things.
And, he may very well be a romantic.
Strait is making big strides in this area with his group, The Perry
Strait Band, having organized about two years ago. But, Strait has been
performing for seven years other places, mostly in West Palm Beach.
Strait is beginning to cement bookings locally for the band and has
already gained a following from solo performances at Tiki Bar 52 and
the full band at Guanabanas. Strait has done solo gigs at Das Biergarten
and Specialty Beer Cellar, both in Abacoa. His last performance in this
area was on December 4 at
the Beer Cellar.

The “Warmer than Whiskey” CD cuts are all originals. The album
title song, we feel, makes Strait a romantic aside from all the other
accomplishments he has made, because it is about being loved and
appreciated. The CD itself has been dedicated to the victims of
Hurricane Katrina, which did a horrifying number on New Orleans a
few years ago. Strait, a New Orleans native, said most of his family
was wiped out by the storm, including the old family homestead which
has never been refurbished. “I hope someday I can go back to New
Orleans and be in a position to rebuild that home. It has held a lot of
memories as my grandmother’s great grandmother homesteaded the
property, and until Katrina, it has been lived in and well maintained.”
Thus, another reason why we think Strait is a romantic, although he
won’t admit it.
Strait claims his band is Southern Rock, but there are many
resemblances of bonefide country and a bit of the blues in his music.
When performing, the band’s playlist has a good mix of originals and
commercial cover songs.
Another original song on Strait’s new CD is called “Open Hands.” It,
too, has ties with Hurricane Katrina. Lyrics in a part of the chorus in
the song, ”Power in the Palm

reflect the outreach people

Listening to the Perry Strait Band is, indeed, an experience in itself.
Much of their music is upbeat and strongly presented by very
experienced musicians. The key factor, we believe, is that the band is
together and always on target. The band personnel includes Bob Taylor,
keyboard; Michael Esnie, bass; Jack Tree, drums; and Strait, lead guitar
and vocals.
The band performs often on Clematis Street in West Palm Beach.
Their next two bookings are January 9 at Osage and on January 17 at
Bradley’s.

We were recently very pleased to host an in-store clinic with one of my
favorite Singer-Guitarist, Robben Ford. Ford has been a favorite of mine for
several decades and counting, but I’d not met him before. His excellent Clinic
ran approximately two hours and covered many topics of interest to the 40+
attendees. Following the teaching session and a lively Q&A period, Ford
performed for us with our own rhythm section, which was really exciting.
Typically, when you see and hear such a musical giant perform, the tickets are
expensive and the artist is far from you and you don’t get to hang out and
pose questions, as we did in this case.
Robben was very gracious and giving with his knowledge, time and talents.
He readily signed cd’s, album covers and a few guitars for us. He answered
many questions and he explained it all in clear, understandable terms. His
teaching style is relaxed and gentle, even though he covered a lot of territory.
Many participants told me afterwards that they did in fact “learn” from Ford,
which is always good to know when we plan future clinics..
Our rhythm section band consisted, by design, of guys that never played
together before, and I felt this would be interesting. I was confident that these
particular musicians would enjoy playing with the great Robben Ford, and
also that Robben would enjoy them. To lead the group I selected Royal Hayes,
Jr. on Guitar, our own Graham Zebedee on Bass and Joe Wyman on drums.
Very competent players all, and they did a superb job. I felt the fact that they
had never played with one another added a bit of intrigue, but I had my
confidence in these folks and they measured up fine.

When he concluded his teaching, young Royal kicked the band into gear with
a couple of his own excellent jam style tunes. Ford had planned a 15 minute
break, but when he heard the band, he quickly joined in and things really got
interesting. Ford treated us all to a solid hour an 15 minutes of great music,
with lots of his guitar brilliance and some smooth vocals. He generously
tossed young Royal lot’s of solo breaks which he handled with skill and style.
Smiles were in abundance and we all had a ball. I must say the acoustics in
our Wolfe Guitars shop are superb, which added to the fun.
Robben Ford is an interesting and very talented fellow and I plan to host
other events with him in the months and years to come. He was pleased with
the event and complimentary of our band and the fine musicians that attended
the clinic, among which were some of the finest musicians in South Florida.
Many more wanted to attend, but space was limited. Please check out Robben
Ford, and let us know what you think. I hope you become a fan as well.
Indiantown Road, is also shooting for mid January. Legendary
Sports Grill in Tequesta’s County Line Plaza is open and
waiting for business to accelerate. Pizza City, in The Shoppes
of Tequesta (next to Sir Speedy) expects to be open in late
January. The second location for Too Bizarre Wine Bar, in
Harbourside Place, is open. RJ’s Native Sun Café, the great pit
BBQ place, opened in County Line Plaza, Tequesta, December
5th. Where does that leave us now? Let’s see, hummm – can’t
think of anything else at the moment.
If you have been wondering where all the seasonal crowds are,
hit the road during rush hour, or most anytime, for that matter.
You’ll know. If you’ve been wondering where the crowds are
at lunch, go to Blondies Café in Tequesta during lunchtime.
You’ll know. We slipped in there just before Christmas and the
place was jammed to capacity. The kitchen was humming. The
waitresses’ were intent and the customers were enjoying their
orders. We had – so did the guy next to us at the counter – the
famous Blondies Mediterranean House Salad, commonly
known as a Greek Salad, Blondies puts their own personal
touch to this salad, along with everything else they bring out of
the kitchen. Unbelievably good! Check it out.
We welcome Boston Chowda to The Beacon this month. This
new Chowder and other good stuff place opened a storefront in
The Fashion Mall, Tequesta, recently and has been gaining
new customers right and left with award-winning chowder,

pm. A number of popular bands rotate schedules on Friday
nights. They include Gypsy Lane, Pocket Change, L-Tribe,
Fabulons, Synergy X-Live, Feeder Band and a Billy Idol Tribute
Band. Saturday nights, Larry Johnson & Elevated Soul performs
from 9:30pm to 1:30am. Check out the NYBG food while you
are there. It is fabulous. Such things as prime rib, shrimp scampi,
steaks, chicken, seafood and much more are always available
from 4 pm to 4:30 am. That’s right, their kitchen is open all night

--Visiting Angels of the Palm Beaches is pleased to announce
that Maureen Hyland, RN has been appointed Director of Client
Services.
Maureen joins Visiting Angels with a long and distinguished
career in nursing and elder care. Most recently, Maureen served
as a Family Nurse Consultant for Alzheimer’s Community Care
in West Palm Beach, where she counseled and educated clients
and their families to guide them through issues relating to
Alzheimer’s disease and other forms of cognitive impairment.
Ms. Hyland graduated from the University of North Carolina
with a Bachelor’s Degree and obtained her Nursing Degree from
Palm Beach Community College. She brings an important layer
of knowledge, judgment and expertise to Visiting Angels.
--Gillian Rose, partner in Old Dixie Cafe North, Hobe Sound,
and formerly the Old Dixie Cafe in Jupiter, has published a book
about her hometown, Wigan, England. Titled “The Poison
Glen’, Gillian writes about the dreadful child labor working
conditions in the 1800s through two wars, a prisoner of war
camp in Nazi Germany and ending on the shores of the United

Rick Opton, owner of Loggerhead Fitness, occurred and
paved the way for a $225,000 expansion project, which is
now completed at the Plaza La Mer facility, 901 Donald

Opton explained: “We were in need of a larger space for

more flexible than the old black mats. Also, $100,000
worth of new cardio and gym equipment was installed
including eight treadmills, two lateral X trainers, two
recumbent ellipticals and another step mill. The cardio
machines are all equipped with integrated TVs that are Wi
Fi and blue tooth enabled.
The new personal training studio features a multi-station
hoist cage, battle ropes, TRX. kettle bells, dumb bells, web
slide with resistance bands and a Cybex functional training
machine. The space is large and will accommodate small
group personal training.
Loggerhead Fitness is one of the better operated
programs in this area, and certainly one of the largest in
terms of membership, which now totals over 1,600.

Opton gave accolades to his staff, which now consists of
25 personal trainers that make Loggerhead Fitness their
home, and a dozen group class instructors. He noted that
the club caters to fitness afficionados over 40. “The core
demographic we serve is the baby boomer population that
lives three miles in every direction around us,” he said,
“but, we want to take steps to attract younger residents,
